If someone told you that you could become lean for life, radiantly healthy and well protected from premature aging, what would you say? What if you were able to look and feel ten or more years younger than your chronological age by making simple, effective changes in how you eat and live? Would you be interested in learning more? Or does it all sound too good to be true?

Chapter One

Healthy And Lean For Life

Lets take things further. What if you learned about a way of life that increased your natural vitality, improved athletic performance, helped clear cellulite and PMS in women, fostered emotional balance and enhanced your sense of joy and pleasure in just being alive? Not only are these things possible, they are already being experienced by thousands of men and women throughout the world who have learned the secret.

Leslie Kenton
the better. For, when you supply your body and psyche with what they require to function optimally, your own innate powers for healing become activated and profound transformation begins to take place.

Informed peopleamong them some Hollywood stars and a growing number of the worlds top endurance athletesknow and make use of information that you will find in this bookstuff that most have yet to discover. I call them the health elitists. Their work requires an ongoing ability to access high levels of energy, creativity, freedom, stamina and good looks. Their goal is to live life at the peaks, no matter what their age. Living this kind of life is no longer the preserve of a privileged few. What Ive learned in 45 years of researching and working in natural health, as well as mentoring people on Leslie Kentons Cura Romana, is this: Each one of us can change our current life experience into one of expanded wellbeing by drawing on the work of visionary scientists and leadingedge clinicians, and taking guidance from the finest pioneers in human health and development. Some of the information youll find in this little book stretches back to discoveries made more than half a century ago; other revelations are so new that they may be mind blowing. For the media, nutritionists and the medical profession as a whole have yet to pick up on them in any significant way. Make use of the tools, technologies, information and inspiration you find here. Put them into practice. You, too, can change your life for

I look upon life as a processan ongoing journey during which each of us discovers more fully who, in essence, we already are. For within each of us lives a joyous creative spirit. Its the spirit of a childof life itself. Our unique, individual being is constantly seeking freedom just to be what it is and allow us to live an ever more rewarding and authentic life. In the realm of life-long health and weight control, making informed changes to how you live and eat can end forever any frustration, selfaccusation, shame and struggle you may have lived with. When it comes to age-related degenerative conditions you may be surprised to learn that your body does not need a lot of drugs to keep you going. Nor do we humans have to experience a sense of helplessness as years pass. Growing older can mean growing wiser. It can also mean growing healthier and more fulfilled with every year that passes.

Some of what you will read in this book may shock you. Why? Because, since the mid 1950s, most of what we have been told about what is supposed to be a healthy diet, has been nothing more than conjecture. Not grounded in solid research, current widespread beliefs about nutrition are not based on hard science but on many unproven hypotheses.

false truths

Healthy And Lean For Life

Here are two good examples: First, the proclamation by Harvard cardiologist Paul Dudley White appointed as President Eisenhowers physician following his heart attack. White proclaimed that a great epidemic of heart disease had begun to sweep America at the end of World War II. This was simply untrue. A second major misconception was spread by physiologist Ancel Keyswhom I knew personally. Keys insisted that heart disease is caused by fat and cholesterol. In January 1961 his face appeared on the cover of Time Magazine celebrating his hypothesis. This, too, has turned out to be false. Youll learn more in the chapters that follow. The good news is this: At last the misconceptions, myths, and false directives on the kind of eating that promotes health and prevents obesity are becoming clear. New findings, based not on conjecture but on well-designed scientific research, are beginning to transform the way we think about food forever.

Leslie Kenton

transform now

We are poised at the crest of a profound revolution in natural health, long-lasting weight control and drug-free positive aging. These three are inextricably interconnected. Despite the economic and political unrest in which we find ourselves worldwide, as the Lean Health For Life revolution grows, it brings to birth greater personal freedom and fulfillment in the lives of all who choose to become part of this important movement. I hope this simple little book will inspire you to welcome transformation into your life. Not only can doing so enrich you immeasurably. In time, it can help make the world a better place for all of us. Bottom line: The material in this book carries good tidings for every one of us. The word is out. Now its up to us to make use of the information being made available.

Why We Lose Health And Gain Weight

There is too much nonsense talked about obesity, not only in the media but even in the published findings of scientists and doctors who, by rights, should know better. If you decide to take time out to plough through the voluminous research and declarations about degenerative diseases and obesity, their causes and their cure as I have done ad nauseam in the course of my developing Leslie Kentons Cura Romanayou discover that several important conclusions demand to be drawn. Lets look at the obesity problem first. Then well go on to examine what few people yet knowthat the same factors that make some of us fat can foster the development of degenerative diseases in all of us.

you need to know

Cereals, grains, and sugar-based carbohydrates are the culprits that make you gain weight, if you have inherited a genetic tendency to do so. These foods distort hormonal regulation and interfere with your bodys ability to maintain its functions within a normal range. This is a consequence of the way grain and sugar-based carbs screw up blood sugar and destroy insulin sensitivity. What most peopleeven those who believe they are eating a healthy dietare amazed to learn is that sugars and starches dont just cause weight problems. They are major factors in the development of diabetes, coronary heart disease and a myriad of other degenerative conditions even in those who never seem to gain weight, no matter what they eat. Nonetheless, all of us, fat or thin, become prone to rapid aging when we consume carbs and starches in quantity.

profitable ignorance

In the so-called civilized world, people are getting fatter and sicker by the year. Yet food manufacturers, government bodies and well-meaning but ignorant doctors are still telling us that we need to eat more low-fathigh-carb foods. This includes masses of bread and cereals, rice and pasta. And the majority of the population still buys into the notion that fats, not carbs, are the villains of the piece. Much of the publics inability to recognize what low-fat-high-carb eating is doing to ruin our health comes from the fact that the more ignorant we remain, the more profitable it becomes for some. In the past sixty years, multinational food manufacturers have been quick to take up the notion that carbs are good for us and fats are bad. Commercial interests waste no time in translating unsubstantiated scientific research promoting a fat-free, low-fat, and reduced-fat way of eating into huge profits. Consequently our supermarkets remain overloaded with convenience foods which health elitists, in the know, refuse even to touch. As for those who remain unaware that it is possible to transform health and weight naturally, the majority of the world continues to suffer. As the Irish humorist P.J. ORourke pointed out:

heres why

The most significant change to human diets in two million years began with the Agricultural Revolution where man went from a carbohydratepoor to a carbohydrate-rich diet as cereals and starchy vegetables began to enter our food chain. The more that these carbohydrates have been refined and processed, the more problems they have caused us. Meanwhile, during the 20th century, an overwhelming increase in cereals, grains, sugars and high-fructose corn syrup used in convenience foods have become major triggers of burgeoning obesity and chronic illness. In the nineteenth century, we ate between 10 and 20 pounds of sugar per person per year. Today per capita we consume between 150 pounds and 200 pounds a year. So this is little wonder.

the world is full of masses waddling into airports, business offices and churches dressed in drooping sweats or fuchsia warm-up suits or mainsail-size Bermuda shorts, each with a mobile phone in one earsucking Diet Pepsi through a straw.

As a result of the negative influence they exert on insulin and blood sugar, refined carbohydrates, sugars and starches foster the development of diabetes, coronary heart disease and obesity. These foods are also significant contributors to the Diseases of Western Civilization: These include cancer, arthritis, depression and rapid aging. Cereals, grains, and sugar-based carbohydrates distort hormonal regulation of homeostasis. They raise blood sugar which encourages excessive insulin secretion leading to insulin resistance, otherwise known as Syndrome X or metabolic syndrome. Eating carbohydrate foods also increases hunger and causes food cravings and addictions, creating an ongoing experience of fatigue. This forces people to rely heavily on coffee and other stimulants to get through each day. Weight gain is a disorder of excess fat accumulation as a result of disequilibrium in the bodys hormonal regulation of fat metabolism. Obesity is not caused by gluttony, too little exercise or a lack of will power. Taking in excess calories is not the cause of weight gain, nor can expending a lot of energy on exercise prevent it. Good quality fats and oils such as olive oil, coconut oil and butter neither cause obesity nor the development of degenerative conditions.

How We Got This Way

Its time to look back to our Paleolithic ancestors who lived 15,000 to 40,000 years ago in search of the answers to how we got this way. Doing this can also tell us a great deal about the kind of 21st century eating that helps protect us from premature aging and obesity. It even points the way to reversing degenerative changes which have already taken place.

Healthy And Lean For Life

Leslie Kenton
However they regularly ate more than 200 different kinds of plants. Today we eat on average 18. And they relished animal fat wherever they could find it. They ate fatty fish and shellfish. Most of their foods were gathered fresh, and much was eaten raw. Examining the skeletal remains of early hunter-gatherers, paleopathologists (those who study the eating patterns of humans in relation to health and disease) confirm that pre-agricultural people were robust. Their bodies experienced no tooth decay or bone loss as we do today. Their diet was three times higher in fat than ours is now. Their fiber intake was much higher than ours, in part due to the green plants they devoured. They took in as much as 100 grams of fiber a day, compared to the 20 grams most people get today. There are many benefits to the high-fiber foods our ancestors ate. They:

fats, flesh and greens

Countless studies in paleopathology and archaeology show that our primitive ancestors lived on a diet of fats and protein foods, together with whatever fiber-rich vegetables, herbs, seeds, roots, and berries they could gather. As much as 85% of the calories early humans consumed came in the form of large and small game animals, eggs, birds, reptiles, insects and especially from the fats these foods contained. The most valued protein foods they ate were rich in natural fats. Starchy vegetables like our modern potato, and grains including wheat and rice, corn and other cereal crops simply did not exist. Examination of the remains of hunter-gatherers show that these early humans were incredibly healthy: They had superb bone structure, flawless teeth and heavy musculature. Fat-rich, flesh-based fare, combined with fresh vegetables and herbs, is a way of eating on which our bodies still appear to thrive. For it has been on such a diet that the forces of natural selection have been continually honed and have molded us. In effect, we humans have been genetically programmed to eat like this because our bodies function best when we do.

Demand more chewing and slower eating Satisfy appetite preventing overeating Buffer natural sugars, preventing sharp increases in blood sugar and insulin Release glucose into the blood slowly
All the fiber-rich foods our ancestors ate were unprocessed, unrefined non-starchy herbs and vegetables and non-sugary fruits. Although some of our ancestors died early as a result of famine, cold or violence, they were tall, strong and disease-free.

stone age fanatics

In fact, our Paleolithic ancestors ate so well that today they might be accused of being food fanatics. Their diet was far in excess of todays official recommendations for vitamins and minerals, essential fatty acids and high quality proteins. They had never seen or heard of carbohydrates such as sugar or flour. The odd bit of honey which they were able to steal from wild bees was all the sweet food they knew. They consumed no dairy products, except at their mothers breast.

foods, natural fats and good protein our ancestors consumed. Our bodies have never adapted to the enormous volumes of refined sugars, grains and cereals that make up the foods we now consume. The hunter-gatherers intake of phyto-nutrientsthe plant factors from flavonoids to carotenoids with powerful anti-oxidant and immuneenhancing propertieswas 300 times what ours is today. Even their polyunsaturated-to-saturated-fat-ratio was vastly different than ours. The beasts they hunted, including small animals, birds, fish and insects, were high in omega-3 fats in marked contrast to the meats from factory farmed, grain fed animals we eat now.

enter agriculture

Then, around 10,000 years ago in the Middle East, a massive change began to take place in mans diet. The Agricultural Revolution had just begun, although it didnt get into full swing until six thousand years later. Our first cities and states began to appear. When you collect people en-masse, you need to feed them from foods grown and harvested nearby. The hunter-gatherer culture, which had stretched back hundreds of thousandsif not millionsof years, began to diminish. Populations in the Middle East and Southern Europe were forced to turn to carbohydrate foods for sustenance, although agricultural carbs such as wheat and rye did not appear north of the Alps until the Romans brought them somewhere between 1000 and 2000 years ago. The Russians, Chinese and Scandinavians had no starchy carbs at all until the 16th century when potatoes from the Andes made their way into Europe. Gradually, cereals and starchy vegetables began to play a big part in human nutrition, while natural fats and protein intake decreased.

