RECIPE FOR HOME COOKED PILAU By Chao Mbogho Serves 3-4 1 Cups Rice 2 Tomatoes 50g Tomato Paste

te 1 medium onion - kgs meat depending on how much meat you want. 1tablespoon Cumin seeds 20g Pilau Masala Cooking oil. Salt. A bunch of Coriander/Dhania Boil your meat prior if it is not tender enough to fry directly. Have hot boiling water ready. 1. 2. 3. 4. Cut onion into rings and chop tomato into very small pieces. Put enough oil into cooking pot and put in onions. Fry the onions until almost tender. Pour in cumin seeds and fry with onions until cumin seeds are nearly golden brown. Add the boiled (or very tender unboiled) meat onto the onions and stir together add very little water (1/4 of a cup) cover and let it simmer for 3 minutes. Add enough salt to your taste remembering that you shall put water so add 1tsp more to your normal salt use. Add tomatoes, coriander and tomato paste and stirAdd a little more water if need be so it doesnt stick to the pan. Cover pan for a few minutes until the tomatoes are tender and stir properly. Add the pilau masala and stir. Meanwhile wash rice. If themixture in the pan has no water at all, add 3 cups of the hot boiling water to the mixture. Taste for salt and add accordingly. If the mixture has a little water, put in 2 cups of the water. Pour in the rice. Reduce heat so that the rice does not stick to the bottom. Do not cover the pan and let the mixture boil slowly until you start seeing rice visible at the top. Cover the Pan and reduce the heat completely (Like to level 1 if using gas) and let the rice get tender in this low heat for about 5-8 mins. Turn off heat, do not open pot yet and let the heat inside make the rice not stick together. Prepare your favourite salad and serve with Pilau while hot.
