Life Made Full!


Im Shanti a homeschooling mom and wife to Chris by day, blogger by
night. I have five children (four of them adopted through foster care), live on
a farm, and have a unique outlook on life. You see, my dad was born and
raised in India. His side of the family is Muslim. When I was nine years old,
he converted to Mormonism and he and my family were all baptized into the
church. When I was in high school, though, I made a decision to pursue
evangelical Christianity and have been walking with Jesus ever since. My
extended family has quite the array of religions Christianity, Mormonism,
Islam and Wicca. Amazingly, we all get along very well and even though
our relationships have had their ups and downs, we all respect each other
and love each other deeply.
Ive had my challenges just like you have. Ive been through deep valleys,
desperately grasping for God. Ive had momentous triumphs, when I felt
Gods presence so distinctly, I could have sworn he was physically standing
next to me. This book came to fruition after Chris was diagnosed with celiac
disease in 2010. Our journey to getting him healthy was a long, difficult
road. Ultimately, our goal is to help other people enrich their lives, feel better
and grow closer to God all at the same time.
30 Days to a Life Made Full is a guidebook. It is meant as a tool to help you
in every aspect of your life. By the end of these 30 days, I pray you are
encouraged, inspired and motivated to continue in your growth physically,
spiritually and emotionally. Youll be surprised at how much you can do in
just 30 days!

FEW NOTES ON RECIPES:

Recipes serve two adults, five children (unless otherwise noted). A few of
these recipes have the option to include cheese. If you are completely
dairy-free, feel free to leave the cheese out!

WEEK 1: GRATITUDE DAY 1

DEVOTIONAL
This week, were talking about gratitude. In any given
moment, we can choose to live our lives with a heart of
thankfulness, or a heart of complaint. Lets not be fooled
into thinking we dont have a choice we can decide
each morning how we are going to approach our day.
Living with a grateful heart or cultivating a spirit of
thankfulness is not just a good idea, its a direct command
from God (see todays verse, right).
I grew up in a very dysfunctional home, where my father
was schizophrenic and my mom was in survival mode most
of my childhood, trying to support our family while my dad
stayed home. There was dreadful abuse in our home, and
I saw things as a little girl that no child should see. There
were nights when I would lay in my bed, with a small fan
blowing into my ear so I wouldnt hear what was going on
around me. I dreamed of growing up one day, escaping
the hell hole I lived in.

Of course, I did grow up. At some point, I realized that I could live with a spirit of criticism, or a spirit
of joy. I chose joy. I recognized that my childhood wasnt a curse, it was a blessing. Suffering made
me who I am today: a more compassionate, empathetic, sensitive woman. Im thankful for that. If I
would have had the perfect childhood I longed for, I would not be that woman. Now, I make a
choice to be thankful each day.
My question for you is: What burden have you been hanging onto that you can now say
thank you for?

DINNER

Stuffed Poblano
Pepper Boats

4 Poblano peppers, stem and core removed and sliced in half lengthwise
1 lb ground beef or other ground meat
1 sweet potato, cooked, skinned and mashed
2 tbsp olive oil
1 small onion, diced
1 tbsp garlic salt
1 tbsp chili powder
34 green onions, diced

INSTRUCTIONS

Heat oil in a large skillet, and preheat broiler in oven.


Line a baking sheet with foil and place peppers skin side-up on the sheet.
Lightly baste with olive oil and broil in oven for about 6 minutes. Flip over and cook another
56 minutes, until nicely browned.
While the peppers are cooking, add onion to heated skillet and cook until tender.
Add meat and spices and cook for a few minutes until beginning to brown.
Add cooked sweet potato, continue to stir and heat through.
Remove from heat and add in green onions.
Place each pepper, skin side-down, into a baking dish. Fill each half with the meat mixture,
cover the dish with aluminum foil and bake in a 350 degree oven for about 20 minutes.
Note: For some added flavor, sprinkle with cheese, cilantro, or any other yummy topping!

WEEK 1: GRATITUDE DAY 2

DEVOTIONAL
A lot of us get sucked into the drama of our day,
complaining about the problems that lie before us.
We see our kids struggling in school and think, Theyre
never going to figure this out! We see our own failings
and we think, Im never going to change! I just keep
making the same mistakes!
What we dont do, is look to the future. We just keep
looking at today. That, friends, is our biggest
mistake. Dont look at what your kids, your husband,
your mother, your brother, your friend, or even you are
like right now. Look at what you can become.
Einstein was labeled retarded, was a poor student,
and unable to speak fluently at age nine. Can you
imagine the discouragement his mother must have felt?
If only she were here today to see the effects her son
had on the human race.
Today, when you are on the edge of discouragement,
be thankful that today isnt it. Think about the future, and
dream of what can come. Dont let the worries of today
determine the joy of your future.