Not only did agricultural man add grains and legumes to his diet, he began to domesticate animals and milk also became a regular part of his diet. The expansion of farming meant that he could lead a more sedentary existence than his hunter-gatherer ancestors had done. As this took place, civilization fostered art, science and philosophy as part of the process. But these wonderful gifts were not without significant cost to human health. The human body lost as much as six inches in stature compared to our hunter-gatherer ancestors. For the first time, infections began to appear. An upsurge in bone malformations and osteoporosis took place. Tooth decay, until then unknown, appeared. Even more amazing, archaeologists examining corpses from this period discovered that the first traces of cardiovascular disease started to show up. The important thing about all of this is that it can give you a sense of who you are biologically, as well as of the kind of fat-rich, low-carb eating which can work best for you and your overall wellbeing. For genes change slowlyover thousands of yearswhile the forces of natural selection have acted on your body for millions of years, shaping and molding your genetic makeup and your metabolism.

here come the carbs

STAGE 1 STAGE 2 STAGE 3 STAGE 4

The primitive diet of early man, based on unprocessed wild foods, protected our ancestors from degenerative disease. The Western diet with grain-based carbs and sugar spreads. Obesity and diabetes become common among privileged groups able to afford these refined foods of commerce. The diet becomes moderately Westernized. Obesity becomes more widespread as does constipation, hemorrhoids, varicose veins and appendicitis. The high-carb Western diet is now widespread. Obesity becomes common in all social groups. So does heart disease, high blood pressure, diverticular disease, hiatus hernia, cancer and other degenerative conditions.

Once the agricultural revolution was in full swing in Southern Europe and the Middle East, people began using grinding stones to grind their grains into flour. This was the crude beginning of food processing, which was not to make a big leap forward (or backward, depending on how you look at it) until the mid 19th century, with the introduction of roller milling to make bread. Before that, only the aristocrats ate fiberstripped white flour because it was very labor intensive to produce. Some peasant had to sit with a winnowing basket tossing the crushed grains into the air until the bran could be separated from the flour. As people consumed more carbs, and as these carbs became ever more processed, degenerative conditions such as heart disease and diabetes as well as obesity (hitherto only known in the white-bread eating rich and the royals) began to spread. Then, with the introduction of roller milling, it became easier and cheaper to produce large quantities of white flour. The steel roller mill refined whole-wheat grains and sugar cane quickly and cheaply. The white products that food processing created held a fascination for the masses. White flour and sugar were not only pleasant to taste, they carried a certain cach since, until then, only the rich and the privileged had been able to eat them.

steps to degeneration

Three brilliant 20th century scientistsDennis Burkitt, Hugh Trowell and Surgeon Captain T.L. Cleavescharted the degenerative effects that occur stage-by-stage when peoples diet changes from primitive to refined. These changes, which undermine health and foster obesity, took place as a result of the kind and quantity of carbohydrates that people began to eat.

Now, Id like to share with you some of my own findings, made over the last 45 years during which I have studied and worked in natural healing. I agree 100% with Burkitt, Trowell and Cleave. I am now certain that grain-based foods are not good for any of us, except in small quantities and only occasionally. In some people howeverperhaps 25-40% of the men and women I have mentored closelyeven small amounts of grain and sugar-based carbs seriously destroy health and make it impossible to maintain natural weight without gain. This does not mean that these people are ill, by the way. I am radiantly healthy with high energy yet I fit into this category too. Most of us who do have been raised on a high-carb diet with lots of sugar because our parents and

our culture didnt know any better. Quite apart from the people with exceptionally high carb-sensitivity, recent research indicates that a surprising 75% of all people in the Western World react badly when they eat carbs in quantity, as most everyone does these days. So important is this scientific discovery that it has already begun to stir the biggest food revolution in 100 years.

still believe them. They are still telling us that the only healthy way to eat is a high-carb and low-fat diet.

big fat lies

stop blaming yourself

In case you think its all your fault that you happen to be suffering with a degenerative condition or you are overweight, think again. Like most conscientious human beings, you have only been trying to follow the guidelines doctors, governments and the media continue to tell you will keep you well, make you slim and protect you from heart disease. Heres the truth: The guidelines we have been given in the decades following World War II have been all wrong. Lets take a look at the nonsense weve been taught about fats first. For generations, fats have been surrounded by false beliefs. One of these is that saturated fat is a prime cause of heart disease. This theory, based on the 1950s lipid hypothesis, was concocted by a number of mainstream scientists, including Ancel Keys. Erroneous research, which in truth was nothing more than best guesses fostered powerful changes in food manufacturing. Such best guess mentality greatly benefited the vegetable oil, margarine and food processing industries. They did their best to silence alternative views, even though several well researched studies showed the conclusions of Keys and his colleagues to be completely wrong. The fat causes heart disease assumptions increased the corporate profits of food manufacturers immeasurably. What never ceases to amaze me is that even now, more than sixty years on, most people, including a majority of nutritionists and doctors,

As award-winning journalist Gary Taubes points out, In the 1970s and 1980s the US government spent half a billion dollars trying to prove that dietary fat caused heart disease and they couldnt do it. Gary Taubes is a brilliant and courageous science writer. He first wrote about public fat deceptionswhich have been taking place for half a centuryin a New York Times magazine article, called What if Its All Been a Big Fat Lie? in June of 2002. Since then, he has published two carefully researched books, which I highly recommend that you read, in relation to the dietary-carbohydrate-fat battle. Heres another fat myth: The Western diet has increased in saturated fat over the last century. This too is untrue. In fact, just the opposite is true. At the turn of the last century, most people still got their fatty acids from saturated animal-based sources: Lard, butter, tallow, etc and they were better off for it. Then from 1910 to 1970 in the United States, the proportion of animal fats eaten declined from 83% of all fats eaten to 62%. Butter consumption went from 18 to 4 pounds per person per year, all because of the promotion of margarine. Meanwhile, what did increase exponentially is the quantity of fats we have been taking in, in the form of chemically refined vegetable oils, margarines and destructive trans-fatty acids during the same period. The results of all this? Our health as a species continues to decline.

For more than half a century food manufacturers, intent on making profit, have been producing a great variety of palatable foods by fragmenting and reducing raw material foodstuffsgrains and seeds, fats and sugars, vegetables and legumesto simple nuts and bolts ingredients. These nuts and bolts are then whipped up into the manipulated convenience foods that we find on our supermarket shelvesfrom ready-to-eat meals to candy bars, cakes, breads, and cerealsin short, the stuff that makes up some 75% of what the average person eats these days. White flour and sugar-based convenience foods have an ultra-long shelf life. This suits food purveyors intent on making a profit. Yet such packaged foods are little better than junk foodsoften devoid of any nutritional value other than calories. Even the fats used to concoct them are not the natural fats that we thrive on. The highly processed fats most of them contain, together with the masses of chemicals used as flavorings, colorings and preservatives, are far removed from the foods our bodies need for health. It is little wonder that human beings who eat them year after yeareven those in economically privileged countrieseventually do little more than survive. than 50 years ago continue to harm millions.

the bottom line

For 50 years, governments and health agencies have been pontificating about what we should eat and how much we should exercise to prevent degenerative conditions, including obesity. Even though almost all of us have done our best to follow their advice, we have become sicker and fatter with each decade that passes. Yet they still tell us that this is our fault. Why is it our fault? Because they say we have not been following their advice. This is all despite the fact that the advice that the powers-that-be continue to hand out has been nothing more than erroneous best guesses. Meanwhile, best guesses devised more

Pyramid Gone Wrong

Leslie Kenton

Back in 1977, as a result of a lot of high-level discussions and consultations about what diet the majority of Americans should eat, the McGovern Committee set forth its own bible of nutritional guidelines which they asserted would combat cancers, heart disease, high-blood pressure, obesity and diabetes. Hearings for Senator McGoverns Senate Select Committee took place between 1976 and 1980. It was clear right from the start that the outcome would be a bogus recommendation supposed to reduce fat and cholesterol, despite the fact that valid scientific research showed otherwise.

Soon after, in 1980, the US government issued a skewed Dietary Guidelines for Americans. This document demonized dietary fats especially saturated fat of any form from any source. In keeping with best guess mentality, the government accused saturated fats of being a fundamental cause of heart disease and other degenerative diseases. More to the point, just about any health problem was, the committee insisted, caused by eating fatespecially saturated fat. What their advice boiled down to was this: Replace natural dietary fats (which we humans had been eating for millions of years and which the body handles with ease) with high doses of carb-laden grains, sugars and cereals. It was out of all this that the now infamous United States Dietary Recommendations Pyramid was born.

Leslie Kenton
rice or beans, perhaps with a roll or two to get in our 10 carb servings, all the while believing we were living on a healthy diet. And by the way, just in case you think these directives only affected the lives of people in the United States, think again. The rest of the world, with a few exceptions such as France and China, continue to follow US government directives with frightening slavishness. This is what the infamous pyramid looked like. Dietary Guidelines for America not only ignored published research which negated the value of all of their dietary directives; they also paid no attention to the fact that human beings had consumed only the smallest portions of carbohydrate foods for over more than a million years. Nor did it take into account that before the Agricultural Revolution, grains, cereals and sugars didnt exist. The only carbs to which our ancestors had access came in the form of vegetables. The high-carb-low-fat diet they were advocating was destined to increase obesity and foster degenerative diseases in all who followed it.

The U.S. Dietary Recommendations Pyramid which came next urges us to swallow as much as 11 portions of bread, cereal, rice and pasta a day. And like good, conscientious people, this is just what we have done. We ate porridge, toast and cereal for breakfast, munched our way through a bagel at 11 oclock, then downed a sandwich, pizza or pasta for lunch. At dinner, along with our meat and potatoes, we consumed

Its worthwhile checking on how well weve fared in combating heart disease and obesity since we began following their recommendations, shunning animal fats and eating the masses of the carbs they recommended. The National Health and Nutrition Examination Survey shows that since 1980, obesity alone has grown to epic proportions, beginning the very year the governments guidelines were published. Of course, the dietary recommendations of the Food Pyramid, as well as those issued by the American Heart Association, leaned heavily on those best guesses we have looked at in earlier chapters. These directivesthat we should eat a low-fat-high-carb dietwere music to the ears of multinational food manufacturers. It gave them free reign to

replace fat in their products with sugar in an attempt to make the foods they manufactured palatable. Doing this was further supported by the American Heart Association, who in 1995 urged we get rid of fats from our diet and replace them withwait for it low-fat cookies, sugar, crackers, hard candies and high-fructose corn syrup. Before long, sugar and high fructose corn syrup became the food manufacturing industrys first resort. Everything low-fat, from biscuits and breads to yoghurts, got filled with them. We continued to grow fatter and sicker. Once, only 1 in 8 people were obese. Now its 1 in 3.

following government directives has caused such devastation to the health of millions, you need to know about the bodys Master Regulator, the hormone insulin. Well look at this in the next chapter. An important question arises from all this: What would a valid food pyramid look like? Very different. Here is an example, based not on best guesses but up-to-date, credible science. It is so different than what we have been taught to believe for 60 years that to most people it can seem almost mind-blowing to consider.

Then in June 2011 the Food Pyramid, which had ruled our lives for almost 20 years, was finally scrapped in favor of a new icon for the healthy diet. The U.S. Department of Agriculture unveiled its MyPlate. It, too, is being much criticized by independent scientists and researchers. It is still based on outmoded science, and does not address fat and carbohydrate issues. In short, it is inadequate and equally misleading.

