Orange Chicken Vegetable Stir-Fry

Ingredients
Sauce: 1/2 cup orange juice 2 tablespoons soy sauce 2 tablespoons rice vinegar 1 tablespoon oyster sauce 1 tablespoon orange zest 2 large cloves garlic 1 teaspoon minced ginger optional sweetener like sugar, honey, agave, etc. Stir- ry! 1 pound chicken tender cut into cubes salt and pepper " tablespoons corn starch # cups chopped vegetables such as broccoli, carrots, celery, mushroom, snap peas, etc. olive oil 1/2 cup medium yellow onion, chopped

Instructions
$lend all the ingredients or the sauce in a blender or ood processor or 1% seconds. &aste the sauce and add your choice o sweetener to your liking. $lend again or a ew more seconds. 'eat the sauce in a large skillet on medium-high heat or ( minutes. )are ully trans er the sauce to a heat proo bowl. *inse the skillet clean. Season the chicken with salt and pepper. +dd the corn starch and massage the chicken with your hands. , using resh broccoli or green beans, boil the broccoli or "-( minutes until so t enough to pierce with a ork yet irm. &rans er the vegetables to a plate lined with a paper towel. -ipe down the skillet until dry. 'eat appro.imately 1 tablespoon o oil in the skillet on medium-high heat. )ook the onion and chicken until the chicken is cooked through, appro.imately "-# minutes. +dd the remaining vegetables and stir- ry them together or 2 minutes. Slowly add a ew tablespoons o sauce while stirring the vegetables and chicken. )ontinue to add the sauce a ew tablespoons at a time, allowing about 1( seconds between each addition to allow sauce to slightly cook down. Spoon the stir- ry over a bowl o hot rice. Serve immediately.
