Baghare Baingan is very famous dish in Pakistan and India.its a simple yet very tasty and easy to cook.Try this delicious recipe.find out how to make baghare baigan. Serves:4 Preparation Time:15 min Cooking Time:30 min

Ingredients:
1. Brinjals 2. Onion 3. Coriander seeds 4. Sesame seeds 5. Peanuts 6. Cumin seeds 7. Dry coconut (grated) 8. Ginger (chopped) 9. Garlic (chopped) 10. Salt 11. Red chilli powder 12. Sugar 13. Tamarind pulp 14. Oil 15. Curry leaves 250 g 2 medium 1 1/2 teaspoon 1 1/2 tablespoon 2 tablespoon 1/2 teaspoon 1 tablespoon 1 peice 6-8 To taste 1/2 teaspoon 1/2 teaspoon 2 tablespoon 1/2 cup 1 sprig

6/1/2011 Baghare Baingan | Vegetarian Dishes 1. Take the brinjals and wash them now make slits along the length taking care that the brinjal is held together at the stem.
2. Dry roast onions on a tawa (griddle) till they turn lightly brown and soften. 3. Dry roast together coriander seeds, sesame seeds, peanuts, cumin seeds, dry coconut and till they begin to change colour and give out a nice aroma. 4. Grind together roasted onions, roasted spices, ginger, garlic, salt, red chilli powder and sugar to a very fine paste. 5. Add tamarind pulp and mix well. Stuff this masala into the slit brinjals and reserve the remaining. Heat oil in a kadai (wok), add curry leaves and mix it for a minute. 6. Add the stuffed brinjals and saute for about ten minutes. 7. Add the reserved masala and mix gently. Add two cups of water, cover and cook over low heat till the brinjals are fully cooked and oil comes to the surface. 8. Serve with hot naan.
