Mexican Chili Pizza Ingredients for Pizza Dough Flour 8 ounces Instant yeast 1 tsp heaped Salt tsp

sp Sugar 1 tsp Powder milk 2 tbsp Salt tsp Oil 2 tbsp Egg 1 Ingredients for Filling Roasted mince 1 cup Chopped onion 3 tbsp Sweet corn cups Capsicum chopped 1 Tomato 1 chopped remove seeds Crushed red pepper 1 tsp Grated cheddar cheese cup Grated mozzarella cheese cup Oregano leaves 1 tsp Olives sliced 2 tbsp Mushroom sliced 2 tbsp Pizza sauce 3 tbsp Ingredients for Pizza Sauce Tomato blended 4 Tomato paste cup Oregano leaves tsp Crushed red pepper 1 tsp Salt tsp Orange red color pinch Oil 2 tbsp Crushed garlic 1 tsp Method for Pizza In a bowl mix together 8 ounce flour, 1 tsp yeast, 1 tsp sugar, 2 tbsp oil, tsp salt, 2 tbsp powder milk and 1 egg, knead into a soft dough with Luke warm water, and leave it in a warm place to rise for hour, put dough in a greased dough cover and leave it to rise for 1 hour, pre heat your oven to 200 degree C, spread pizza dough on 10 inch pizza plate, brush with pizza sauce, sprinkle 2 tbsp cheddar cheese, top with 1 cup mince, 3 tbsp chopped onion, 1 tomato, 1 capsicum, cup mozzarella cheese, 1 tsp crushed red pepper, 1 tsp oregano, and lastly grated cup cheddar cheese. Cover and leave it to rise for 30 minutes then bake for 25 minutes until golden.

Method for Pizza Sauce Blend 4 tomatoes, heat 2 tbsp oil fry 1 tsp crushed garlic till light golden, add in cup tomato paste, cook till boiling add 1 tsp crushed red pepper, tsp salt and pinch of color, cook tills sauce thickens cool and use as required.

Cut chicken breast into fingers 2. Marinate fingers with salt, pepper, garlic and vinegar for 30 minutes . 3. Dip in milk roll in cornflakes to coat them well 4. Grease baking tray place fingers and bake for 25 minutes on 200 degrees

3RD DHANIA CHICKEN recipe by Shireen Anwer (photo from old group of MM) Ingredients: Chicken 1 kg made into karhai pieces. Ginger garlic paste 1 tbsp Allspice tsp Tomato paste 4 tbsp Coriander powder 1 tbsp, heaped Chilly powder 1 tsp Salt 1 tsp Ketchup 2 tbsp Coriander leaves cup, Chopped Green chilies 2, chopped Olive oil 2 tbsp Method: 1. In a pan, add oil, add tomato paste & all the ingredients, except, coriander leaves.

2. Add chicken & cook for 5 minutes. 3. Add 1 cup water, cover pan & cook for 15 minutes, till chicken tender. 4. Serve hot sprinkled with chopped coriander leaves cup & green chilies. 4TH
VEGETABLE LASAGNA recipe by Shireen Anwer (photo from old group of MM) Ingredients: Lasagna sheets 7 strips, (boiled) Carrots 2 cut in (cubes) Potato 2 cut in (cubes) Onion 1 cup, (chopped) Tomato 1 cup, (chopped) Brinjal 2 chopped in cube & shallow fried French beans 1 cup, chopped Peas 1 cup Capsicum 1 sliced Garlic paste 1 tsp Oregano 1 tsp Ketchup 4 tbsp Turmeric powder tsp Chilly powder 1 tsp Salt 1 tsp Oil 4 tbsp For baghar: White cumin seed 1 tsp Mustard seeds 1 tsp Whole red chili 6 Curry leaves 1 stalk Cheese sauce: Flour 3 tbsp Milk 1-1/2 cup Grated cheese 3 tbsp Mustard powder tsp Black pepper powder tsp Salt tsp Butter 2 tbsp Water 1 cup Method:

1. In pan heat oil, add baghar masala. 2. Now add the chopped onion and fry for 2 minutes. 3. Add all seasonings along with tomatoes, fry well. 4. Then add all vegetables except brinjal, cover the pan with a lid & cook until the vegetables are tendered &the mixture dries. 5. Add fried the brinjal & keep the mixture aside. 6. To assemble in a dish, spread lasagna sheets, vegetables, capsicum, ketchup, oregano, cheese sauce, and cover with sheets, then repeat the same procedure and top it with grated cheese ketchup, and 1 tbsp butter. 7. Bake at 180C for 20 minutes. 8. Serve hot.
