Welsh Cakes

Makes 10-12
Cooking time: 3 minutes each side Preparation time: less than 25 minutes

What you need:

450g Self Raising flour 225g Butter 225g currants 225g caster sugar tsp mixed spice (optional) tsp salt 2 large eggs Drop of milk

You will also need:


Heavy frying pan Large bowl Wooden spoon Rolling pin Flour for rolling Sugar for dusting Circle cutter

How to do it . . . .

1. Mix all dry ingredients together. 2. Add the butter and rub together to make breadcrumbs. 3. Add eggs and mix well. 4. Add milk little by little until the correct consistency not too sticky 5. Roll out on floured surface to 7mm thick. 6. Cut into rounds using a cutter. 7. Bake on a griddle or heavy frying pan for 2-3 minutes each side (until caramel brown), flip and cook other side. 8. Remove from pan and place on wire rack to cool and drench with caster sugar whilst cooling.

Tip :

Serve as they are or splice down the middle, smear with strawberry jam and sandwich back together simply delicious!