The Power Of Insulin

Chapter Six
Its time to look at the nuts and bolts of insulinthe hormone behind obesity and degenerative illnesses. From an evolutionary point of view, insulin, a protein-based hormone secreted by the pancreas, evolved as the prime mechanism for surviving a famine. It did this by enabling your body to store excess calories in the form of fat. It is insulin, and its effect on blood sugar, that makes us lay down fat deposits in the first place. And what triggers a massive release of the hormone insulin in your body which causes fat deposits to form? Eating grainbased, cereal-based and sugar-based carbs.

into your cells in the presence of the hormone insulin. So when blood sugar rises, your pancreas responds immediately. It shunts insulin into the blood stream so insulin can bind with receptor sites on your cellsin much the same way that a key fits into a lock. The doors that insulin unlocks allow glucose to get inside the cells so it can be turned into energy. Without insulins help, the glucose from your food would knock at a cells door but your cells could not answer. However, when chronic high levels of insulin are present in your blood from eating carbs habitually, your cell receptors stop responding to its presence. Then glucose cant find any way in to the cells to be turned into ATPthe bodys energy currency. The easier the carbohydrates you regularly consume are to digest, and the sweeter they are, the more likely they are to produce insulin resistance and Syndrome Xthe underlying cause of obesity and degenerative disease.

fast aging

A diet high in cereals, grains and sugars (which 90% of the Western World now consumes) is not only a prescription for getting fatter. It is also the fastest way to speed aging and trigger degenerative diseases. Grains and sugars also lower energy levels, create cravings and addictive eating, and foster a myriad of long-term health issues. How does all this happen?

1 2 3

As soon as you eat these carbohydrate foods, three things occur. Your body turns them into glucose and floods your bloodstream with sugar. This triggers the release of insulin. When it takes place over and over again, from eating pasta, bread, pizza and sugars habitually, this encourages the development of metabolic syndrome, also known as Syndrome X. Food cravings and addictive eating are encouraged.

Even if you are one of the lucky few who dont gain weight easily, a way of eating that is high in grains and sugars, which we continue to be told is healthy, makes you highly susceptible to degenerative disease. Now, this is revolutionary stuff.

blood sugar

Not some recently discovered disease, Syndrome Xnow more commonly referred to as metabolic syndromeis a term that was coined by a gifted endocrinologist at Stanford University, Gerald M. Reaven. For many years, Reaven studied the phenomenon known as insulin resistance. Insulin resistance describes this loss of insulin sensitivity, during which cells that depend on insulins presence to draw in glucose and turn it into useable energy can no longer respond to it. A fine scientist with the ability to integrate information from many disciplines, Reaven realized that insulin resistance and distortions in the bodys sugar tolerance belong to a constellation of abnormalities which include elevated cholesterol and triglyceride levels, and which encourage a number of other known risk factors for coronary heart disease and other degenerative conditions. This is Syndrome X. Reaven discovered that this cluster of abnormalities was turning up in

In a healthy body, glucose generated from the carbs and sugar you eat is meant to be burnt in your cells to produce energy. Derived from the foods you have eaten, the glucose makes its way through the blood stream so it is ready to be taken up by healthy cells. But it can only get

an ever increasing number of people. We now know that this single abnormalitythe bodys mounting cellular insensitivity to insulinis responsible for a long list of serious disorders from diabetes to heart disease, arteriosclerosis, obesity and the inability to shed fat, to chronic fatigue, Alzheimers disease, depression and anxiety. Twenty years ago, scientists estimated that Syndrome X affected 1 in 4 people. Now scientists believe it is more likely that it is present in two thirds of the adult population living on a Western diet.

Insulin resistance lies at the core of Syndrome X or metabolic syndrome. It predisposes you to all the abnormalities it encompasses such as obesity, elevated and distorted blood fats, high blood pressure and degenerative diseases. The abnormalities in turn predispose you to early aging. The good news is this: These issues can be reversed by changing the way you eat and live, thereby reversing degeneration and rejuvenating your body in medically measurable ways.

sugar control

How well your body controls its blood sugar is known as glucose tolerance. This has long been considered a biomarker of aging and overall health since, as most people get older, they gradually lose the ability to take up and make proper use of the glucose carried in the bloodstream derived from the foods they eat. With this loss comes an increased chance of developing Adult Onset, or Type 2, Diabetes. Also, as we grow older we tend to become more and more sedentary. Combine this with a diet high in the wrong kind of carbs and sugars, and the vast majority of us accumulate body fat. Since our cells have lost sensitivity to insulin, the pancreas has to produce more and more of it in a kind of vicious cycle. It is this that creates full-fledged metabolic syndromeReavens Syndrome X. When you eat foods like muffins, bread, pasta, breakfast cereal, ice cream, your blood sugar soars. Your pancreas tries hard to deal with it by shunting insulin into your bloodstream. When this takes place day after day, week after week, cells that want to turn glucose into energy become so accustomed to the high levels of insulin swilling around that they come to ignore ittheyve become resistant to it. The glucose continues to circulate in your blood stream, telling your body that it needs to produce even more insulin.

If, like so many of us, you have inherited a genetic tendency to gain weight, high insulin levels in your system direct your body to store the excess glucose as fat deposits. You find yourself habitually hungry and constantly tired. Then what happens? You reach for more carbohydraterich, sugary foods in an attempt to bring yourself more energy. It doesnt work, except very temporarily. So the cycle starts all over again. Whats even worse is that when large doses of insulin are circulating in your bloodstream your body becomes unable to burn off the fat deposits it has already stored. Meanwhile, the insulin just goes on telling your body to store more fat. This, in brief, is the story of the effect bad-guy carbs have on your body and your life. So much for the bad carbs. Now lets meet the good carbs.

The carbohydrates in green leafy vegetables are different. You can eat them in abundance. They are full of minerals, vitamins and precious fiber, which your body can break down and use. They also support good elimination of wastes. When you eat vegetable-based carbs, it takes a much longer time before any glucose they contain gets into your bloodstream. This helps protect you from blood sugar swings, weight gain and insulin resistance. When you eat plenty of low-starch vegetables such as broccoli, spinach, asparagus or cauliflower, and proteins such as fish, meat and eggs, the levels of glucose in the blood rise slowly and modestly. By contrast, when you eat high-glycemic carbs from cereals, grains and sugars, these foods make your blood sugar soar. Then your pancreas shunts yet more insulin into your blood

stream, sending the message to your body to store more fat. Once this vicious scenario has begun, your body is in trouble. As far as your weight is concerned, you can end up with adipose deposits which distort body size and shape. And even if you starve yourself, they seem impossible to shift. And, as an awareness of the Syndrome X phenomenon of insulin resistance spreads, researchers and clinicians have begun to understand that those of us who are not classified as diabetic still suffer from insulin resistance. The good news is that almost all of us are able to reverse metabolic syndrome abnormalities from hypertension and insulin resistance to cholesterol problems, obesity and depression, by changing the way we eat and live.

abnormalities galore

my base-line study

To our surprise, every participantincluding a 50 year old top athlete showed abnormalities associated with Syndrome X. Then I introduced our group to an Insulin Balance way of eating, which I had designed. Our experiment lasted only 5 weeks. After this period we sent all the participants back to the hospital to have their parameters re-checked. The results were mind-blowing. We never imagined that, after only 5 weeks of dietary changes, every abnormal medical parameter would have normalized in each participant who took part in the study. That is except for cholesterol measurements in one woman. These took another few weeks to normalize. The experiment confirmed yet again what I have always believed: the human body has a phenomenal capacity to heal itself when given the opportunity to experience transformation at the deepest levels. This is a truth which I have applied in helping to transform the lives of men and women all over the world through Cura Romana. The results these people experience on the program continue to delight me.

I became fascinated with these leading-edge findings when, a few years ago, I made a television documentary called To Age or Not To Age. It asked the question, Can we slow aging by making simple nutritional changes? I also wanted to know Might it be possible to reverse agerelated degeneration that has already occurred, including obesity? And, finally, Can such changes be verified in medically measurable ways? Working with a doctor trained in functional medicine, we carried out what is known as a base-line study to find out. We sent participants aged between 30 and 60 to have the standard tests of medical parameters checked before the project beganfrom fasting insulin and blood sugar levels to cholesterol, triglycerides and blood pressure. These were carried out at a hospital which also boasted an excellent physiology laboratory. So we were able to call on exercise physiologists to also measure each participants V02max and percentage of fat to lean body mass.

Healthy And Lean For Life

Beyond Syndrome X

Leslie Kenton

Metabolic syndrome is one of the great discoveries of the 20th century since it plays such a central role in the health of all of us. Yet most people, including the majority of scientists and doctors, still understand little about it. Most people still only associate insulin with diabetes. Few have any notion of the vast importance of this hormone in relation to protecting the body from accelerated aging, degenerative diseases and, of course, obesity.

Leslie Kenton
energy ups and downs. And any fat shed on a conventional weight-loss diet then goes back on again when they return to normal eating.

AIDE-MMOIRE
If you forget everything else, remember this: The more carbohydrate-dense foods you eatgrains, cereals, flours and sugarsthe more insulin your body secretes, the more likely you are to become insulin resistant, and the more susceptible you become to Syndrome X, including obesity, early aging and degenerative diseases.

you need to know

All starchy vegetables, sugars and grains are addictive. The fewer of these foods you eat, the more easily will you be able to maintain your health, and the easier it will become to restore and maintain your normal weight forever, regardless of your age. Conventional slimming diets dont work. 90% of them lack the ability to restore metabolic balance. This means they provide no way of breaking the vicious cycle of high blood sugar, insulin rise, fat storage and cravings. Once you stop gritting your teeth and summoning up the willpower demanded by such diets you experience disappointing weight regain. Why? Because 90% of weight loss regimes do not alter metabolic functions as they should. So blood sugar and insulin levels quickly become high again when the diet ends, further decreasing your bodys ability to burn fat and helping to re-establish addictive eating. Such regain is blamed on emotional issues when, in truth, this is primarily a biochemical phenomenon.

always hungry

You know that feeling you have when you still feel hungry even after just eating a good meal? Following a meal or snack containing grains, cereals and sugar, blood sugar rises and insulin is secreted in order to control it. This triggers hunger, because insulin resistant cells are no longer able to derive energy from glucose as they are meant to do, so they let you know that you need more food. This is a major reason why cravings and food addictions are a common experience amongst people who are overweight. Then, like the alcoholic who must have another drink to keep from going cold turkey, you reach for yet more grain-based carbs and sweets. If you cant get another carb-fix you can become ravenous, shaky, moody and depleted. For many, this creates a chronic situation in which they remain unable to shed the fat deposits from their body permanently, no matter how hard they diet. Instead they are continually having to wrestle with a rollercoaster of

how to get old fast

A diet high in cereals, grains and sugars also speeds up the aging process because the tissues in your body become progressively more tolerant to high levels of insulin.

Excess insulin can:

Encourage cancer cell growth Cause Type 2 diabetes Distort cholesterol balance Shorten lifespan Create auto-immune diseases Increase addictions and food cravings Produce hypertension Trigger irritable bowel syndrome

In light of all of this, lets revisit for a moment prehistoric mans eating habits. The carbohydrates our Paleolithic ancestors ate came not from grains, cereals and sugars, but from wild herbs and vegetables gathered by foraging. Although these plants are also carbohydrates they bear little resemblance to the highly cultivated sweet fruits and starchy vegetables that we eat today. Our ancestors vegetables were more like silver beet and kale, a leafy green vegetable similar to spinach which very few people eat nowadays. Our ancestors ate little fruit. In the Northern latitudes fruit was seldom eaten at all, except for small, wild fruits which looked more like rose hips than those we eat today. The plants our ancestors ate also had much more fiber in them than modern plants do. As a result, Paleolithic humans got as much as five times more fiber than we do.

great fiber

Insulin resistance and high levels of circulating insulin in the blood do something else that is also directly related to fat distortions. High insulin levels suppress glucagon and human growth hormone. Glucagon is a hormone that encourages your body to burn fat and sugar, while growth hormone is essential for the health of muscle tissue and for building new muscle mass. This combination of insulins suppressing glucagon and human growth hormone not only feeds obesity, it encourages your body to grow fatter and flabbier as the years pass.

There is a lot to be said for vegetable-based fiber. First, foods high in vegetable-based fiber take time to eat and require a lot of chewing. This in itself gives you a sense of satisfaction and fullness. Eating plant-based fiber also slows the digestion of any plant starches you take in. And it buffers any natural sugars they may contain. Fiber-rich plant foods minimize sharp rises in glucose and insulin. They also help prevent constipation. Virtually all Paleolithic plant foods were fiber-rich, and yet none of them were grain or sugar-based. Any grains or seeds these early humans did eat would have to have been gathered from wild grasses which bore no resemblance to todays top-heavy, carbrich, cultivated cereals, grains and sugars.

