Theory: 1.Starch: it is a tasteless carbohydrate chemical ,which is a polymer of glucose. All the cerals such as wheat, rice,maize,barley,oat etc. are rich in starch. However The starch present in our food cannot be absorbed by our body as such because it is complex compound ,sparingly soluble in water . During the digestion it is broken down into a simple sugar ,glucose,which is soluble in water and is adsorbed in the blood streams.

1.Sugar Sugar are two kinds : Simple sugar and Comples sugar Simple Sugar such as Glucose and Fructose. Whereas the complex sugar such as Sucrose.

a)Glucose: it is the simple sugar with Chemical Formula C6 H12 O6. It is


oxidized during the respiration to provide enegy to the body for performing various metabolic activites. b) Sucrose: It is complex sugar having Chemical formula C H O.

A molecule of sucrose is made up of one glucose and one fructose .Common Sugar (or commonly known as the cane sugar)is actually sucrose. In our Country ,Sucrose is obtained from the sugarcane, while In temperature regions,sugar beat serves as its source.

Procedure: a) To test the presence of Starch: Take a small piece of the potato oe wheat flour or rice flour in the test tube and add a drop of dilute iodine solution .the colour of solution changes from the blue to black,which indicating that starch is persent.

b)

To test the presence of Sugar:

Take a small piece of potato or lemon or apple in the test tubes and crush them gently.Add few drops of benedict solution in each of the test tubes and gently heat them.Formation of the Red ppt confirms the presence of sugar.

Application:
a)These Methods are helpful in many industries where the pure material is required. b) These Methods are helpful to check the value of sugar in our food items. c)These Methods are useful in making the sugar free items.
