Feta cheese puffs with basil

Ingredients: 225g feta cheese, grated 150 ml natural yoghurt 2 tbsp chopped fresh basil or 1 tbsp dried Pepper 397g packet frozen puff pastry, thawed Beaten egg, to glaze Basil leaves, to garnish

Methods: Mix the grated cheese with the yoghurt, chopped basil and pepper to taste.

Roll out the pastry thinly on a lightly on a floored surface and cut out sixteen 10 cm rounds. Fold and reroll the pastry as necessary. Place half the rounds on two dampened baking sheets. Spoon some of the cheese mixture into the centre of one. Brush the pastry edges with beaten egg. cover with the remaining rounds, knocking up and pressing the pastry edges together to seal. Make a small slit in the top of each pastry puff. Brush with beaten egg. bake in the oven at 2200c for about 15 minutes or until well browned and crisp. Serve warm, garnished with basil.