A major problem with modern foods is that most have been manufactured from cereals, grains and sugars in a highly refined form. They wreak havoc with our insulin and blood sugar levels, producing peaks and troughs of energy, cravings, chronic fatigue, weight gain and a myriad of other problems, including brain fog and depression. Now lets take a closer look at convenience foods.

nutrition destroyed

perils of convenience

Like adult-onset diabetes, kidney stones, hypertension, coronary heart disease and cancer of the bowel, widespread obesity is a relatively new phenomenon. These all form part of the long list of chronic degenerative diseases which have earned the title Diseases of Western Civilization. All of them are hard to treatso hard that, despite sophisticated drugs, modern mainstream medicine has so far been unable to halt their spread. Unlike the microbe-generated infectious diseases prevalent at the start of the 20th century like typhoid and tuberculosis, these conditions are lifestyle-caused. We know this thanks to the pioneering work of many brilliant scientists including Sir Robert McCarrisonwho did the first epidemiological studies on the relationship between diet and health as well as Drs Weston Price, Francis Pottenger, Dennis Burkitt, Hugh Trowell and others. It has become clear that Western civilizations degenerative conditions developed as a direct result of the massive changes that have taken place (especially in the last century) in how we live and eat.

A lot has happened to alter our foods in the past few hundred years which has helped create this state of affairs. First, we began to grow our foods on chemically fertilized soils in which the organic matter had been degraded or destroyed. Eating foods grown in this manner leads to a depletion and imbalance in the minerals and trace elements in the soils. This means that many of these essential elements become unavailable to us when we eat them. You need a good supply of plantbased minerals to support complex metabolic processes on which health depends. We also need the minerals to be in good balance. Next, most of the foods we eat now are highly processed. Instead of being made into meals in home kitchens as they once were, raw foodstuffs are sent to food manufacturers where they are fragmented literally broken apart, physically and chemically. Then they are put through complex manufacturing processes which can alter them out of all recognition. Finally, the foods we buy are frequently shipped long distances and stored for long periods. All of these practices further deplete any nutritional value a food once contained. Most food manufacturing practices destroy wholesomeness. Destroy a foods wholesomeness, and you take away its ability to support high levels of well being. Once the health-giving integrity of any food has gone, it is gone for good. Such a loss can never be compensated for by taking vitamin and mineral supplements, or by eating convenience foods to which extra fiber and vitamins have been added by manufacturers.

eat real foods

The foods that our great-grandparents atewhether they were Africans, Indians, Asians or Europeanshad some important things in common. Their meals were prepared from foodstuffs of animal and vegetable origin together with plenty of natural fats. Their foods had been little processed. Finally, their foods were usually eaten wholeas closely as possible to their natural state. It is these real foods that form the basis of a way of eating able to rejuvenate and restore healthy functioning. This kind of eating also both prevents and cures obesity, as well as other degenerative conditions even if you happen to have inherited a tendency to them. Eating real food helps free people of all ages from the suffering and fear associated with high blood pressure, arteriosclerosis, cholesterol issues, diabetes, diverticulitis and other Diseases of Civilization. And the best news is: It is never too late to start eating the real McCoy and reaping real benefits.

its not your fault

Such is the Western food dilemma. Please remember this: The next time you start to upbraid yourself for being unwell, overweight or for your lack of willpower as you reach for yet another biscuit, let go of the guilt. It is not your fault. The denatured, degraded food we have been taught to eatfull of sugar, genetically modified organisms, riddled with grainbased carbs, chemicals, and lacking in healthy mineral balancebears the lions share of blame for our diminished health and our obesity. So do governments and the best guess mentality of their advisors. In a misinformed culture such as ours, it is virtually impossible to remain healthy. It is this that fires my passion to share with you the good news: As we learn the truth about nutrition and wellbeing and commit ourselves to living it, we can transform our own health and that of our loved ones and transform all of our lives.

chemical cocktails

Another negative change has taken place in the foods we now eat: as we eat them we swallow a kaleidoscope of chemical colorants, flavorings, additives and enhancers, not to mention pesticides, herbicides and fungicides. We slurp down chemical pollutants with each sip of diet cola and every bite of pre-cooked meals. Finally, there is the horror of GMO foods, which no one should be eatinga subject much too complex to go into in this book. However, horror is the most appropriate way of describing them. And GMO horror is made worse by the fact that in most countries of the world, GMO foods are not even labeled as such so it can be virtually impossible to know what you are eating.

Sweet & Deadly

Healthy And Lean For Life

Chapter Eight

Sugars are different from other carbs. In the 19th century we ate between 10 and 20 pounds of sugar per person per year. Today, each of us consumes between 150 and 200 pounds of it a year much of it hidden in convenience foods, fruit juices and sodas. Sugar may well turn out to be the most damaging of all the carbohydrates.

Healthy And Lean For Life

Ordinary table sugar is made up of 50% glucose and 50% fructose. The glucose part gets digested in your stomach. Then it enters the bloodstream and makes blood sugar rise. This triggers insulin release. Glucose is a major factor in the development of insulin resistance. The other component of table sugarfructoseis different. It does not affect blood sugar but we do not yet know for sure whether it triggers the release of insulin. This makes fructose healthy, right? Wrong.

Leslie Kenton
is found in abundance in convenience foods like juices, sodas and fruity yoghurts. Not surprisingly it is very sweet, composed of 55% fructose and 45% glucose. High-fructose corn syrup was a worthless by-product of the corn industry. That is, until someone had the bright idea of turning it into syrup and pouring it into sodas, cakes, breads, cookies, ready meals, even smoked meats and fishyou name it. Sugar in every form has got away with murder in recent years. Since it contains no fat, food manufacturers decided to replace fat with sugar to make their wares more palatable. Meanwhile, the public has tacitly accepted sugar-filled convenience foods. Only now are people beginning to realize just how dangerous sugar is to our health and our life.

meet fruit sugar

All fruit contains fructose, which is why its called fruit sugar. However, when you eat a piece of fruit, say an apple, the fruit sugar it contains comes wrapped up in natural fiber including pectin, a soluble fiber which helps eliminate heavy metals from your system. It can take you 10 minutes or so to munch your way through an apple. It takes even more time for your body to break down the fiber and absorb it. This means that the fructose the apple contains is released relatively slowly. As a consequence, its fructose can be processed a little at a time by the liver, which is the organ that handles all fructose. However, when you drink a nice big glass of apple juice or a soda (which contains 10 times more fructose than an apple) it can take as few as 10 seconds for you to swallow it all. In this case your liver gets bombarded with fructose. The human body, especially the liver, never evolved to handle the kind of fructose load that it is now getting. What does it do? It responds by turning much of the fructose you take in into fat deposits.

empty calories

Since nothing raises blood sugar levels and triggers insulin release more quickly than sugar in its many forms, eating anything full of sugar gives you an immediate high. Then, it can just as quickly bring you down, leaving you craving something else sweet to keep going. If you want to do one thing which can dramatically improve your health, your weight and your good looks, stop eating sugar, including fructose, in any form, as well as any food that contains it.

Perhaps the worst of all sugars is high-fructose corn syrup, which food manufacturers have used widely since 1978. High-fructose corn syrup

sweet poison

In February 2012, an excellent article was published in Nature on sugar. Called The Toxic Truth About Sugar, it was written by Professor Robert Lustig and two colleagues. The article points out that the consumption of fructose in high-fructose corn syrup has increased one hundred fold since 1970. As Lustig says, Were being poisoned to death. Thats a very strong statement, but I think we can back it up with very clear scientific evidence. The authors of the article suggest that sugar be regulated in the same way alcohol is regulated. Because sugar, added to so many processed foods, is everywhere it is virtually unavoidable. Meanwhile, millions of poorly informed people continue to consume 500 calories or more every day in added sugar alone. And what few people yet know is that sugar acts upon the same areas of your brain as alcohol, cocaine and cigarettes do, creating cravings, unnatural hunger and an addiction for yet more sugar. Chronic high blood sugar and insulin dont just make you fat and predispose you to chronic diseases, they age you. Sugar also undermines the integrity of the skin. When you eat a diet full of grains, cereals and sugars of any kind, your body gets busy fabricating wrinkles, sags, a puffy face and a lackluster complexion. And, as a result of the chronic high blood sugar and insulin resistance which develops over

time, you can end up without the energy to do anything to change it.

Leslie Kenton
My advice is this: Minimize or completely eliminate grains, cereals, convenience foods and sugars in your life. Many who do are surprised to discover that they have developed a natural desire to increase the quantity of fiber-rich fresh raw foods in their diet. When they continue to eat this way, they begin to experience renewed vitality. And they are able with ease to control their weight, without having to restrict the quantity of food they eat. To anybody who has conscientiously foughtand too often lostthe battle of the bulge, this can seem a miracle. Its no miracle. It is the simple result of a metabolic rebalance which takes place when you eliminate convenience foods, grains and sugars, replacing them with a way of eating in keeping with your genetic inheritance. Now lets take a brief look at fats.

the magic of stevia

How about all those artificial sweeteners? The answer is simple: Dont even be tempted to reach for them. They have their own major sideeffects. If you like a sweet taste, you cant do better than to use natural stevia. Stevia is an exotic herb which grows in subtropical areas of South America. This plant has been used to sweeten herbal drinks since preColumbian times. Extensive research and safety testing has been done in the last few decades in Japan, the United States and elsewhere. It shows that this marvelous sweet herb is non-toxic and safe for diabetics. Its even beneficial for weight loss. Recently, products containing so-called natural stevia have found their way onto the market. They pretend to be natural stevia. They are, in truth, distortions of the ingredients that make up the stevia plant. Since they are made up using only some of stevias constituents, these widely advertised products lack the synergy of the natural plant. Steer clear of them too. (See Resources for the best stevia products.)

clear up addictions

All sugars, cereals, grains and packaged convenience foods are addictive. The fewer of these foods you eat, the more energy you will have and the more easily you will be able to prevent weight gain, early aging and degenerative conditions. The fewer grain-based, cerealbased, sugar-based carbohydrates we consume, the leaner and healthier we can become.

Chapter Nine

The human body thrives on the right kind of fats. Yet we have become so indoctrinated about eating a low-fat diet that, to the average person, this simple truth sounds completely insane. The bodys tissues, hormones and all its cells do not function properly unless they have a good supply of essential fats. Without this, overall health is compromised, and we age more rapidly.

fear of fats

We have been brainwashed to develop an irrational fear of fat, largely as a result of the poor research and conclusions drawn back in the 1960swhen Ancel Keys and others were trying to figure out how to prevent heart disease. One group of so-called experts jumped to the conclusion that dietary fat was the culprit. Their rash assumptions were quickly turned into an almost religious dogma that stuck. The low-fat, high-carb-and-sugar eating propounded by them has instead caused heart disease, obesity and other degenerative diseases to soar.

beware processing

Polyunsaturated fats become rancid quickly when heated, such as during cooking or food processing. They turn into health-destroying sources of free-radicals which do the body a great deal of harm attacking cells and damaging DNA. Little wonder that reliable scientific studies now show a link between consumption of these processed polyunsaturates and cancer and heart disease.

the skinny on fat

oils to steer clear of

From the 1960s onwards, governments almost worldwide have been telling us to eat less fat and have encouraged us to eat more carbohydrate which they figured would make up for the fat we no longer ate. Low-fat foods began to appear on our supermarket shelves for keen and hungry consumers; they quickly became a major financial success story for food manufacturers. We ate baked potatoes instead of fries with our meals, and thought that we were taking the healthy option. We ate low-fat foods, thinking that these were good for us without realizing that food manufacturers, in preparing their low-fat menus, had replaced the fat with sugar. Meanwhile, we were warned against all saturated fats, told that they are dangerous, and urged to eat more polyunsaturated oils such as sunflower oil, safflower oil, peanut oilall those golden oils that still fill our supermarket shelves. These oils and margarines were held up as beneficial for protecting us from heart disease. Both of these directives turned out to be big fat lies as well.

