I am thrilled to be the guest editor for this edition of Viva! The word “viva” means
expressing good will and well wishing, and this magazine is all about good will to
one’s self through the practice of balanced living — and I’m all about balancing the
scale to ensure wellness, vivaciousness and curvaceousness!

What is the number one obstacle between you and your weight loss goal? YOU!

Someone once to me, “for you to be the change, you must first see it and believe in
it.” In order for you to move forward in 2011, it’s important that you believe that
you will be able to stick to your resolutions and start to visualize yourself as the fit,
trimmer and healthier person you want to be.

You can’t just say that you want to lose weight and expect that it will happen.
Surround yourself with positive messages that will help fuel your journey and
remind you of exactly what your dreams are and the reasons you want to reach your
goals. If you only focus on losing weight this year, chances are you may not success:
it is a well-rounded endeavour. However, if you shift your focus to become the BEST
“you” that you can be—I think it is safe to say that you will surpass your goals and
realize a bigger outcome than you are able to imagine right now.

Here are a few suggestions to get you closer to realizing your goals:
• Recite a daily affirmation like: “I believe in my ability to improve my health, my
attitude and my life. I am worthy of the best that life has to offer and today I
have the opportunity to get closer to realizing my dreams and goals.”
• Make a personal motivation poster and cover it with pictures that depict the
live that you want to lead – who you want to be, what you want to be doing,
how it will look and feel; and place it somewhere that you will see each day.
• This journey is about YOU, not about food or cutting calories. You are improving

and your body is right along with you.
• Drink at least 1.5-to-2 liters of water per day. The body lives off of water (and you
already know it’s good for you – so up the intake and maximize your results.
• Try a motivational book or audiobook! I’m currently listening to Jack Canfield’s
Success Principle and Jim Rohn’s Weekend Event for life and business,
• Pick up a copy of my book The Vice Busting Diet for weight loss motivation. Best

• Identify your two biggest food vices and go about busting them – taking PGX

• Find a few recipes that you LIKE and that match your desired manner of eating

much up to chance.

J Julie Benz took acting very seriously from a very young age. She even
broke a leg before ever joining the ranks of Hollywood’s elite. At 14,

Cinnamon Roasted Apple with Herb Crusted Goat Cheese
Serves 2 | Prep Time: 20 minutes, Cook Time: 40 minutes

1 apple, peeled and sliced 1. Preheat the oven to 375°F (190°C).

Crab and Avocado Salad


Serves 3 | Prep Time: 20 minutes, Cook Time: 10 minutes

3 cups of crab meat, available at most grocers


canned or fresh
4 avocados
¼ cup green and red pepper blend, finely chopped
¼ clove garlic, minced
½ cup desired greens
1 tbsp olive oil
Mayonnaise as desired
Limejuice, freshly squeezed if desired

1. Combine crab, peppers and garlic and blend


together (for example, like you would a tuna
salad), adding mayonnaise for desired creamy
consistency.
2. Peel and pit avocados. Iin a large bowl, add
olive oil and gently blend together by hand for
desired consistency, adding in limejuice to taste.

Veal Osso Buco with Mushroom Risotto


Serves 1 | Prep Time: Braising Veal: 5 hours

Mushroom Risotto
1 cup button mushrooms
2 tbsp olive oil
1 onion chopped
2 cloves garlic, finely chopped
2 cups wild brown rice, cooked
½ cup dry white wine
1 cup vegetable stock
2 tbsp chopped parsley
2 tbsp butter
pinch of salt
pinch of black pepper
pinch of parmesan cheese

1. Soak the mushrooms in hot water for 10 minutes, then


drain well.
2. Heat the oil in a large saucepan, adding the onion and
garlic. Simmer for 2-to-3 minutes, until softened. Add
the mushrooms and heat for a further 2-to-3 minutes,
until browned.
3. Stir in the rice and coat in the oil. Pour in the wine and
simmer, stirring until absorbed. Add stock and simmer,
stirring again.
3. Dice mushrooms and stir into the risotto, along with the
parsley, butter and salt and pepper.

Osso Buco
1 2-inch cut veal Osso Buco
1 large carrot, chopped
1 celery, chopped
1 large onion, chopped
1 bay leaf
1 cup red wine
4 cups veal stock (veal jus)
Flour for dusting
Salt and pepper to taste

1. Combine flour with salt and pepper and toss veal to coat.
2. Heat saucepot with oil to high, add veal and cook each
side until brown.
3. Once veal is browned, remove from pot and add chopped
vegetables.
4. Cook, stirring for 4 minutes or until browned. Deglaze
with red wine (cook until wine is almost gone).
5. Return veal to pot, add bay leaf and veal jus. Cook over
low heat for two to three hours or until tender.

Pan-seared Duck Breast with
Cranberry Port Sauce
Serves 2 | Prep Time: 20 minutes, Cook Time: 20 minutes

2 duck breasts, excess fat removed if desired


Salt and pepper to taste
2 tbsp olive oil

Cranberry port sauce


½ cup Ruby port
3 strips of orange zest, thinly sliced
½ cup orange juice, freshly squeezed preferred
1 ½ cup cranberries, fresh
¾ cup sugar or sugar substitute

1. In a large saucepan, combine the port, orange zest and


orange juice. Bring to a boil.
2. Over low heat, add cranberries and sugar and simmer until
desired consistency, usually thick but creamy. Keep warm
until ready to serve.
3. Preheat oven to 475°F. Heat a large pan. Add the olive oil
and duck breast. Let cook on each side until golden brown.
Let simmer a few minutes, stirring often. Serve with green
vegetables or as you prefer.
4. Place duck in oven and roast until cooked to desired
tenderness (about 8-10 minutes for medium rare). Note:
Internal temperature should reach at least 180°F.

Mango Mousse Sponge Cake


Serves 2 | Prep Time: 40 minutes, Cook Time: 50 minutes

Sponge Cake
½ cup plain flour or cake flour
¾ cup caster sugar
3 eggs
1 tsp baking powder
½ cup milk, warm
1 tsp salt

1. Preheat the oven to 350°F.


2. Mix the flour with the baking powder and
salt. Set aside.
3. In a large bowl, beat eggs until fluffy, adding
in sugar.
4. Blending the mixture, adding the warm milk
gradually.
5. Place in a non-stick tin (or pans like we have,
spotted with food colouring). Bake for 45
minutes or until golden brown and firm. Let
cool before removing.

Filling
1 ½ cup Mango pulp
3 eggs
6 tbsp caster sugar
1 ½ cup whipped cream, fresh
½ pack of gelatin powder (approx. 2 tbsp)
dissolved in ¼ cup water

1. On low heat, in a saucepan, combine egg


yolk and half of the sugar and simmer for 2
minutes.
2. Remove mixture, adding dissolved gelatin
mixture, cream, whites with remaining sugar.
3. Combine both mixtures, adding in mango
pulp and stir constantly for 2-to-3 minutes.
4. To assemble, pour the mousse filling over
sponge individual sponge cakes or entire pan,
and chill in refrigerator for 4-to-6 hours.

Symptoms Eight-year-olds were not diagnosed as 'depressed' in my day, but
the nervous spells triggered by a classic dysfunctional home life fit today's
