CREAM OF CAULIFLOWER SOUP

PROCEDURE

1. In a saucepan, add butter and chopped cauliflower.

2. Put the flour, it will serve qas the thickening agent.

3. Put in the chicken stock in saucepan. Boil and simmer for 20 to 30 min s.

4. If the cauliflower is cooked, let it cool.

5. If it is cooled down, use the blender to puree the cauliflower soup.

6. Add nutmeg and white pepper, blend it again.

7. Heat it up again in saucepan, then in a mixing bowl. Combine milk and egg yolk, whisk it.

8. Put slowly the blended mixture to the mixing bowl until they have the same temperature while whisking. Then combine it all in the sauce pan.

9. Serve hot. Add paprika.
