French Toast

Serves: 1 (very easy to make a bigger batch)


Preparation Time: 5 minutes
Cooking Time: 5 minutes

Ingredients:
2 Slices of Bread
1 Egg
1 Tablespoon of milk
20 g Butter

Method:
-

Remove crust from bread (but you dont have to)


- Cut in to large triangles
- Wisk egg and milk together
- Heat butter in a medium pan
- Dip triangles in egg mixture
- Cook until browned on both sides

Serve:
Drizzled with maple syrup
With Bacon and Eggs
With Cinnamon Sugar
With Berries

Individual Soft
Centred Chocolate
Puddings
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Ingredients:
100 g milk chocolate
100 g dark chocolate
3 eggs
cup castor sugar
2 tablespoons plain flour
Method:
- Preheat oven to 200C (fan forced)
- Melt chocolate and butter (in a bowl over saucepan of water on
the stove) stir until just melted, make sure no water touches!
- In a separate bowl, mix together eggs, sugar and flour
- Mix all together and divide in to 4 coffee or tea cups
- Cook for 15-20 minutes @ 200C (fan forced oven)
- To make sure they are cooked, they should rise, be soft in the
middle but not too jelly-like!
Serve with double cream or ice cream!
Hint:
Can be made, stored in fridge and reheated
For a twist, replace dark chocolate with flavoured chocolate for
example, Lindt Mint Dark Chocolate or Lindt Orange Dark Chocolate!

Quiche
Serves: 6
Preparation Time: 20 Minutes
Cooking Time: 40 Minutes
Ingredients:
Shortcrust pastry
200 g ham, chopped
cup grated cheese
1 tablespoon parsley
4 eggs
1 cups pouring cream
2 teaspoons Dijon mustard
sea salt and cracked black pepper
Method:
- Preheat oven to 180C (fan forced)
- Line 28cm quiche dish with pastry
- Blind bake the pastry and set aside to cool
- Reduce oven temperature to 160C
- Sprinkle tart shell with ham, cheese and parsley
- Whisk together the eggs, cream, mustard, salt and pepper
- Pour over the other ingredients in the tart shell
- Bake for 40 minutes or until set
Serve warm or cold in wedges with a simple green salad!
*Blind baking:

top pastry with baking paper that extends past the edge
of the pastry
fill with pastry weights or uncooked rice or beans
place on baking tray in preheated oven (180C) for 10
minutes
remove weights and paper
bake for a further 5 minutes or until pastry is golden

Rocky Road

Preparation Time: 10 minutes maximum!


Chilling Time: about an hour
Ingredients:
2 x 375g bags Melting chocolate choice of milk, dark or
white
1 cup Red Frogs
1 cup Snakes
1 cup Mini marshmellows
Method:
Melt chocolate in microwave as per instructions on packet,
or over the stove
Mix lollies with melted chocolate
In a lined slice tray (or as above, Tupperware jelly mould),
pour in melted chocolate and lolly mix
Smooth out the top
Refrigerate until set
jgilRemove from mould and cut in to bite sized chunks
Enjoy!
Hints:
Use anything! Snakes, frogs, maltesers, Turkish delight,
raspberries, clinkers, peppermint crisp
This can be adjusted to easily match a colour theme for a
party put in lollies of only the colour you want!

Easy Make Your Own Pizza!


Serves: 4
Preparation Time: approximately 20 minutes

Cooking Time: approximately 15 minutes varies depending on


size
Ingredients:
Mushrooms
Capsicum
Ham
Salami
Olives
Sundried Tomatoes

Tinned pineapple in pieces


Wraps or store bought pizza bases
Tomato Paste or Pizza Sauce
Danish Feta
Grated Cheese
Method:

Preheat the oven to 180C


Cut the mushrooms, capsicum, ham, salami, olives and
sundried tomatoes in to small slices
Drain the pineapple juice from the tin (save it to drink)
Line baking trays with baking paper, place wraps or pizza bases
on to trays
Get the children to select their own pizza sauce and spread it
on to their base with the back of a soup spoon
Pick from all of the toppings to create a healthy pizza, put
toppings on to pizza bases
Sprinkle crumbled feta over the top
Sprinkle grated cheese over the top
Place in to oven until cheese has all melted
Cut and serve and enjoy
Hints:
Can change the toppings to suit your family. Add anchovies,
jalapeos, basil The list is endless!
Consider adding some rocket, baby spinach or aioli to the top of the
pizza once it has been removed from the oven!

Watermelon and Mint Salad


Preparation Time: 10 minutes
Ingredients:
watermelon

1 cup mint, roughly chopped


Method:
Cut watermelon in to bite sized pieces
Mix in a large bowl with the mint
Refrigerate over night for best flavour
Serve with BBQ, as a side or with ice cream!
Hint:
Add some feta for a savoury twist.

Cheese Ball

Preparation Time: 10 minutes

Ingredients:
1 large block cream cheese
1 shallot, chopped finely
2 slices ham, chopped finely
8 pieces crystalised ginger, chopped finely
pinch of salt
1 cup chopped almonds

Method:
Mix together cream cheese, shallot, ham, ginger and salt
Roll into a ball
Roll in chopped almonds
Serve with biscuts, carrot sticks or celery sticks

Hint:
Ingredients can be modified to suit your taste.
Can be refrigerated for a day or so before serving or can
be served immediately!

Cob Loaf Dip


Hot

Cold

Preheat oven to 150C


Ingredients:
300ml sour cream
210g cream corn
250g tasty cheese, grated
4 rashers bacon, chopped
6 shallots, chopped
250g cream cheese
salt and pepper
cob loaf
Method:
Cut top off cob loaf and pull out
inside, break into bite sized pieces
Mix all ingredients into case
Bake 1 - 2 hours
Last 10 mins, put top on loaf, bread
from inside loaf on the tray and
toast
Serve warm

Ingredients:
Large sour cream
packet French onion soup
packet spring vegetable soup
1 packet frozen spinach, thawed
Method:
Cut top off cob loaf and pull out
inside, break into bite sized pieces
Mix all ingredients together in the
loaf
Serve

Spinach and Pine Nut Pasta


Serves: 4

Ingredients
Pasta, cooked as per directions on packet
1 packet frozen spinach, thawed
30g butter
8 spring onions, finely chopped
3 cloves crushed garlic
1tbspn plain flour
1 x 375ml can carnation milk
cup grated tasty cheese
salt and pepper
1/3 cup toasted pine nuts

Method
Squeeze excess water from spinach
Toast pine nuts under grill until slightly brown (check frequently as
they burn easily)
Melt butter in large fry pan
Add garlic and spring onions, cook, stirring for 5 minutes
Add flour, stir for 1 minute over heat until bubbling
Stir in carnation milk and spinach
Cook, stirring until sauce boils and thickens
Stir in cheese, salt and pepper until cheese melts
Pour over pasta
Garnish with pine nuts and chopped spring onions
Serve immediately

Hints
Can be made gluten free change to appropriate flour and use
gluten free pasta
