A famous Iraqi Kurdish dish Every nation and country has its own and traditional food.

Iraqi Kurdistan is also like any of the nations of the world has its own traditional dishes which one does not make any changes to, make it western or, a smaller portions. Some of the famous Iraqi Kurdish food are Dolma (vine leave with rice), Tishreeb, Bryany, Shfta, Kubba, Tapsi and many more others. And different kinds of vegetarian and meaty options are served with the main dishes as a soup such as okra (lady finger), black kidney bean, aubergines, potatoes, spinach, broad beans and jelly bean. In this essay I will introduce the reader one of the traditional Kurdish food with its ingredients and how one can make it.

If one wants to serve a food in a good manner, he/she must have all the necessary ingredients in order to give a delicious flavour. This food that I am going to make it here is Bryany. Bryani is a Kurdish food but at the same time can be seen in the traditional food of the other countries like India and Arabic countries in general. Bryany is cooked in a traditional Kurdish style which needs rice with some other ingredients such as sliced chicken breast, raisins, different kinds of nuts, oil, salt, turmeric power and water. We need a big pan and first we have to fry the oil, next put the water in the oil with some salt and the turmeric powder and leave them for 7-10 minutes. After the water is boiled, we have to put the rice into the water but the rice should be one cup for two cups of water. We have to mix the rice up with the water well and leave it on a slow fire for 10 minuets. It needs 3-4 times stirrings with a big spoon and not allowing any air comes and goes into the pan. The rice is now ready but what is left to add for the rice is frying the chicken breast and then mixed up with raisings, Brazil nut, Almond, Hazelnut, wall nut and pecan nut and sometimes with

some small sliced potatoes. These are to be fried for 3- 5 minutes and then put them on the rice. Finally, the food, Bryany, is ready to be served with a kind of Mediterranean salad and some drinks. Sometimes, it is worth to have a starter before serving the Bryany with one of the traditional soups with it. Ii is really a delicious dish as one of our traditional food and hope you all try it once!
