Compare and discuss the velocity of the amylase activity at different temperature

At 0-20C enzymes work slowly 37C enzymes work most effectively at body temperature. 60-80C enzymes are denatured and become ineffective.

Data Analysis

5/29/12

Compare and discuss the velocity for each of the pH test

As

the pH increasing from 4 to 6, the velocity also increase. pH at 7 to 10, the velocity is decrease. in pH lead to the breaking of ionic bonds that hold the tertiary structure of the enzyme in place. So, the enzyme begins to lose its functional shape and the substrate will no longer fit to it, the enzyme is said to be denatured.
