Beat in the egg yoks, then stir in the almonds, semolina, and lemon zest and juice. Leave to stand for 10 minutes, then fold in the sultanas. 3 In a separate bowl, whisk the egg whites until stiff but not diy. Carefully fold into the cheese mixture. 4 Tum into the prepared tin and level the surface. Bake in a preheated oven at 190°C (375°F, Gas 5) for 30-35 minutes until browned and firm to the touch. Turn off the oven and leave the cheesecake inside to cool for about 1 hour. Chill before serving, 5. Use a knife to loosen the side of the cheesecake from the tin, then remove the cheesecake. Slide on to a serving plate, and dust with sifted icing sugar.