Safflower, Corn, Sunflower, Soybean and Cottonseed Oils all tend to be badly processed, using all sorts of unpleasant chemicals. Avoid them. Canola oil, which fills many of our ready-made food products, has been associated with fibrotic heart lesions. It is high in sulphur and turns rancid easily. Margarines are full of trans-fatty acids. Shun them.

Theres something else about these oils that is likely to surprise you as well. Analysis of the fat in clogged arteries reveals that only about 26% is saturated fat. The rest is made up of polyunsaturates. Heres the bottom line: The hearts preferred source of food when under stress is

good old unhealthy saturated fat.

Leslie Kenton
oils such as coconut oil. Coconut oil is great for cooking. Extra-virgin olive oil is great for salad dressings. Eaten on their own, or together with protein, but without an abundance of carbohydrates, good quality natural fats do not cause the laying down of fat in the body. What they do do is alleviate hunger and act as an excellent source of energy throughout the day. Eating too little good fat leads to the experience of sitting down to a meal and, no matter how much you eat, still craving food at the end of it. Good natural fats let you know that you are satisfied when you eat them. When you try to minimize the level of good fats in a meal your brain does not receive the same message. Then, although your tummy is full of food, you are likely to want to eat more. Getting the right kind of fats in your diet also helps balance hormones, greatly enhancing how you look and feel.

omegas matter

Theres another aspect to the fat story which you need to know about. There are two essential fatty acids which you will want to get in small quantitiesomega-6 and omega-3. These are useful to the body in all sorts of ways. Taking in small amounts of omega-3 fats found in fatty fish and wild game increases cell sensitivity to insulin, which helps regulate blood sugar. They also help prevent inflammation in the body, protect bones, stimulate hair and skin growth and enhance metabolism. Our ancestors consumed these oils in the ratio of 1:1 or 2:1 omega-6 to omega-3. Today, in our Western diets (thanks to all the unsaturated golden oils which we have been urged to eat more of) the balance between these two fatty acids has become more like 22:122 parts omega-6 to one part omega-3. This is far too high to promote optimal health. What can we do about it? For a start, stop eating these highly processed omega-6-laden golden oils altogether. Dont worry about getting enough omega-6s, theyre everywhere. What you need to increase is your intake of omega-3s. A great way of doing this is to eat oily fish like sardines, mackerel and wild salmon, or start taking a good-quality omega-3 supplement daily (see Resources).

good guy fats

Cold-pressed extra-virgin olive oil, cold-pressed walnut oil, coldpressed flax-seed oil, avocado oil, sesame oil and coconut oil are all excellent for salad dressings. Eat them and thrive.

Olive oil is monounsaturated rather than polyunsaturatedone of the safest vegetable oils you can use. It is well-suited to dressings and can be heated, but only to moderate temperatures. Make sure the Extra Virgin Olive Oil you buy is cloudy (not filtered) and a goldenyellow color. Sesame oil is reasonably stable and can also be used on salads as can cold-pressed walnut

Choose the right kinds of fats for your meals. When you do this your body, health and looks can be transformed. Go for saturated fats found in meat, dairy products like butter from grass-fed animals, and tropical

46

Leslie Kenton

Coconut oil is a highly saturated oil/fat and is the safest, healthiest choice for cooking. It also boasts antiviral and antibacterial properties.

fat & carbs dont mix

eat yummy butter

Millions of shoppers buy margarine in the belief that its better for you than butter. This is another baseless opinion, forced upon us by bad science and multinational food manufacturers. The process used to turn out margarine, known as hydrogenization, does horrendous things to the already-rancid vegetable oils it is made from. Not only do margarines contain all sorts of additives you wouldnt want in your body, they have now been associated with the development of cancer and heart disease. On the other hand, butter contains many essential nutrients. Look for butter made from the milk of grass-fed animals. Such butter may well be the only good source of fat-soluble vitamins in the American diet! Experiments comparing the health of margarine eaters with butter eaters continually find in butters favor. In one study, the risk of developing heart disease for butter users was half that of eaters of margarine. Infants and children especially benefit from butter to foster normal growth and development. Use this delicious stuff liberallyand without guiltin the knowledge that your body will thank you for it.

Beware the Randle Effect: This describes a situation where lots of fat and carbohydrates are eaten together, as they often are in the standard Western diet. When you eat fats together with a high carb diet, the fats tend to get burnt as fuel, while the carbohydrates are converted to glucose. The glucose in turn is converted into more body fat, throwing any overweight, insulin-resistant person into a terrible vicious circle, where hunger and carbohydrate cravings lead to overeating, followed by an inevitable increase in blood sugar and insulin levels as well as body fat deposits and more cravings. The irony is that, for a long time, we have been blaming dietary fat for this, when this phenomenon is actually caused by a high carbohydrate intake, especially in the presence of junk fats found in margarines, golden oils, and processed fats in convenience foods.

you need to know

Natural fats eaten on their own or together with protein, but without an abundance of carbohydrates, do not cause the laying down of fat in the body. Nor do they cause insulin resistanceSyndrome X. This is perhaps the most difficult thing for those of us who have been highly schooled in the high-carbs-low-fat approach to weight loss and age protection to grasp. Yet it is essential to understand.

Lifes Building Blocks

Healthy And Lean For Life
When it comes to slowing the aging process and enhancing overall health, eating adequate amounts of top quality protein is vital. Protein is made up out of long chains of 20 different amino acids. These your body uses to build and maintain its structuresfrom ligaments, tendons, organs and bones to skin and nails and hair. Even the enzymes and membranebound receptors and transporters, which carry insulin and glucose in and out of your cells, are amino-acid based. So are some of your bodys most important hormones, including insulin itself.

What is exciting about all this is that, when you shift for the better both the quantity and the quality of proteins you eat, you can regenerate and rejuvenate not only the way your body functions, but the way you look and feel. Choose your protein foods with care. And honor your bodys need for top quality proteins. Use only the finest micro-filtered whey for your smoothies (see Resources). Eat only fresh fish from clean waters, grass-fed meat and game, and free-range chicken, turkey and eggs.

primary stuff

Half of the dry weight of your bodythis means if all the water were removedis protein. Of this, one third of your bodys protein is in your muscles, one fifth in bone and cartilage, one tenth in skin and the rest in blood and other tissues. Your brain cells, your genes and the hemoglobin which transports oxygen throughout your body are all made from protein. So are the thousands of enzymes which orchestrate your bodys metabolic functions, from the growth of nails and hair to digesting and assimilating the foods you eat. Every molecule of muscle in your body is made from the proteins you eat. Muscle is the engine which turns food calories into energy, and burns fat. Enhance the quality of your muscle and you automatically raise the vitality of your whole body. You also enhance your sex hormones, improve skin quality and gain in strength and power. Protein foods help do this. They also help ground you. Thanks to this characteristic, protein can even play an important role in helping you fulfill your dreams, influence your goals and discover your path in life.

in constant flux

One thing thats interesting about proteins is that no protein structures in your body are fixed. Each amino acid strand is constantly being broken down and reshaped. In fact, the whole structure of your body is being rebuilt day by day, thanks to the proteins you take in through your foods. 98% of your bodys molecules, including your teeth and bones, your organs and muscles, are replaced each year. Within the last month, your skin has completely rebuilt itself. Within the last 3 months, you have received a whole new blood supply. Within the last 6 months, just

Carb Revelations

There is no such thing as an essential carbohydrate. Although we have been misinformed about this for half a century, here is the truth: Carbohydrates are not required in a healthy human diet. The standard advice still doled out by doctors and nutritionists insists that at least 120-130 grams of carbs are needed each day to feed our brain and central nervous system. This is not true. By the way, Americans today consume on average between 300 and 500 grams of carbohydrates a day.

two years studying everything I could find about it. Then I wrote a book, published in 2002 by Random House UK, called The X Factor Diet For Lasting Weight Loss and Vital Health. At the time it was published I was expecting lots of criticism from the powers-that-be since it was the first book written specifically about a ketogenic diet used for weight loss. To my great surprise the book entered the London Times bestseller list the same week it was published. Since then, much exciting research has been carried out about ketogenics and low-carb eating. Slowly we are beginning to educate people about the healing and weight loss benefits that can be gained from a low-carb or no-carb way of life. Leslie Kentons Cura Romana also makes use of these discoveries. Both the Journey Program and Inner Circle Gold use ketogenics during the rapid weight loss part of the programs and the all-important Consolidation, a life-changing experience which can help people end forever dieting and struggles with food addictions. You will find more information about Cura Romana at the end of this book.

ketone adaptations

When there are no carbohydrates in a persons diet, the central nervous system and the brain are fueled by fascinating little molecules known as ketones. Ketones are made in the liver from the fat we eat, and from fatty acids released from the fat tissues of our bodies. When we are living on a very low-carb diet, ketones alone provide us with about 75% of the energy the brain uses. The rest of the energy to fuel the brain and nervous system is derived from glycerol that is released from our fat tissues as they are broken down, together with small quantities of glucose which the liver makes out of amino acids from the protein foods you eat. This is a normal and natural process. The name ketones sometimes strikes fear into the uninformed, which includes some doctors, nutritionists and the media. They confuse this natural process known as nutritional ketosis with a pathological condition called ketoacidosis which occasionally occurs in uncontrolled diabetes and has nothing to do with the benign nutritional ketosis.

better than glucose

dont forget

Here are the most important things for you to remember if you want to grow healthier and leaner as the years pass:

Research has shown that the brain and the central nervous system of someone on a very low and even no-carbohydrate diet actually function better and more efficiently on ketones than on glucose. What is little known as yet is that mild ketosis is the human bodys normal way to function, and has been throughout 99.9% of human history. Its interesting to note that wise physicians have been using what is known as a no-carbs ketogenic diet for many years to treat epilepsy, Alzheimers disease, and even cancer. I personally became fascinated with a ketogenic diet in 2000. I spent

Obesity is a disorder of fat accumulation. It is not caused by over-eating. Nor is it caused by lack of exercise. Insulin is your bodys primary regulator of fat storage. When insulin levels are high, either long-term or simply after eating a meal, fat deposits accumulate in the body. When insulin levels are low, your body becomes able to release fat from adipose deposits and turn it into energy. The natural fats you eat, whether saturated or unsaturated,

are not the cause of heart disease, obesity or other chronic diseases of civilization, despite what weve been taught. Grain-based and cereal-based carbohydrates are the major culprit behind chronic degenerative conditions including weight gain and an inability to shed fat. They negatively affect insulin secretion and disturb the whole symphony of hormonal balance in the human body. Sugarsfrom glucose and sucrose to high-fructose corn syrupare monumentally harmful. Consuming excess calories does not cause us to grow fatter. Nor does expending more caloric energy than we consume lead to long term weight loss. It only creates hunger. Because of the effect that grains, cereals, starchy vegetables and sugars exert on insulin, they can trigger the development of diabetes and coronary heart disease. They are also major contributors to cancer, Alzheimers disease and other diseases of civilization, including premature aging. Obesity and an inability to shed your excess fat deposits are the result of an imbalancea disequilibriumin the hormonal regulation of fat tissue and fat metabolism. When the brains fat regulation system (the hypothalamus) is not functioning correctly, the buildup of fat tissue and the storing of fat exceeds the mobilization of fat from the body and we get fatter. When hormonal regulation and hypothalamic balance are restored, this reverses the process and we can shed inessential fat deposits.

Grains, cereals, sugars and starchy vegetables increase hunger and decrease the amount of energy expended through metabolism or physical activity. The fewer grain-based, cereal-based, sugar-based carbohydrates we consume, the leaner and healthier we can become.

