PorkandCabbageSteamedBuns(

BaoZi)
Makes10Buns

Ingredients
1cupnapacabbage,minced
8ouncesgroundpork
cuponion,minced
2tablespoongreenonion,minced
2tablespoonsoysauce
2teaspoonsalt
1egg
pinchofsugar
2cupsallpurposeflour
cupswarmwater
1teaspoonyeast

Procedure
1. Startoffbypouringtheyeastintothewarmwaterandstiruntilitdissolves
completely.
2. Thenplacetheflourintoamediumsizedbowl.Slowlypourthewaterintothebowl
whilestirringtheflour,dothisuntilallthewaterhasbeenpouredin.Thedoughwill
lookshaggybutholditsshapewhenpinched.Kneadthismixtureintoaroundshape,
continuekneadingforatleast5minutes.Thedoughshouldbesmoothandsomewhat
elasticwhendone.
3. Coverthedoughandplaceitinawarm,draftfreeplacetorisefor2hours.Anoven
withthelightonworkswell.Thedoughshouldrisetodoubleitsoriginalsize.
4. Makethefillingforthebunswhilethedoughisrising.Mincethecabbage,onion,
andgreenonionandplacethemintoamixingbowl.Addthegroundpork,soy
sauce,salt,egg,sugar,andsesameoilintoo.Mixalltheseingredientswell,useyour
handsifneeded.
5. Whenthedoughisready,takeitoutandputitonalightlyflouredsurface.Rollit
intoalonglogwiththediameteraround2inches.Usingaknife,cuttheloginto
about10pieces,each2incheslong.
6. Rollthesepiecesslightlyinfloursotheydontsticktogether.Separatethesepiecesand
flatteneachonewiththepalmofyourhand,trytomaketheseascircularaspossible.
7. Usingarollingpin,rollouteachofthesealreadyflattenedpiecesuntiltheyare
around4inchesindiameter.Trytomakethecenterthickerthantheedges.

8. Put1tablespoonofthefillingintothedoughandpulltheedgesuparoundit.Pinch
theedgestogetheratthetopandtwistslightlywhiledoingsotomakesureitsticks.
9. Oilthebottomofeachbunsothattheydonotsticktothesteamer.Thenplacethe
bunsintothesteamer,makesuretoleaveatleastaninchbetweeneachbunsothey
donotsticktogethereither.
10. Putthesteamerwiththebunsinitbackintotheovenwithjustthelighton(orany
warm,draft-freeplace)sothattheycanriseagain.Dothisfor30-40minutes.
11. Whenthisisdone,startsteamingthebuns.Todothis,firstboilthewaterinthepan
atthebottom.Placethesteamerontopofthepanwhenthewaterstartsboiling,
keeptheheatonhighandletthebunssteamfor15-20minutes.
12. Makesurethatthewaterunderthesteamerdoesnotrunoutasthatwillburnthe
buns.Letthebunsstayinthesteamerforatleast5moreminutesaftertheyaredone.
Theywillbearoundtwiceaslargeasbefore.
13. Takethebunsoutandservethemwarm!
