BHORTAS
Eggplant Bhorta:
Ingredients :
1. Large eggplant- 2
2. Large onion- 2 finely chopped
3. Large tomato- 1 finely chopped
4. Green chillies- 2 finely chopped
5. Coriander leaves- 2tbsp chopped
6. Oil- 4 tbsp
7. Salt to taste
Method:
First rinse the eggplant in water.
Brush eggplant with oil and roast it on a gas burner over medium
heat.
Keep turning and cook it till all the skin on the eggplant becomes
black and the inner flesh looks really soft.
Once the eggplant is roasted, allow to cool fully and then peel off
the black skin.
Aloo Bhorta :
Ingredients:
1. 2-3 medium size potato
2. 2 tablespoons mustard oil
3. 4-5 cloves garlic
4. 2-3 red chili
5. 1/4 onion, thinly sliced
6. Salt to taste
METHOD:
1. Roast garlic and chili on stove top or in the oven.
2. Boil potato until soft.
3. Peel boiled potato and smoothly mash.
4. Mash/paste garlic, chili and salt together. Add onion.
5. Add mashed potato.
6. Add oil and mix well.
