Shrimp Bites
by Big Tex Head Chef Rick Watson From the folks behind Fox Bros. BBQ and Smiths Olde Bar, now theres Big Tex Decatur. Located at 308 W. Ponce de Leon Ave., Decatur, it serves southern-style comfort food and drinks with a Texas twist. Shrimp Bites Ingredients: Bag of round tortillas chips 1 pound of peeled and deveined and skewered 16-20 shrimp 2 cups shrimp marinade 1/2 cup chipotle cream 1 cup guacamole 1 lime Allow shrimp to marinade for at least one hour. Put shrimp skewers over a hot grill and cook for about two and a half minutes on each side. Squeeze lime juice over shrimp after they are done and remove from skewer. Meanwhile put about one tablespoon of guacamole on 16 shrimp. Put one and a half teaspoon of chipotle cream on top of the guacamole. Put one shrimp on each chip and serve with pickled vegetables.
