5- 6 medium sized carrot s/ gaj ar
2 small beet root s
8 cups wat er - approx 2 lit res of wat er ( boiled & filt ered or purified)
1 or 1.5 t sp red chili powder
3 t bsp must ard powder ( dry grind 2 or 2.5 t bsp must ard)
black salt as required
I nst ruct ions
1. rinse and t hen peel t he carrot s and beet root s.
2. chop int o long pieces.
3. mix all t he ingredient s in a glass or ceramic j ars.
4. cover wit h a lid or muslin clot h and keep t he j ars in t he sun for 3- 4 days.
5. st ir wit h a wooden spoon everyday before keeping t he j ars back in t he sun.
6. when t he kanj i t ast es sour, it means t he drink is ferment ed.
7. serve carrot kanj i st raight way or refrigerat e.

t o make t he vadas, follow t he recipe below.[ br] [ br] 1. soak cup urad dal/ black gram in wat er overnight .
[ br] 2. drain and grind t he urad dal wit h 1 green chili, t sp cumin, a pinch of asafoet ida, inch ginger and
salt wit h very less wat er t o a t hick bat t er.[ br] 3. heat oil for deep or shallow frying. spoon t he bat t er int o t he
hot oil.[ br] 4. fry t he vadas t ill t hey are golden brown.[ br] 5. drain on kit chen t issues.[ br] 6. soak t he vadas in
wat er for 20- 25 mins. [ br] 7. press t he vadas bet ween t he palms of your hands t o squeeze out t he wat er.[ br] 8.
soak t hese vadas in t he kanj i overnight in t he refrigerat or.[ br] 9. serve t he next day.
