Quick Trifle

Preparation time: 15 mins + chilling Serves: 6

Ingredients

250g packet jam rollettes 425g can apricot halves in natural juice, drained and chopped roughly 2 x 150g tubs raspberry jelly, chopped 600g carton custard 300ml cream, whipped 1/4 cup toasted flaked almonds (optional)

Method
1. Cut the jam rollettes into short lengths and place 1/3 of them over the base of a 2-litre serving dish. Sprinkle with half the apricot and jelly, then spread with half the custard. 2. Repeat the layering, finishing with a third layer of jam rollettes. Cover the top layer of rollettes with cream and refrigerate for 15 minutes to allow the flavours to develop. Just before serving, sprinkle with flaked almonds (if using).
