Assam Curry Fish

Ingredients:
4 – 5 pieces Mackeral Fish seasoned with white pepper
1 chopped onions
1-2 tbsp red curry paste

A:
½ cup chopped Celery Leaves
2 chillies
2 cloves
1 star anise
1 tbsp Kashimiri curry powder

B:
3 tomatoes
1 potato (cubed)
1 carrot (cubed)
4-5 cloves garlic
1 tbsp curry leaves
½ cup pineapples (cubed)

Method:
1. Heat cooking oil and cook onions until soft, add red curry paste and mix
well. Add some water to ensure the mixture is not running dry.
2. Add ingredient A. Cook for 3 minutes till fragrant.
3. Add ingredient B and water. Simmer till tomatoes and potatoes are soft to
liking. Make sure the mix is not too watery/too dry.
4. Add fish and simmer till fish is cooked.
