Brown Soda Bread

You need:
Dry Ingredients
4 cups brown flour / good bread flour the best(sometimes I mix white and
brown if I’ve run low on brown flour)
1 Tbl spn of bi carb soda
3-4 t spns of baking powder even if you use self raising flour
Wet Ingredients
2 large eggs
2 cups of Laban (original recipe says buttermilk, but I used same from
Organic café and was not as nice as when using Laban)
Tin: I use a meatloaf size tin which is 15 x 25 cm or if I double the
recipe 21x20
 Mix dry ingredients together
 Mix wet ingredients separately in blender
 Then pour wet ingredients into dry and mix with wooden spoon
until nicely mixed, ensuring neither to dry or too wet
If you find its too dry just splash some Laban into it until it’s a nice
wet consistency
 Place in a baking tin, ensuring its lined with foil and then grease
with butter or marg. I have tried using light spray oil but the bread
tends to stick to foil. Make a little well in centre as it rises more in
centre
 I Bake in moderate oven (though the oven I have gets hot very
quickly, so I tend not to preheat) Bake for +/- 45 mins
 Let cool and ensure not to wrap whilst warm as it tends to sweat.

I keep in fridge and then cut up slices and freeze.
