COURSE REFLECTION STATEMENT

NUTR 405
Fall 2015
Kylee Scholar, MS RD CLE
The purpose of this class was to provide analytical skills for food science. This course
covered two main areas: Food and Nutrient Analysis and Food Product Development.
In the first part of the class we covered several of the machines used to test and analyze
food product attributes.
I enjoyed this class and the class project was especially interesting and eye-opening. My
group and I started our own fictitious food truck business and were responsible for creating a
menu, analyzing the nutrient contents of our menu items, following all laws and regulations,
creating a HACCP plan, and creating standardized recipes. I feel that the class project was a great
way to implement what we had been learning throughout the class and I was very happy with our
results. I would like to open my own business at some point in the future, so I especially
appreciated the opportunity to create a food truck.
