arebrightgreen,butcanalsotakeonareddishcolor.Theflowersare
small,producedinnonshowyspikes,floweringfrommidsummerto
fall.Batishastheabilitytoliveinsaltyenvironmentsandtohelpit
surviveinthissaltyhabitat,itsfleshyleavesarecoveredwithvery
finehairsthatreducetheamountofwatertheplantlosestotheair.B.
maritimawasusedbyNativeAmericansasafood,therootswere
chewed(likesugarcane)orboiledintoabeveragewhilethestemsand
leaveswereeatenraw,cookedorpickled.B.argillicolaisalsoeaten
asagreenvegetable.Saltworthasunexpectedlyturnedouttobea
nutritiousfoodsource.Ananalysisofitspeppercornsizedseedshas
revealedthattheyareextremelynutritious,havinghighquantitiesof
proteins,oilsandstarches.Theseedsareextremelyedible,havinga
nuttytaste,andtheycanbeaddedtosalads,toastedorevenmade
intominiaturepopcorn.Theoilisalmostidenticaltosaffloweroil,
whichisusedforcookingandinsaladdressings,aswellasfor
makingmargarine.Theseedsalsocontainbeneficialantioxidants
suchastocopherols,whicharethoughttofightcancer.
