CHICKEN & SHRIMP SAUCE

RECIPE
Ingredients

Chicken breast – cut in strips and seasoned Green pepper


Fresh shrimps seasoned Cashew nuts
(optional)
Tomatoes cubed Vegetable Oil/ Soya oil
Onions cubed Corn flour
Spring onions sliced
Peas Carrots cubed
Ground hot pepper Salt
Seasoning – maggi, thyme, curry, etc.

Method

1. Heat oil in a thick pan/pot/skillet


2. Pour in the chicken breast and stir. Allow to brown. Keep
stirring until it is brown do not allow to burn.
3. Add shrimps to the browned chicken and stir. Keep
stirring until shrimps are totally pink in colour.
4. Add onions and stir until onions are sautéed i.e. translucent
in colour.
5. Add tomatoes, carrots, peas, spring onions, ground pepper
and stir, allow to cook for about 10 min. Do not cover the
pot.
6. Taste for salt and add a little water, allow to boil for 5 min.
7. Mix corn flour with cold water into a running consistency
and pour into the sauce while stirring thoroughly to avoid
lumps. The sauce would thicken.
8. Add the nuts at this stage and leave to boil for 3 min.
9. Bring down the sauce and garnish with green pepper.
10. Serve with Rice, Beans, Yam, Potatoes etc.
MACKEREL SAUCE

RECIPE
Ingredients

Iced Fish – Mackerel


Tomatoes
Tatashe
Onions
Fresh Ginger
Fresh Garlic
Green pepper (optional)
Seasoning
Salt
Vegetable oil

Method

1. Boil the fish remove bones and flake


2. Grind tomatoes, tatashe, onions, ginger and garlic.
3. Heat the oil and fry the ground ingredients to your taste.
4. When fried add seasoning and a little water bring to the
boil.
5. Add the flaked fish stir and taste for salt. Allow to boil for
5 min.
6. Bring down the sauce and garnish with green pepper.
7. Serve hot with Rice, Yam, Beans, Potatoes etc.
FRUITS BAHAMAS

Ingredients

Watermelon – cubed
Pawpaw – cubed
Mango - cubed
Coconut peeled & grated

Method

1. Wash the melon, pawpaw and mango.


2. Cut in cubes
3. Remove the coconut flesh from the coconut and grate.
4. Sprinkle into the fruits and toss.
5. Serve chilled.