Whether you decide to check out Cura Romana or not, you can start to improve your health right now by getting rid of all the low-fat and highcarb foods in your kitchen. These include jams and jellies, rice cakes, popcorn, flour, grains, pasta, pretzels, low-fat salad dressings, raisins, fruit-flavored yoghurts and sugars. (By now, you know the kind of stuff Im talking about.) You might want to hang on to a little sugar which you can offer to visiting friends who dont yet know as much as you do. You might also want to hold on to some brown rice, buckwheat flour or chickpea flourthings you can use to thicken a soup.

Leslie Kenton
What surprises most people when they go to a supermarket in search of genuinely healthy foods is that most of the stuff they find there is not worth eating. A good general rule when choosing healthy food is this: Foods with a long shelf life dont belong in your body. Processed high-carb foods often have a very long shelf life. This makes them great sales material for food manufacturers and retailers since these packaged foods can sit on the shelves for monthssometimes even years. But 90% of them have been whipped up out of flours and sugars, junk fats and chemical additivesall of which you will want to avoid.

step 1 clear the decks

1 2 3 4

Most people find that the process of clearing their fridge and pantry is a salutary experience. It brings you a sense that youre starting a whole new lifeas indeed you are. The most important foods you will be buying to replace them are these: A good supply of wholesome natural fats like coconut oil, extra virgin olive oil and butterpreferably from grass-fed cows. Top quality protein foods including meat, seafood, eggs and the very best micro-filtered whey if you like to make smoothies. Plenty of fresh green vegetablespreferably organic both to eat raw and to cook. Some low-sugar fresh fruit such as berries.

step 2 shop the edge

Youll often find the healthiest, freshest, and the most natural foods around the outside edges of any supermarket. These include crunchy fresh vegetables, fresh game and meats, seafood, eggs and cheeses. Fresh, wholesome foods are perishable and therefore have to be replaced often, unlike the ready-in-a-minute, pre-made stuff that populates the inner aisles. The best fiber in the world comes from fresh green vegetables. Eat plenty of them. You might like to try eating half of your vegetables raw.

GREAT CARBS

(less than 5g usable carbs per serving, also good sources of fiber) cup diced aubergine/egg plant a medium avocado cup blueberries 4 Brussels sprouts 2 cups red or green cabbage

healthy fats and oils

Youll want to eat the healthiest available. They can be used in salad dressings or for cooking. This may surprise you but as much as half of your caloric intake can come from top quality natural fats. In addition to the fat you get from food, consider taking a good omega-3 supplement such as Krill oil. extra-virgin olive oil cold processed walnut oil (never heat this) cold processed grapeseed oil (never heat this) coconut oil homemade mayonnaise made with extra-virgin olive oil butter cream or sour cream (provided you have no problems with dairy products)

Home-made organic vegetable bouillon or vegetable broth. You can use green vegetables to make your own, such as broccoli, cabbage, cauliflower, bean sprouts, asparagus, mustard greens, spinach, watercress, ginger, garlic. Bring to the boil and simmer for 15 minutes. Season with herbs and sea salt and store in the fridge, reheating as needed. This is a good drink if youre feeling weak or headachy when your body begins the natural process of cleansing itself after years of following the inaccurate advice we have all been given.

vegetarian options best whey protien

Tempeh, miso and other fermented soya products are great. If you decide to use tofu, make sure it is organic. 95% of soy beans today have been genetically modified and you do not want to put GMO foods into your body.

You must choose your micro-filtered whey carefully since most of the whey supplements on the market are poor quality. Buy non-denatured, native whey protein that is low temperature processed to maintain the full range of the fragile immune-modulating and regenerative components naturally present in fresh raw milk. The milk its made from should have come from grass-fed cows that were allowed to graze year-round on natural pastures. Surprisingly, the very best whey carries the highest value biological protein in the world. Its great for vegetarian and non-vegetarians alike. (See Resources.)

drinks

Filtered or spring waterdrink 8 to 10 glasses a day Herb teas Flavored mineral waters (only those with no added artificial sweeteners or flavors)

Whenever possible, go organic. Not only do organic vegetables taste better, the organic matter in healthy soil is natures factory for biological activity. Organic vegetables supply us with an excellent balance of minerals, trace elements and vitamins which we cannot get any other way. Organic methods of farming also help protect against distortions in mineral balance. Good mineral balance is important, since an increase in one or more minerals can alter your bodys ability to absorb as much of another mineral that it needs. Conventionally grown fruits and vegetables have been sprayed with pesticidespetrochemical-derived compounds which behave like low-dose synthetic estrogens in the body. Many fruits and veg are also treated with fungicides or wax. Each one of these chemicals that your body takes in contributes to your toxic load, putting pressure on your liver, stressing your body as a whole and

encouraging free radical damage. When it comes to maintaining good blood sugar and insulin balance, you do not want this to happen. A stressed liver has trouble managing glucose levels and controls insulin poorly. Natural food emporiums can be good places to find good organic vegetables and other produce, as well as eggs, fish, meat and dairy products from animals that have not been stuffed full of antibiotics, dosed with chemicals or treated with hormones. Shop as much as possible in stores that offer organic produce and untreated foods.

read labels carefully

A word of warning: Just because you buy something in a health food store or natural food emporium does not mean that it will be helpful in reversing insulin resistance and promoting fat loss. In addition to the good fresh foods they sell, these stores are also chock-a-block with high-carb treats full of sugar. And by the way, just because a food is labeled organic doesnt necessarily mean you want to eat it. Organic sugar and organic flour can upset the insulin/blood sugar apple cart just as easily as non-organic foods can. Although organic treats may look great in their packages, most of them are best avoided. Read labels as carefully here as in you do in a supermarket. And make sure that foods you buy contain no hidden sugars such as honey, corn syrup, fructose or other sweeteners.

Healthy And Lean For Life

For many years I wondered why, after childhood, most of us no longer experience this kind of explosive joy, rhythmical freedom and sensuous energy grounded in the physical body. I kept asking myself these questions: Why do we often feel only half alive? Why do we tend to look upon our body as something separate from ourselves, something to be criticized, judged, or pushed and shoved into shape, instead of celebrating its power by surrendering to the joy of sensuous movement the way our animal friends do?

Leslie Kenton
engine that turns your foods into energy and burns fat. It can generate an experience of simple pleasure in whatever you find yourself doing. It also carries the lions share of the life-energy you must have to think clearly, move gracefully and feel wonderful. The power of the horse, the rhythmical gait of the wolf, the wild playfulness of the dolphin all depend on strong, healthy muscle. To create a firm, lean body for yourself, start listening to and nurturing your muscle. Become aware of your body as a friend and ally. Then you can begin to experience the many gifts this can bring you. Soon you will learn how to move for the sheer joy of it.

leave death behind

For too many people, their primary experience of the body is one of deadness. And since none of us are able to live with deadness for too long, we turn to artificial stimulus through drugs or alcohol, compulsive work or sexanything that seems to promise it can make us feel alive again. The trouble is this: None of these artificial things that we hope will recover our aliveness work for long. Where does the real key lie? I believe it can be found in special kinds of movement which bear little resemblance to what most people think of as exercise.

get into bliss

Personally, I love movement. But only because doing it makes me happy. I would never exercise because the powers-that-be tell me I should or out of a sense of duty, or for fear of putting on weight. To do that would not only imprison my body, it would kill my spirit. It would be like taking a thoroughbred and binding it so that it cant get out of the starting gate. Heres my advice: discover what physical things you love doing, then do them for the sheer pleasure of it. You might swim or jog or dance just because it feels good and makes your body sing. Or rebound on a mini-trampolinesomething that is particularly good for energizing and internal spring-cleaning. Swimming can be great because it feels so sensuous. But dont make yourself swim laps in some driven way. Instead, move deliciously through the water. Play as a child would. Notice the bliss your body feels as you do. If you have no idea what kind of movement you enjoy, start with a simple walk each day, while paying attention to how your body feels with each step you take. Once you discover just how vast your bodys potential for joy is and

come alive

People often talk about the body as if it were a machine. In reality, your body is nothing like a machine. A machine, when you use it, wears out. Your body is designed to be active. The more you move it for the sheer joy of what this feels like, the stronger, more sensuous and more beautiful it looks and feelsno matter what your age. The key to joy, bliss and aliveness lies in the same tissue that holds the key to burning excess fatin your muscles. Muscle is not only the

you begin to delight in this, your experience of movement can change forever. Far from being a form of exercise you once did quickly to get it over with, it will become one of the most enjoyable experiences in your life. American enthusiast, the late George Sheehan, whose legacy continues to inspire people about the true nature of exercise, describes this experience well: Exercise that is not play accentuates rather than closes the split between body and spirit. Exercise that is drudgery, labor, something done only for the final result is a waste of time. I couldnt agree more.

Regular movement done for joy even helps transform the body in medically measurable ways by:

Daily walks can be a lot of fun. They can also be a major factor in disease-prevention, as they help keep your body clean from the inside out. They increase vitality and improve your mental state. How far? How fast? That depends on how fit you are and on how your body feels as you move it. Start slowly if you are not used to exercise, then graduallyover a few weeksincrease your pace if this feels right to do. Walk with the simple intention that you are going to allow your body to flow, step by step, so it can enjoy the pleasure of feeling more full of life. Walking brings your awareness into your body, along with the magnificent spirit that is the essence of who you are. Do this and before long, you and your body become one.

Helping to prevent osteoporosis and fractures

Research into age-retardation shows clearly that it is not a pill, magic potion, or some glamorous and expensive youth treatment which best reverses the long and depressing list of changes that have come to be associated with aging. Its simple movement. How much such movement you allow yourself determines the level of something called your V02max. This is the scientific term for maximum oxygen consumptionthe most critical measurement of your bodys heart and lung performance. In most people, V02max declines steadily after the age of 30at a rate of about 1 per cent per yearsimply because, unlike our primitive ancestors who remained active all through their lives, we lead a largely sedentary existence. So we often age more rapidly. We experience a decline in cardiovascular and lung fitness, we lose muscle and bone

the body reborn

The wonderful news is that a decline in V02max and rapid aging are by no means inevitable. When a person of 35, 55, or even 75 moves his or her body regularly, this can restore V02max levels to that of someone many years younger. Vitality increases. Parameters such as cardiovascular fitness, heart-rate, cholesterol and blood-lipids return to healthier, more youthful measures. Skin looks younger, high bloodpressure lowers, joints regain flexibility. Loss of minerals from the bones is halted and muscle-mass increases. Believe it or not, even intelligence and memory improves. Movement has profound value which goes beyond health and leanness. It helps reconnect us with our essential beingphysically, mentally, emotionally and spiritually. Its time for us to throw out all the exerciserelated shoulds weve swallowed for years. Its time to explore the real sensuous, blissful gifts of movementtime to discover how, when it is done for pleasure, movement can literally turn a life around.

Eliminating wheat, maize, sugars, starches and sweets from your diet, and reducing or even cutting out other grains and cereals enables you to transform the biochemistry of your body, restoring energy and wiping out cravings for alcohol, drugs and sweets. You can help your body grow leaner and stronger, then support it to stay that way. Independent studies confirm all this and more. Grain-based and cereal-based carbohydrates turn into sugar the moment you eat them. They dull your brain, cause food cravings and undermine the functioning of the appetite control center in your brainthe one thing you want to restore order to if you want to shed excess fat, transform your body size and shape, then make this transformation permanent.

Stop eating cereals and grainsbread, pasta, candies, as well as convenience foods. Not only do these foods exert seriously negative effects on insulin and blood sugar, as weve seen, they are the dietary culprits behind the development of diabetes, coronary heart disease and obesity. They are also major contributors to other chronic conditions including cancer and Alzheimers disease. way to go

A low-grain diet with adequate, good quality fats and protein foods, and lots of green vegetables as well as a small quantity of low-glycemic fruits like berries, comes as close as we can get to eating as our ancestors did for more than a million years of human evolution. It is the way of eating that we are genetically predisposed to thrive on. When we eat this way, we provide our system with everything it needs to raise itself to higher levels of health, energy and clarity of mind.

keep a journal

Scientific discoveries with the potential fundamentally to transform human health are rare. Few of them see the light of day; still fewer get translated into the kind of information and practices you or I can use to change our lives for the better. Here are three important factors for to remember:

Record your progress as you transform your life by keeping a personal journal. Note down what you are eating each day, how you feel, what you discover about yourself on every level, and how much joyous movement you get. Your own personal experience of the entire process that is taking place in your body and your life may, in time, not only become a valuable record of your own exciting personal journey. One day, it may allow you to help othersyour family or friendswho long to improve their own wellbeing.

