Vacuum Cooling
Technology is based on the phenomenon by which water starts to boil at lower
temperatures as it descends the pressure.
Pressure is reduced to a level where the water starts to boil 2 C. The brewing
process removes heat from the product. As a result, products can be cooled
completely to 1 or 2 C in a period of 20 - 30 minutes.
Even packaged products (micro-drilled) can be cooled easily this way!
