HOT MILK SPONGE

2 cups milk
250g butter or margarine
6 eggs
2 cups sugar
4 cups flour
tsp salt
2 tbs baking powder

1. Preheat oven to 200C
2. Grease and line oven tray
3. Place milk in a saucepan with the butter
4. Stir until butter has melted and it reaches boiling point.
Keep aside
5. Whisk the eggs in a large bowl, adding sugar gradually.
Beat until mixture is thick and double in volume
6. Sift in the dry ingredients and fold in the hot liquid
7. Pour into prepared baking tray
8. Bake for 20-25 minutes or until springy to the touch
Turn out to cool
