Mediterranean Chicken

Menu Description: An 8 oz chicken breast topped with sauted artichoke hearts, red
onion, roasted peppers and roasted yellow tomatoes in our tangy white balsamic and topped
with parmesan cheese and panko bread crumbs. Served with our wild rice blend.
Ingredients:
1 5 oz portion, wild rice blend
1 chicken breast
7 pieces artichoke hearts
cup roasted red/yellow peppers
1 oz roasted yellow tomatoes
2 slices red onion, chopped
2 oz white balsamic vinaigrette
1 tsp parmesan cheese
1 tsp panko bread crumbs
1 slice Texas Toast
Butter
Garlic salt

Procedure:
Place chicken breast on flat top.
Heat all vegetables and vinaigrette in a small frying pan, until dressing is simmering.
Once chicken is fully cooked, place on plate and top with hot dressing/vegetable mixture.
Sprinkle parmesan and bread crumbs over chicken and vegetables, then place in
salamander until golden brown and slightly crispy.
Butter both sides of Texas Toast and sprinkle garlic salt on one side. Place on flat top and
cook until golden brown on both sides.
Heat rice for 1 minute in microwave, or until hot.
Place rice on opposite side of plate.
Slice Texas Toast diagonally and place halves on either side of rice.
