PEANUT BUTTER GRANOLA BARS


Makes 8 barsIngredients 1/2 1/2 1 2 1/2 1/2 cup smooth peanut butter cup 100% pure carob syrup or grape syrup or date syrup teaspoon pure vanilla extract cups whole rolled oats teaspoon sea salt teaspoon ground cinnamon

Preheat the oven to 175c and line an 8x8 inch baking pan with grease proof paper. In a small saucepan mix together the syrup and peanut butter, gently heat until its well combined, do not let it overheat. Take off the heat and add all the other ingredients except the oats. Add the mixture to the oats in a mixing bowl and mix together well. Make sure all the oats are covered in the mixture, at this point you can leave it as it is or add some dried fruit, or nuts, maybe even some dark chocolate chips, whatever you fancy. Put the mixture into the baking pan. Wet hands and press down firmly until its evenly spread in the pan and quite tight. Place in the oven and cook for around 20mins. Remove the pan from the oven and let it stand to cool for 10mins. Remove with the grease proof paper by lifting the corners and place on a cooling rack until completely cool. Remove the paper and either cut into bars or break into pieces. The longer you leave it the easier it is and there will be less crumbling. Enjoy!