DINNER

Garlic Butter
Chicken with
Caramelized Onions

4 boneless, skinless chicken breasts, flattened a bit with a meat tenderizer
cup butter (preferably grass-fed, pastured) or ghee
4 cloves garlic
1 tbsp lard or olive oil
1 onion, sliced thin
salt/pepper
Optional: 1 tbsp honey

INSTRUCTIONS

Preheat oven to 375 degrees.


Lay chicken breasts in a 913 pan and sprinkle with salt and pepper.
In a small saucepan, melt butter on low, then add garlic and let cook until garlic is tender
(about 78 minutes).
While thats cooking, heat the oil or lard in a skillet over medium-high heat.
Add in sliced onions and cook until caramelized (about 810 minutes),
then stir in the 1 tbsp honey, if desired.
Pour butter and garlic over the chicken.
Then top with caramelized onions.
Cover gently with foil and bake for about 2025 minutes.
Remove foil the last 5 minutes, switch oven to broil, and cook until chicken is done
and juices run clear. Oh, that buttery goodness is sooooo yummy.

DEVOTIONAL
Andrew Rundle was a 19-year-old boy from my church
who passed away from Ewings Sarcoma in 2013.
A few short days before Andrew died, he spoke via
Skype with a group of high school students. This is what
he said: Think about your biggest fear. Whats going
wrong in your life that is causing you to worry?
A relationship? Something at school? Maybe somethings
going on at home? Now imagine, you have a few days
to live. How would it change your perspective on that?
I can tell you from firsthand experience that it would make
you want to serve God and put others first.
Andrews focused perspective is so inspiring. He was
facing imminent death, but was living his life as fully as
he could with a grateful heart. How much more so
should we?
Today, be thankful that you are still here. Instead of
focusing on all that is going wrong, try to focus on why
you are here. If youre still breathing, youre here for a
reason. Each day is a gift lets live it as such.

DINNER

Eggplant Lasagna

2 eggplants (not the skinny one, the dark purple kind)
2 lbs ground beef
1 cup olive or coconut oil
1 jar spaghetti sauce of choice
2 tsp garlic salt
12 tsp red chili pepper flakes
salt to taste

INSTRUCTIONS

Slice top and bottom off eggplant, peel, and then cut into about slices (so they look like circles).
Layer in a colander, sprinkling each layer with a bit of salt. Let sit for about 30 minutes,
then shake to get off any excess water (Note: You can skip this step if pressed for time,
you just may have some extra liquid in your finished product).
Heat some of the olive oil in a large skillet over medium-high heat.
Place slices of eggplant in in a single layer (I had to do 3 batches), and cook for about
34 minutes per side, until turning golden brown and starting to crisp.
Remove to a plate covered with a paper towel and let drain while you prepare the rest.
Sprinkle with a bit more salt.
Once you are done with the eggplant, drain remaining oil and cook ground beef,
garlic salt and red pepper flakes until brown.
In an 9 13 baking dish, layer one layer of eggplant, then spaghetti sauce,
then some ground beef. Continue layers until eggplant is used up.
Cover with foil and bake at 350 for 25 minutes, removing foil for last 5 minutes.
Let sit for about 10 minutes before eating.

DEVOTIONAL
My friend Shelly is only 49 years old and was
diagnosed with Lou Gehrigs Disease (ALS) in August
of 2013. Shelly is a shining example of thanking God,
even in the hard things.
Even though Shelly has a frightening disease that could
turn anyone bitter toward God, she has chosen to have
a spirit of thankfulness and gratitude each day. In her
online journal, she ends each post with Im forgiven
and free. Let those words sink in for a moment: Im forgiven and free. Shelly is living with a terminal illness.
Even in the midst of her fear and uncertainty, she knows
shes forgiven. She knows shes free. She says, Because I am forgiven and free, I can live in the peace of
God and gratitude regardless of circumstances. I have
learned to be content regardless of circumstances just as
Paul did. Because of my Savior, I know that I am loved,
I know that I will never be alone and I know that He has
a plan for me.

