I hope you can use the following formula to size your valve for liquids.
Cv = K * Q * sqrt(SG/Dp)
K = 1.167
Q = Flow in m3/hr
SG - specific gravity of the liquid
Dp = required pressure drop in kg/cm2
Using the above formula just size your valve then the noise level and others like cavitation effect can be discussed with the your valve vendor.
