Ingredients
2cupsallpurposeflour
cuphotwater,around120degreesfahrenheit
cupmincedgreenscallions(~4stalks)
1teaspoonvegetableoil
teaspoonsalt

Procedure
1. Placetheflourintoamediumsizedbowl.Slowlypourthewaterintothebowlwhile
stirringtheflour,dothisuntilallthewaterhasbeenpouredin.Thedoughwilllook
shaggybutholditsshapewhenpinched.Itwillalsobewarm.Kneadthismixture
intoaroundshape,continuekneadingforatleast5minutes.Thedoughshouldbe
smoothandsomewhatelasticwhendone.
2. Coverthedoughandletitrestforabout15minutes.
3. Duringthistime,washandchopthescallions.
4. Whenthedoughisdoneresting,takeitoutandplaceitonalightlyflouredsurface.
Splititintotwoseparateballsthatarethesamesize.
5. Takeoneoftheseballsandusingarollingpin,rollitout.Trytomakeitasthinand
circularaspossible,makesuretokeepthedoughflouredtheentiretime.
6. Whenthedoughisrolledout,brushhalfoftheoilontoit.Spreadtheoilevenlyall
thewaytotheedges.
7. Takehalfofthemincedscallionsandspreadthatevenlyontothedoughaswell.
8. Sprinklehalfofthesaltontothedoughtoo,makingsuretodosoevenly.
9. Startingfromthetopofthedough,rollitupintoacylinder.Takeoneendofthe
cylinderandwinditintoatightspiral(likeasnail).Pinchtheotherendtotheedge
ofthespiralsonothingfallsout.
10. Usingthepalmofyourhand,flattenthedoughspiralasmuchaspossible.
11. Thenusearollingpintorollitoutintoacircular,flatpancake.Becarefulnotto
makeholesinthedoughfortheoilorscallionstoleakout.Thedoughshouldnotbe
asthinasitwasthefirsttime.
12. Dothesametotheotherballofdough.
13. Whenfinishedmakingbothpancakes,takeanonstickpanthatislargeenoughto
holdoneofthepancakes.Turntheheatonmediumandputabouthalfatablespoon
ofoilintothepan.Spreadtheoilevenly.

14. Putthepancakeintothepanandcoveritwiththelid.Afteraround2-3minutes,flip
thepancakeanddothesameontheotherside.Keepdoingthisuntilbothsidesare
goldenbrown.
15. Takethispancakeoutandputitonaplate.Frytheotherpancakethesameway.
16. Cutbothpancakesinto6or8piecesandservewarm!
