This is the degree to which a linear model may describe the relationship begween two variables.

ex) The shell thickness is 0.4231 mm when the DDT concentration is 0.

ex) The estimated difference in the mean shell thickness for brown pelican eggs that difference in DDT by 1 ppm is 0.00008732 mm.

ex) My estimate was r=-.60, and the actual value of r is .5658. This means that a linear model describes the negative relationship between egg shell thickness and DDT concentration to a degree of .5658.
