Sear in skillet once boiled soft Add garlic and lemon zest Knob of butter Add rosemary

Filet of beef -Beef tenderloin -Sage, rosemary, thyme, basil (blanched for 5 seconds and chopped) Roll beef in herbs and olive oil. Sear in hot pan. Remove from heat when medium rare, cover with foil and towel.

Glazed carrots with thyme Boil carrots with sea salt, thyme, 3 bay leaves, olive oil, and 2 tsp of sugar.

Red onion and mushroom gravy Slice onions and mushrooms. Cook in the beef drippings and sweat onions/mushrooms.
