Moroccan Shakshuka Recipe

Ingredients:
Tomatoes 2 finely chopped or 3 tbsp Tomato Puree or a combination of both, each half the quantity.
Eggs 2
Garlic cloves finely chopped 2
Coconut or Olive Oil 2 tsp
Salt to taste or 1/4 tsp
Sugar 1/4 tsp
2 or 3 pinches each of powdered pepper: Black, Chilli, Paparika, Cumin, Coriander.
One small pinch of Cinnamon powder
Cilantro/Coriander for garnish.

Mince Garlic and fry in the oil till the flavour is released.
Add Cumin, fry till it turns brown.
Add spice powder and fry for 30 secs or till the flavour is released...
Add Tomato, salt sugar and 50 ml water. Cover and cook for 5 mins.
Break the eggs spacing evenly. Do not mess or mix. Cover and cook for 5 mins till done.

Serve each piece with some sauce. The remaining sauce can be served with flat bread.
