BHORTAS

Bhortas, the ultimate comfort food of Bangladesh is a must with


panta bhaat. Bhortas are delicious, smooth, fiery and flavorful
mashed goodies made with variety of vegetables, dried fish mixed
with mustard oil, onion, garlic and red chili. Aloo (potato) bhorta
and eggplant bhorta is a must to accompany Nobo Borsho meal.

Eggplant Bhorta:
Ingredients :
1. Large eggplant- 2
2. Large onion- 2 finely chopped
3. Large tomato- 1 finely chopped
4. Green chillies- 2 finely chopped
5. Coriander leaves- 2tbsp chopped
6. Oil- 4 tbsp
7. Salt to taste

Method:
First rinse the eggplant in water.
Brush eggplant with oil and roast it on a gas burner over medium
heat.
Keep turning and cook it till all the skin on the eggplant becomes
black and the inner flesh looks really soft.
Once the eggplant is roasted, allow to cool fully and then peel off
the black skin.

Mash eggplant roughly in a mixing bowl.


Add oil, onion, tomato, green chillies, coriander leaves and salt to
taste. Mix well.

Aloo Bhorta :
Ingredients:
1. 2-3 medium size potato
2. 2 tablespoons mustard oil
3. 4-5 cloves garlic
4. 2-3 red chili
5. 1/4 onion, thinly sliced
6. Salt to taste

METHOD:
1. Roast garlic and chili on stove top or in the oven.
2. Boil potato until soft.
3. Peel boiled potato and smoothly mash.
4. Mash/paste garlic, chili and salt together. Add onion.
5. Add mashed potato.
6. Add oil and mix well.
