Aloo Kurkure

Poha coated potato and mint croquettes. This couldn't be easier.



Ingredients
1 cup potatoes, boiled and mashed
1/2 cup mint leaves
2 to 3 green chillies, finely chopped
1 teaspoon lemon uice
teaspoon roasted cumin seeds !eera" po#der
salt to taste
For the covering
3 tablespoons plain flour !maida"
1/3 cup poha !fla$ed rice"
Other ingredients
oil for deep frying
For serving
s#eet chutney

How To Proceed
1. %ombine the potatoes, mint , green chillies, lemon uice, cumin seed po#der and salt and
mi& #ell.
2. 'ivide the mi&ture into 2( equal portions. )hape into even si*ed rounds. +eep aside.
3. %ombine the flour #ith a little #ater to ma$e a thin paste. +eep aside.
,. -rind the poha to a coarse po#der in a blender. +eep aside.
.. 'ip each potato round in the flour paste and then roll in the po#dered poha and coat
evenly.
/. 'eep fry the potato rounds in hot oil till golden bro#n.
0. 'rain on absorbent paper.
