3tablespoonsofoliveoil
1largeOnion
1sprigthyme
2poundsofspinach
Salt
6fetacheese
8poundsofdough
2lightlybeateneggs

Directions
1. Preheatovento350degreesF(175degreesC).Lightlyoila9x9inchsquarebakingpan.
2. Heat3tablespoonsoliveoilinalargeskilletovermediumheat.Sauteonion,greenonionsandgarlic,untilsoftandlightlybrowned.Stir
inspinachandparsley,andcontinuetosauteuntilspinachislimp,about2minutes.Removefromheatandsetasidetocool.
3. Inamediumbowl,mixtogethereggs,ricotta,andfeta.Stirinspinachmixture.Lay1sheetofphyllodoughinpreparedbakingpan,and
brushlightlywitholiveoil.Layanothersheetofphyllodoughontop,brushwitholiveoil,andrepeatprocesswithtwomoresheetsof
phyllo.Thesheetswilloverlapthepan.Spreadspinachandcheesemixtureintopanandfoldoverhangingdoughoverfilling.Brushwith
oil,thenlayerremaining4sheetsofphyllodough,brushingeachwithoil.Tuckoverhangingdoughintopantosealfilling.
4. Bakeinpreheatedovenfor30to40minutes,untilgoldenbrown.Cutintosquaresandservewhilehot