Dinner in a Bowl

2 lbs asparagus, sliced in small segments
2 salmon fillets, cut into 1 cubes
1 tsp salt
2 tsp garlic powder
2 tsp dried chopped onion flakes
1 tsp chili powder
3 tbsp avocado or olive oil
23 cups cooked cauliflower rice (if doing strict Paleo) or regular rice

INSTRUCTIONS
Heat oil in a large skillet.

Add asparagus to skillet and cook for 34 minutes, then add in salmon
and remaining ingredients (except rice).
Cook until salmon is cooked through, stirring gently.
Add in cooked rice, if desired and stir until combined.
Serve promptly.

DEVOTIONAL
If you follow my blog, Life Made Full, you know that
my husband, Chris, has celiac disease. His journey to
obtaining a diagnosis was a 10 year struggle, and even
after that, it took years to bring his health back up to par.
Chris was so sick before his diagnosis, he was emaciated,
had constant intestinal pain, and was experiencing awful
mental anxiety. When he was in the deepest of valleys,
convinced he was going to die and begging God for
healing, God met him. Chris felt like Job in the Bible,
having pain inflicted on him daily, to the point where he
could think of nothing else.

Once he discovered his myriad of food allergies and was

on a strict Paleo diet for a few years, his health improved

dramatically. Chris experience made him a much more
understanding person. You see, he didnt have all that
much pain or suffering growing up. No one he was close
to had died, his parents had a strong marriage, he pretty much lived in a protected bubble where life
was good. So he couldnt sympathize with someone who was struggling. After his years of suffering,
Chris learned that he had absolutely no control over certain things in his life. Which meant that other
people were the same way. Instead of judging others for their perceived failures or thinking they just
needed to work harder in order to succeed, his heart was filled with compassion for them. He is so
thankful for his health now, that he spreads thankfulness and joy wherever he goes! He loves to tell the
story of how God healed him.
Today, share the love tell someone about what God has done in your life and your gratitude for
those things.

Shrimp &
Poblano Peppers

2 lbs medium pre-cooked shrimp
2 poblano peppers, sliced with seeds removed
2 yellow/orange bell peppers, sliced
cup green onions, diced
yellow onion (optional), sliced thin
2 cloves minced garlic
3 tbsp olive or coconut oil
salt/pepper to taste

INSTRUCTIONS

Heat oil in large skillet over medium heat.


Add peppers and cook for about 57 minutes, until starting to brown and become tender.
Add garlic and cook for a few minutes.
Add in shrimp and cook until heated through. Delicious!

WEEK 1: GRATITUDE DAY 6

DEVOTIONAL
Each of our kids helps sponsor a child through Compassion
International or World Vision. A few years ago, we
matched each one of them up with a child overseas who
is his or her age who they can write to each month and
connect with. It brings our kids a glimpse of the real world
and shows them that the little bubble we live in is not the
reality for much of the world. They know the money they
give each month is not only going to feed and clothe these
children, but give them a chance at an education and help
end the cycle of poverty.
Our kids are more grateful and are conscious of the fact
that there are many children out there less fortunate than
themselves. Giving to a child in need is a way of saying
thank you to God for blessing us with more than we
deserve. We also pray for each of our sponsor children.
Instead of filling our prayers with requests only for ourselves
and our needs, we should focus more on thanking God
and acknowledging Him for the blessings we do have.
You will be surprised at how a prayer of thankfulness can
change the outcome of your day and how much of an
impact it will have on those around you.

DINNER

Eggplant with
Chicken and Bacon

2 skinny eggplants
2 lbs boneless, skinless chicken (thighs or breastsI used thighs), cubed
2 cloves garlic, minced
pounds bacon, cut into small pieces
1 red bell pepper, sliced into small, thin pieces
salt to taste
paprika to taste

INSTRUCTIONS

Peel the eggplant, and cut into small cubes.


Heat 34 tbsp avocado or coconut oil in a large skillet over medium heat.
Add the eggplant, pepper and garlic, cook and stir occasionally until eggplant
is tender. Add chicken, salt and paprika and continue to cook.
Meanwhile, in a separate skillet, cook the bacon until crisp and put on paper towel to drain.
Once the chicken is done, add bacon. Serve promptly.

DEVOTIONAL
This week, we discussed gratitude. Weve talked about
the importance of living with a grateful heart, thanking
God for blessings, changing your perspective from being
inward focused to outward focused, and more. How can
you practice gratitude today?
Tell someone you love them. Give a hug to a friend and
tell him or her how thankful you are for their friendship.
Call a family member you havent spoken to in some time.
Take cookies to a fire station or police station and thank
them for their protection. Write a letter to a soldier. The
possibilities are endless.