At times youll find yourself brimming with excitement and gratitude to have discovered a way to live a life rich in energy and joy. At other times, a few of the changes you face may seem difficult. For we humans are creatures of habit. We have a tendency to want to return to the way things were before. For short periods while your body is detoxifying, youll need to give yourself a chance to rest more. Your body will reward you for the care and love you show towards it with a new sense of vitality and ease. Dont forget to record what you feel in your journal, too. We dont just detoxify on a physical level. Such changes cleanse us psychologically and spiritually as well. We all have far more resources for happiness, health and creativity than we ever use. Embracing this new way of eating has already helped many to free themselves from chronic suffering and dependence on drugs, replacing them with welcome vitality. This experience both delights them and has them looking towards the future with enthusiasm.

Shun sodas, soft drinks, fruit juices and other highly processed drinks including calorie-free sodas riddled with artificial sweeteners. Eliminate golden vegetable oils which you see on supermarket shelves. These are chemically processed and are full of trans-fats. Use cold-pressed, extra-virgin olive oil, coconut oil and butter. Enrich your diet with omega-3 fatty acids from fish, wild game or nutritional supplements (see Resources). Dont eat deep-fried foods, margarines or foods containing partially hydrogenated oils. Eat a good quality protein at each meal. Stay away from convenience foods. Take a food-based multiple vitamin including plant factor antioxidants such as flavonoids, pygnogenal and alpha-lipoic acid regularly. (See Resources.)

Have I been doing what I love most? Is the way I am living right now feeding my spirit, or not? When we live life from the core of our being with passion, joy and freedom, we gain access to more and more natural energy from within. Optimal wellbeing is nothing less than the process of unfolding which each one of us goes through to become more fully whoin truthwe already are, although few of us yet realize it. As you begin to transform your health and align your life with your unique truth, you will discover that the universe supports your health, development and personal freedom in ways you may never have dreamed possible.

soul whispers

With every year that passes, I become more aware that illness, lack of energy, depression or feelings of purposelessness are not only the result of the biochemical issues we have been exploring. They are also expressions of the frustration of our unique essence which continues to plead with us to set it free. Many of the physical, emotional and spiritual troubles you may experience are, in truth, calls from your soul. They are trying to tell you that its time to awaken and become conscious of the magnificent being that in truth you are. Its important to remember that all deep healing is a transformation on every level of your life. Energy, power and authentic freedom grow as you engage in the process of connecting with your core being, as you discover what your unique values are, what your souls purposes are, and then begin to live out these discoveries in your daily life.

such beauty

darkness into light

Being able to live out your potential on all levels depends on how well you learn to nourish yourselfphysically, emotionally and spiritually. Its important to develop a new way of living that works for youone that incorporates pleasurable movement, good food, restorative sleep and other helpful practices that support vitality. Thats a given. But this is only half the challenge. For developing health and vitality also depend on how well we come to live our own truthinstead of trying to fit in with other peoples rules. Whenever I am low in energy, I check what I have been eating, if I am getting enough sleep and all the rest. Then I ask myself the most important questions of all:

For more than four years I have been guiding thousands of people throughout the world on their own health process on Cura Romana helping them discover what is most appropriate to their needs on physical, emotional and spiritual levels. This continues to be one of the most fascinating and rewarding experiences of my life. It confirms, again and again, what deep inside me I always sensed to be true: that every one of us carries a divine spark of soul which we are here to live out to the full, bringing our own individual brand of spirit into material form as we walk the earth. Watching this unfold in the people I work with is like walking in a garden and coming upon flowers, plants, trees and mountains that I have never seen before. I continue to be dazzled by the beauty of each human beings unique unfolding. Nothing could be more wonderful.

Why I Wrote This Book

Healthy And Lean For Life
In writing this book I have drawn on knowledge and experience amassed over more than four decades of researching and working in the fields of natural health and spiritual development. How I became involved in all of this was serendipitous. In my early-twentiesalready mother of threeI found myself seriously ill. In truth, I had been unwell ever since early childhood when I twice almost died of pneumonia. What happened to me next was the greatest gift the Universe could have given me: One after another I met and became friends with some of the finest scientistsincluding two Nobel Laureatesand doctors in the English speaking world. Each of these men and women generously shared with me what they knew most about in relation to health, biochemistry and natural healing. What a blessing. I was passionate about finding answers which could help me, and others, and these experts in their fields could not have been more helpful to me in my search.

my search for healing

In addition to illnesses too numerous to list, I had struggled with my weight since adolescence. I dreamed of discovering a method of permanent weight loss and lasting well-being for myself and others. It is out of this life-long desire that Leslie Kentons Cura Romana has come into being. My Cura Romana program developed from my having confirmed for myself over many years that, when given what it naturally thrives on, the human body has an enormous capacity to heal itself. I wanted to create a program for safe, gentle, rapid weight loss and deep cleansing. This weight loss protocol, instead of putting strain on the organism as conventional weight loss diets do, would be one that enhanced hormonal balance, better functioning of the autonomic nervous system and fostered high level well-being, all at the same time. I knew if such a program could be developed it would serve as a way of not only helping people recover their bodys natural shape and weight but also of transforming their health and enriching the quality of their life, no matter what their age. This is how Cura Romana came into being. More about this later.

I knew, even in my mid-twenties, that there was a way for human beings to thrive no matter what their age and I was determined to find it. This was the time when remarkable men and women began to appear in my life.

times of discovery

Ever since my mid-twenties I have been determined about separating bogus research and beliefs from real information about health and healing, and then sharing the practical tools and techniques I discover. This is seldom an easy task. With each year that passes it seems that we are bombarded with more and more inaccurateeven potentially life-destroyinginformation from corporate and government entities like Big Pharma, multi-national food conglomerates, and the media. A major consequence of all this is that most people remain in a state of

priceless gifts

Even though my teachers were all conventionally trained scientists and medical doctors they generously shared with me their time, their care and their knowledge of natural health and beauty. Like me, they were sure that the conditions mentioned above were by no means inevitable. Each of them knew that an ailing human body has an innate capacity to heal itself, given changes in diet, belief systems and lifestyle. The work of these farsighted professionals focused on the avoidance and treatment of degenerative conditions, including obesity, and helping the

pieces of the puzzle

truth and courage

For instance, it was British physician Phillip Kilsby who first made me aware of the power of nutrition for healing. Phillip had a 99.9% success rate in treating migraine through dietary change alone. As it turned out, the only patient who failed to respond to his treatment was a woman who did not have migraine at all. She had a brain tumor. It was surgically removed, leaving her free of pain for the rest of her life. Gordon Latto, a Scottish doctor, and his wife Barbara Latto, a German doctor trained in traditional naturecure, became close friends. The two of them kept me fascinated for many years as I learned as much as I possibly could about how to help the body heal itself. They gave me many precious books from their own librarysome going back to the 19th century. From them I learned about the European tradition of natural treatments. Another brilliant doctor, Andrew Strigner, a British psychiatrist who wasand still isthe most knowledgeable person on nutrition I have known, has an extraordinary ability to seek the best in human beings. I believe that working with him for over 10 years instilled much of this in me. Dr Ralph Bircher, doctor son of the famous Max Bircher-Benner in Switzerland, as well as Dr Dagmar Leichti-von Brasch, Max BircherBenners brilliant niece who ran the famous Bircher-Benner Clinic in Zurich for more than 40 years after his death, took me under their wing and have inspired my research by working hand in hand with me at their

Psychiatrist Richard Mackarness was a pioneering expert in the treatment of extreme psychiatric conditions. He did this by identifying and then eliminating food allergies. Richard invited me to work with him in his research at Basingstoke Hospital in England. Richard was the author of two bestselling books, Not All In The Mind and Eat Fat and Grow Thin. Back in 1965 he taught me why we get fat and what to do about it, as well as how eating these same foods can cause the body to age rapidly and develop degenerative diseases, long before Dr Atkins appeared on the scene. Richard knew what the new wave of researchers are now beginning to rediscover and write about. These people and so many more have helped me, and continue to help me, learn what I need to know both to help myself and to share with thousands of others through my workshops, books and television programs. I took what they taught me, experimented with it, applied it to my own life and to the lives of other, then wrote about it as we celebrated the results together. The generosity and kindness of these doctors and scientists seemed to be unlimited. Each one has shared with me what they have learned in the course of their lifes work. They have something else in common too: Each, at one time or another, has been forced to face the derision of colleagues and criticism from official bodies and the media because they courageously refused to accept so called conventional wisdom. They had a drive to discover and test out truths and then go their own way instead of trying to fit in.

new wave truth

Just as these doctors and scientists refused to buy into status quo beliefs, the new wave of passionate investigators are just as uncompromising in their desire to discover truths and share them with the rest of us. You will find the work of many serious contemporary investigators and teachers in the lists of Further Reading at the end of chapters in this book. Science journalist Gary Taubes investigations into the cause and cure of obesity are profound and important. Dr Peter Attia is another admirable part of this new wave. He joined with Taubes to launch an organization called The Nutrition Science Initiative (NuSIpronounced new-see) on September 12th, 2012. A non-profit organization, its purpose is to fund rigorous, well-controlled experiments targeted at resolving unambiguously many of the nutritional controversies you have read about in this book. Other members of the new wave include Eric Westerman who explores in depth the benefits of low carbohydrate eating, Robert Lustig, a Professor of Pediatrics who reveals the bitter truth about sugar that every one of us needs to know, Donald W Miller who educates people on the many benefits of eating saturated fats, and others of similar independence and integrity too numerous to name. The list of such people whose research is unbiased and whose conclusions are sound gets longer by the year. Pay attention to them, listen to what they have to say, read what they have written. Some of what you will learn is capable of changing your life for the better, permanently.

Chapter Seventeen

Leslie Kentons Cura Romana has been developed out of my four decades of working with some extraordinary mentors. It began with one of them, a Bavarian doctor who, amongst his many accomplishments, happens to be the acknowledged authority on live cell therapy. More than 20 years ago he introduced me to Cura RomanaThe Roman Cure.

77

Healthy And Lean For Life

Cura Romana is based on the research and clinical findings of British doctor A. T. W. Simeons. Simeons was awarded the Medal of Honor by the Queen for his many medical accomplishments in Africa, India and, later, Rome. This is where the Roman Cure got its name. His medical treatment for obesitywhich my own expanded Cura Romana draws onwas originally based on a specific very low calorie diet combined with daily injections of a natural biological substance called human chorionic gonadotropinhCG. More than 20 years ago, my experience of Simeons work was to change my life.

Leslie Kenton
doctors who have taught me, Simeons work has been vilified. Yet, also like them, I discovered that time and again Simeons work has been exploited by people hell-bent on using his discoveries only for financial gain and who have undermined its integrity. I learned that Simeons discovery of the cause and cure for obesity has been attacked by the same corporate and government entities which have for 60 years been feeding us inaccurate information about nutrition in relation to the cause and cure of degenerative diseases. The misleading, even obviously false, information surrounding and criticizing Simeons work is hard to understand. Interestingly, attacks on Simeons work are carried out in the same way by the same organizations that have attacked, and continue to attack, the work of other independent scientists and medical researchers of integrity. I knew from my own experience and research that The Roman Cure works superbly well not only for graceful, successful weight loss, but naturally to improve health in medically measurable ways.

endless struggle

I had been wrestling with my weight for decades. Carrying out the Cura Romana protocol under my Bavarian mentors direction enabled excess fat on my own body to be rapidly burnt up and turned into energy. It restored my bodys natural shape and form. I experienced no hunger on the program and my energy soared thanks to Simeons discovery that his protocol not only efficiently burned up the bodys unwanted fat deposits. As it drew fat from cells it literally converted it into energy which the body could use. So while I was shedding weight my body was gleaning more vitality from the fat burning than from the small amount of specific foods I was eating. So impressed was I by the experience that I was determined to share the benefits I had received from Cura Romana with others.

my search continues

yet more research

For several years I contacted medical doctors throughout the world to learn how, in clinics from Buenos Aires to Los Angeles, South East Asia to Japan, Simeons protocol has been, and continues to be, used. Yet I could not work out a way to make this natural protocol available to people who could not afford an expensive clinic treatment. I knew I had to find a way to make this happen. Simeons dietary protocol is by far and away the best method for bringing about healthy rapid weight loss while restoring balance to a bodys hormonal and autonomic nervous system. Moreover, its benefits go well beyond the success it offers in fat reduction. It sets up the conditions that can potentially allow natural healing on many other

For 15 years I researched A.T.W Simeons work. I read all of his books, many of which I found hard to put down, as well as his published research. I discovered that, just like the work of the scientists and

levels as well. Since Simeons first published his findings in The Lancet in 1954, doctorsmany of whom were trained by Simeons himself in Rome have been experimenting with alternative methods of delivery for hCG. First an oral form was developed then more recently, a homeopathic form. I found that both, when properly combined with Simeons specific dietary protocol, were equally as effective as the traditional injectable hCG.

