Creme Brulee

(6 servings)

Ingredients

6 egg yolk

600ml fresh cream (not thickened cream)

5 tablespoons of sugar (for sweeter, add 1 more tablespoon)

1. Whisk egg yolks and sugar together till sugar is dissolved. Heat up cream in a pot till
warm and pour cream into egg yolk mixture and stir well.
2. Pre-heat oven to 120°C. Pour the mixture into 6 ramekins. Pour water into oven tray
and then put ramekins into tray. Bake for 30 minutes.
3. Take tray out, remove water and put ramekins back to tray. Scatter sugar on the
crème. Turn on grill in high heat. Put the tray into oven and wait and watch till sugar
is caramelised. Take out and let it cool down.

Chocolate Fondant
(6 servings)

Ingredients

200g button chocolate

200g butter

4 egg whole + 4 egg yolk

100g sugar

150g flour

Coco powder

1. Whisk eggs, yolk and sugar together till foamy.


2. Mix melted chocolate and egg mix (from step 1). Fold until glossy and pour in sifted
flour.
3. Butter mould and sprinkle coco powder (butter will stick powder to mould). Cut
square baking paper and place at bottom of mould (this helps to remove the fondant
from mould after cooked)
4. Pre-heat oven to 180°C and bake for 8 minutes.
