Recipe Name: Mushroom, Herb, Pancetta and Spinach Fettucine Total preparation and cooking time: 50 minutes

Add small pieces of pancetta once the water has been reduced. Add cream, cook for 3-4 minutes or until reduced. Add parsley, basil, cheese and spinach. Cook for 1 minute or until spinach has wilted. Cook pasta in a large saucepan of boiling, salted water until tender or al dente. Drain reserving cup liquid. Add pasta and reserved liquid into pan. Season regularly with salt and pepper. Toss to coat, serve.
