Pourgholam 3 1 MSc Fisheries Student, Fisheries Department, IAU, Qaemshahr Branch, Iran 2 Fisheries Department, Advanced Education Center, Islamic Azad University, Qaemshahr branch, PO Box: 163, Iran 3 Caspian Sea Ecology Research, IFRO, Sari, PO Box: 961, Iran Abstract The study was carried out to evaluate some quality aspects including chemical and microbial changes of brined golden mullet (Liza aurata), followed by vacuum packaging and storage at 4C for 90 days. Total Volatile Nitrogen (TVN), Peroxide Value (PV), Thiobarbituric Acid (TBA), Total Viable Count (TVC) and Halophilic Bacterial Count (HBC) increased during storage time. Increasing in TVN, PV and TBA were found to be statistically significant in the Vacuum Packed (VP) brined golden mullet throughout storage (P<0.05). No trace of Clostridium botulinum existence were detected. The study concluded that brining of Golden mullet can delay the Microbial changes, but doesnt have the same effect on Chemical changes especially lipid oxidation of the product during refrigerated storage. Based on data the best shelf life was found to be 30 days for VP brined golden mullet stored at 4C. keywords: Golden mullet; Vacuum packing; Shelf life; Quality aspects
