Green Jade Delight

Broccoli 250g
Green beans 225g
Mange tout 200g
Onion sliced 1
Garlic minced 1 clove
Cornflour 1 tsp
Soy sauce 2 tbsp
Water/veg or chicken stock 125 ml
Salt To taste
Sherry 2 tbsp
Method

1. Clean and peel broccoli. Cut stems on a 1/8-inch slant.


2. top and tale the green beans
3. wash the mange tout
4. Mix cornstarch, soy sauce and chicken stock or water. Set aside.
5. Heat a wok or cast iron pan until it is very hot and dry.
6. Add oil, then salt. Turn heat to medium and the sliced onions, When golden
brown add garlic. Toss until lightly cooked.
7. tip out and leave in a warm place.
8. Turn heat up and add broccoli, beans and mange tout. Stir fry for 3 minutes.
9. Add sherry and cover the pan quickly.
10. Add cornflour mixture and stir until thickened.
11. Return the onions and garlic to the pan and heat through.
