They helped to make up balanced diets because their rich protein content could be used as a substitute for meat, Today. soya bean production has spread to other countries and its popularity as a food item has also increased. In Malaysia, soya beans are processed in various ways to provide consumers a variety of nutritious food with different textures and taste like soya bean milk, soya bean curd, soya bean cake, bean sprouts, soya Sauce or salted soya beans. Soya beans also contain other nutrients besides protein, namely cil, carbohydrates, vitamins and minerals. Soya bean products are a fairly good source of Vitamin B complex. In fact, soya bean milk has the same protein content as cow's milk. The importance of soya beans products for consumers is more apparent when we compare its cost with that of other foodstuffs, It has been found that the cost of protein per Kilogram for soya bean is very much lower than that of meat or fish. Soya beans, therefore, are a good protein substitute especially for the lower income group. Itis fairly easy to prepare soya bean milk, First, the beans have to be soaked in water for about five to six hours. Then they have to be ground with water to form a white liquid. The liquid is strained to separate the crushed soya beans from the milk. ‘Then, the soya bean milk is boiled for about five minutes. Pandan leaves can be added to give it an aroma.
