Spicy Tunisian Chicken

INGREDIENTS For Spice Mixture: 1 tbsp each, cumin, coriander and caraway seed, ground; sweet paprika and red pepper flakes For The Chicken And Onions: 1 cup olive oil 1/2 cup fresh lemon juice, 4 boneless, skinless chicken breasts, (pounded) 2 large red onions, (peeled and cut into thick slices) 2 cups cooked couscous 1/2 cup each chopped dried apricots, currants and spring onions, 1/4 cup fresh Italian parsley, (chopped)

METHOD
Combine all the spice mixture ingredients together in a bowl. In another bowl whisk the olive oil and lemon juice. Place the chicken on a baking tray and drizzle each breast with 1tbsp of the olive oil mixture, then sprinkle with 1tbsp of the spice mixture. Set aside. Drizzle the red onions with the olive oil mixture (reserve 3 tbsp). Mix the cooked couscous with the chopped apricots, currants, spring onions and parsley and drizzle with the remaining olive oil mixture. Grill the chicken and red onions for 3 minutes on both sides. Remove from grill and serve with the couscous
