MUTTON BIRIYANI:

Ingredients: For the gravy: 2 Tspn coriander seeds 1 Tspn badishep Tspn jeera Tspn turmeric powder 1 Tspn kuskus (poppy seeds) 1 big bunch coriander leaves 1 stem of Pudeena or mint leaves 5 garlic cloves + 2" ginger 7 or more green chilies Grind this with little water and make a fine paste and set aside. Additional Ingredients: I kg Muton Oil+Ghee as per your choice 1 big Onion finely sliced 2 Tomatoes finely chopped 4 cups of cook ed rice Little garam masala Method: Pressure cook the meat. In a heavy bottom vessel, add some oil and ghee, fry the onion & when it turns brown add the grounded masala that was set aside earlier along with the tomatoes. Fry till the oil separates, add meat and rinse the grinder with little water and pour in here. Add salt and cook well. Cook the rice separately adding whole garam masala, since we have not added any garam masala in the gravy. You need about 4 cups of rice for this meat. Garnish with fried onions, raisins and cashew nuts