Leslie Kenton
continues to block its use in many countries, including the United States. The FDA have within the last year taken practitioners using the homeopathic hCG for weight loss to court and imposed heavy fines.

breakthrough

slanderous chaos

A vital part of my making Cura Romana available to the public worldwide at an affordable price was to create a non-medical alternative to hCG that is safe, effective, and can be easily used. I faced three major challenges. First, I needed to find the key to enabling quick, healthy weight loss without relying on hCG in any of the forms in which it had been used. Second, I needed to tackle the only weakness in Simeons Cura Romana program. This appeared only after weight loss had taken place using his protocol. Simeons only saw a 60-70% success rate in his patients maintaining the weight they had lost in the first year after completing his protocol. I was determined to develop a way in which the transformation in shape, health and weight loss gained on the protocol could be made to last. This is where my four decades of work with my mentors came to the fore. Third, having seen what could be achieved during my TV documentary To Age or Not to Age, I was quite certain we could provide a similar experience for participants on Leslie Kentons Cura Romana. When we began the base-line study on which To Age or Not to Age depended we tested standard medical parameters such as cholesterol and triglyceride levels, V02max and fasting glucose in each participant. We were surprised to discover that every participant had several abnormalities. Yet, after five weeks on the program I had devised for the TV program, their negative parameters returned to normal. This occurred in all but one of the participants. Her body took another few weeks to reach normal cholesterol levels.

Nevertheless, ongoing attempts to undermine Simeons work continued, carrying unfortunate consequences. Despite practitioners of integrity who have striven to preserve the spirit of Simeons discoveries, all sorts of weight loss companies have chosen to distort Simeons Cura Romana protocol. This has resulted in a number of fly-by-night companies selling oral and injectable forms of hCG which are of questionable origin, a few of which are actively poisonous. Big Pharma have always lobbied hard and more often than not successfully to make the sale or use of hCG for weight loss illegal. After all, Big Pharma makes billions of dollars from their weight loss products every year. If Simeons really found a cure for obesity they need to crush it for it could potentially destroy the huge market in weight loss drugs and products. Then governments got involved. Within the past six months alone doctors in Holland who have been safely and successfully using hCG for decades have been told they are now breaking the law. Those who try to defy the ban are fined between 20,000 and 50,000 euros. All Dutch doctors are now forbidden to use hCG for weight loss in any form. Slanderous aggression against the homeopathic form of hCG

In Leslie Kentons Cura Romana I was looking for a way to show people how to improve their health in the long-term. I knew this could be done.

sensitivities and chemical allergies and how they affect individual bodies differentlyphysically, emotionally and spiritually. In no small part this is thanks to the work of clinical ecologists like Richard Mackarness and his teachers, Theron Randolph and Herbert Rinkel. After a great deal of testing, and with thanks to the enthusiasm and help of many participants on the Cura Romana program, Consolidation is now a simple, highly practical, experiential process. Like the rapid weight loss Essential Spray+Food Plan part of the program, many participants claim it not only transforms their health but their whole life. Cura Romana is a truly holistic program for weight loss, health, good looks, energy and personal growth.

the essential spray

I set to work with British pharmacist John Morgan to develop an effective alternative to all the forms of hCG. This took us more than a year of experimentation to accomplish. It resulted in the creation of our Essential Spray. We have now used it daily in the rapid weight loss part of Leslie Kentons Cura Romana for more than two years. We had also wanted to develop a spray that could do all that was expected of it but go further in supporting the bodys transformative healing processes, as well as supporting emotional and spiritual growth. We have been delighted by the confirmation weve received from hundreds of participants on Leslie Kentons Cura Romana that this is what we have achieved.

participants speak

consolidation reborn

Before beginning a Cura Romana Journey program, each participant is asked to report to us whatever health challenges they may be facing as well as to let us know about any prescription medications they may be taking. It is important if they are on medication that they let their doctor know what they are doing because the doctor may want to change the levels of prescription medications as a participants weight drops and their health improves. On the program itself, each participant is guided day-by-day by my own online videos and audios. The significant changes in health which participants tell us about each year I believe result from a combination of how the body itself responds to the program as well as on the way Consolidation introduces them step-by-step to ways of further fostering high level freedom from degenerative conditions now and long into the future. Thousands who have followed the program report far-reaching benefits verifiable in medically measurable ways. Here are just a few samples:

While our Essential Spray was being developed I set to work on my second, equally daunting, challengeto structure an effective six week Consolidation protocol for people to follow after they have completed the rapid weight loss protocol. My goal was to devise a total system by which the body can continue to experience ongoing improved health naturally, from within. I wanted to help participants make their weight loss last. Our unique Consolidation process incorporates the information you have now read in this book. Added to this is all I know about food

pain disappears
I was eighty-five years old when I began the program and I weighed 144 pounds. I had for months been experiencing severe backache. It did not respond to acupuncture, herbs or massage. A few hours after I took my first dose of Essential Spray the pain was gone. It has not returned. Now, at age eighty-six, my weight remains between 128 and 131 pounds. I feel lighter. Women continue to report improvement in hormonal symptoms such as hot flashes and night sweats which had been severe enough to disturb their sleep. Beverly in the UK writes, Cura Romana brought gifts to all areas of my life, not just weight loss. Having suffered thyroid issues, anxiety and hormonal imbalance, I discovered to my surprise and delight that by the end of Essential Spray + Food Plan all of these issues had resolved themselves. I finished the program one month ago and can take emotional balance for granted now because Im eating in a way that supports all my bodys needs and its easy.

Before Cura Romana, I had been taking 50mg of Levothyroxine per day as well as 40mgs of Simvastatin per day. I had chronic constipation, haemorrhoids, raised cholesterol etc. Now, not only am I free of the drugs, I no longer experience any of these conditions. Debbie in the UK

When I began Cura Romana I was taking a number of medications, including Ciprimal and Zanax. I am no longer taking any medication at all. I assume that having been on Cura Romana, and the fact that no meds are being taken any more, is also the reason that my libido has at last returned. Says Beryl, who lost 28 pounds on Cura Romana.

Leslie Kentons Cura Romana has turned out to be a watershed in my more than four decades of immersion in natural health and personal transformation. iHerb.com is my favorite online e-commerce store in the worldwith the cheapest prices anywhere. Its also the very best. For over 16 years they have had the distinction of being the most celebrated online natural supplement supplier. They ship efficiently to over 180 different countries, which is just one of the reasons we recommend them above all else to our Cura Romana participants worldwide. Dedicated to providing the best overall value possible, iHerb.com offer nutritional supplements, sports supplements, stevia, superfoods, protein products, natural cosmetics, shampoos, soaps, ecologically sound laundry detergents, and much more, including grocery products. From California, they ship all over the world faster than you can receive most goods from the country you live in. 99% of their orders go out the same day. They get preferential rates from DHL so even with shipping cost you are often better off ordering from them than buying goods in your own country, even if you have to pay import duty. In many countries you will not have to. The ingredients of every product are clearly shown, so you can check whether or not it is appropriate for either Essential Spray+ Food Plan or Consolidation. Aaron and I order virtually all of our nutritional products from iHerb. There is nothing like the range of good products they offer, or the customer care they provide. Many participants in the UK report having received their iHerb orders in three to four working days. As you may have guessed by now...we couldnt be more enthusiastic about them. IF YOU ORDER SOMETHING from iHerb.com, be sure to use Leslies personal code at checkout and they will give you $5 or $10 off your first order...The code is YES026 ...Get it sent to you via DHL and it will be with you as fast as humanly possible.

top oil for energy

Leslie Kenton

Now Foods, MCT Oil, 100 % Pure, 32 fl. oz Medium Chain Triglycerides (MCTs) are fats that are naturally found in coconut and palm kernel oil. MCTs are more easily and rapidly digested than other types of fats, as they require lower amounts of enzymes and bile acids for intestinal absorption. MCTs are metabolized very quickly in the liver and are reported to encourage an increase in energy expenditure, while decreasing fat storage. Numerous studies suggest that substituting MCT Oil for other fats in a healthy diet may therefore help to support healthy weight and body composition.

Starwest Botanicals, Turmeric Root Powder, Organic (Costs $18.32 at last count for a whole pound) Turmeric is a bright yellow aromatic powder taken from the rhizome of a plant that belongs to the ginger familyZingiberaceae. It grows naturally in tropical South Asia and thrives in temperatures between 20 and 30 degrees and it needs a lot of rain too. This spice has been used for over 5000 years in the East. It forms an integral part of the pharmacopeia in traditional Chinese medicinea tradition of herbal treatment which I believe to be the finest in the world. The Western world is, at last, beginning to wake up to the wonderful support this stuffoften referred to as curcumin has to offer for health. It is the curcumin which it contains thats responsible for Turmerics vibrant yellow color. Here are just a few of the benefits it brings when used often in your meals:

food state vitamins

Most vitamins sold in stores and online are synthetic man-made vitamins that have been produced in the laboratory in an attempt to match the molecular structure of naturally occurring vitamins normally found in our foods. Unfortunately, our bodies have been accustomed to absorbing with ease the vitamins and minerals that we get from our foods and these man-made synthetics, even though they try to match the molecular structures, are not the same our body does not handle them as well. So you may be taking a high potency vitamin that has come recommended and you may not actually be absorbing the vitamins and minerals it contains. This is one of the reasons why I am so passionate about whole-food, natural multi-vitamins and minerals. Good manufacturers of whole-food vitamins and minerals often grow the majority of the foods and botanicals that go into their formulas. Then, using state-of-the-art scientific instrumentation, they test, validate and document the potencies of all the raw materials that make up the formula. This is achieved by using high performance liquid chromatography to test vitamin potency and inductively coupled plasma optimal emission spectrometers to test mineral potency. They are also very careful in how they handle the food extracts that are often added to these supplements. For instance, they use a very specific system of drying which transfers heat gently and efficiently, removing moisture from delicate foods and botanicals while preventing oxidation of the raw materials. This protects the integrity of the food and the botanicals as well as protecting against the degradation of their nutrient content, maintaining the color and the flavor. Because the natural food state vitamins are indeed natural and foodstate, you will find that the recommended daily serving of vitamins

per person is usually somewhere between six and eight tablets a day in order to be able to obtain the full benefit. In addition to the usual vitamins, i.e. vitamin A, C, D3, E, K1, folate, and so forth, there should be a good broad spectrum of minerals: calcium, iodine, magnesium, selenium, chromium, molybdenum, manganese, etc. These wonderful food-state vitamins also often contain extracts taken from other plants that are beneficial to the body - things like extract of barley grass and green papaya, extract of carrot for instance, as well as astragalus and many of the Ayurvedic herbs or the herbs that are used in Chinese medicine reishi and shitake mushrooms, foti and kudzu root. This is the kind of vitamin that I think you will benefit most from. There are many vitamins on the market that claim to be whole-food vitamins but that are not of top quality.
