CHAI KUIH (using Magimix)

Ingredients:

Pastry:
200 gm tang meen flour
100 gm tapioca flour
1 pinch of salt
3 tbsp cooking oil
Boiling water (for cooking the flour)

Filling:
Sengkuang (turnip) – cut into fine strips ) cook together with some
Dried Prawns ) dark soy sauce, salt and some
Red carrots – cut into fine strips ) meat strips, if desired.
Black Chinese mushrooms – cut into fine strips )

Method: for preparing the Pastry Dough only

1) Put the tang meen flour, tapioca flour, salt into the Magimix bowl with the Dough
Blade; add the 3 tbsp cooking oil.
2) Start the Magimix machine and add some boiling water through the cover tube
very slowly, watching the dough clinging into a lump and turning colour slightly due
to the cooking of the flour. (Do not add boiling water into ordinary food processor,
which may not be able to take the heat).
3) Stop the machine, take the dough out and feel the texture. Be careful, the dough
will still be very hot. Divide the dough into 4 portions, and put them back into the
Magimix bowl. Add little bit of water (room temperature) over each portion of the
dough. Then start the machine to mix again.
4) Feel the texture of the dough again, if it is not soft enough, divide the dough into
4 portions again, add a little water over it and start the machine to mix well again.
5) Repeat procedure (4) above until the dough is soft enough. You have to judge the
softness by feeling the dough.
6) Rest the dough for about 15 minutes for easy handling.
7) Divide the dough into few pieces (the number depending on the size of the Chai
Kuih that you like).
8) Roll the pastry dough into a ball, then flatten. You can use your hand to flatten it
or you can put it between two plastic sheets and flatten with your palm.
9) Put some cooked and cooled filling over the flatten pastry dough and start folding
pleats at the edge in one direction and then seal the edge together.
10) Arrange the Chai Kuih on a greased tray and steam for about 5 to 7 minutes.
When ready, brush slightly with cooked oil and serve warm.
