Sweet Potato Pastry Tart 2 large sweet potatoes Borgs short crust pastry 1 red Spanish onion finely

chopped 200 ml cream 2 eggs Basil Salt/pepper 1 tsp minced garlic Grated cheese Peel sweet potatoes and slice. Place into bowl. Add the cream and two eggs. Mix well. Add chopped onion, garlic, salt and pepper and basil and mix. Place pastry sheet on pie dish. Press down gently leaving corners hanging over the side. Put mixture into dish and fold over edges. Sprinkle cheese on top and bake for 20 minutes
