Okra is a good source of vitamins, minerals, and protein, and has antidiabetic properties. Spice up this
green with a bit of cayenne pepper and make it tempura-style instead of deep-fried for a healthier
version of this tasty dish. Pair these crunchy treats with a sweet tea for a perfect Southern-inspired,
summer dish.

Ingredients
1 lb fresh okra, split
1 cup flour

1/2 cup cornstarch


2 cups cold seltzer water
1 tsp cayenne pepper
1 tsp onion powder
2 tsp granulated sugar
2 tbsp flour
1/2 gallon canola oil

Directions
1. Heat oil to 375 degrees.

2. Mix 1 cup flour and corn starch together.

3. Gradually add cold seltzer, whisking continuously until you get a pancake batter-like consistency.

4. Mix spices and additional flour together and coat split okra in mix.

5. Add spiced okra to tempura batter and slowly place okra into hot oil. Let fry for 2-3 minutes then
remove and drained.

6. Serve with Spicy Honey Scallion Dipping Sauce and get the crunchin!
