Prawn Salad with Croutons

Ingredients Method

1. Place peeled prawns in a medium bowl with 2 teaspoons of lemon zest and
4 tiger prawns, peeled and deveined

4. Place rocket leaves and remaining lemon zest into a bowl and drizzle with
extra olive oil and season with salt and pepper toss gently to combine.

5. To serve, place tomatoes, bread and rocket in the centre of a plate. Arrange
prawns on top.