Most importantly, thank God for what hes given you.
Maybe your situation is not ideal. Find the silver lining.
Thank God for believing that you can triumph over your
trials. There have been many days when Ive felt the
burden of parenting heavy on my shoulders. And then
I remember God picked me to be their mom, so he must have faith in my abilities,
even when I dont.
The more you glorify God with praise and thanksgiving, the more you will feel his deep love. His Spirit
feels at home in a heart that praises Him. But just like a foreign language, you have to practice it to get
fluent in it. The more you practice gratitude, the better your life will be.

Ginger-Glazed
Mahi Mahi

3 tbsp honey
3 tbsp coconut aminos
3 tbsp balsamic vinegar
1 tsp ground ginger
1 clove garlic, minced
2 tbsp olive oil + 2 tbsp olive oil (separated)
4 Mahi Mahi filets (I buy them frozen from Costco)
salt and pepper to taste

INSTRUCTIONS

Combine the honey, coconut aminos, balsamic vinegar, ginger, garlic, salt and pepper,
and the 2 tbsp of olive oil in a large Ziploc bag.
Add the fish filets to the bag. Refrigerate for 20 minutes to marinate.
Heat remaining olive oil in a large skillet over medium-high heat.
Remove fish from the bag, and reserve marinade.
Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork.
Remove fillets to a serving platter and keep warm. Pour reserved marinade into the skillet,
and heat over medium heat until the mixture reduces to a glaze.
Spoon glaze over fish, and serve immediately.

DEVOTIONAL
I have a friend who tried for years and years to get
pregnant. She was tested by fertility doctors, and they had
no answers for her or her husband. Unexplained infertility
is what they said. Her heart was so burdened with the
desire to be a mom, but she trusted God unconditionally
and knew He had a plan something so wonderful she
couldnt even dream it. Long before this, my friend and her
husband had decided they wanted to adopt a child, and
since they werent able to become parents the traditional
way, they moved forward with the adoption process.

my friend miraculously conceived a little girl. Her patience
and trust were rewarded. God may not have answered her
prayer when she wanted. But if she had conceived on her
timetable, they would never have their other two beautiful children. With our limited view, we cannot see
around corners or know the future. Only God can see what will be best for us down the road. Only he
can predict the outcome of what is going on in our lives right now.
Patience is a fruit of the Spirit. Its an overflowing of Gods Spirit in you. If you want to know the
goodness of God fully, practice waiting on Him. Over these next six days, youll learn about how you
can implement more patience in your life.

Beef Roast

1 (45 lbs) round tip beef roast
67 carrots, cut into chunks
2 onions, quartered
garlic salt
3 tbsp olive oil

INSTRUCTIONS

Preheat oven to 225 degrees, and heat oil in a roaster pan.


Sprinkle roast on all sides generously with garlic salt, and sear all sides in heated oil.
Place into a baking pan with sides, add carrots and onions, sprinkle with a bit more garlic
salt and cover tightly with foil.
Bake in oven for about 2 hours, then increase heat to 300 degrees.
Bake for another hour, then remove foil.
Bake another 1530 minutes, until temp reaches at least 145 degrees.
Let rest for 10 minutes before carving.

WEEK 2: PATIENCE DAY 9

DEVOTIONAL
I met Chris the second semester of my first year in
college. Chris went to college with the intention of
finding a wife. The first semester, he was constantly
seeking out a potential mate. Any time he met a girl,
the wheels would be turning in his head on whether she
was marriage material or not. After a couple months,
he started to get frustrated. Then, one evening, he
asked himself what he was doing. If God wanted him to
be married, then wouldnt He provide a spouse? So he
prayed and told God he was giving up on trying to find
someone. If God had someone for him, then God was
going to have to plop her down right in front of him.
Well, sure enough, a few days later, we met. I actually
had to pursue him. He wasnt about to make any
mistakes. You see, Chris had never had a girlfriend.
He had never even touched a girl. And he had made a
commitment that he would never even hold a girls hand
until he knew that she was going to be his wife. That,
friends, is patience.
Gods timeline is frequently much different than ours.
When we wait on Him instead of trying to force our own
agenda, we increase our chances of contentment and joy.

Sweet &
Spicy Chicken

34 lbs chicken drumsticks
1 cup raw honey
tsp cayenne pepper
1 tbsp paprika
1 tbsp salt

INSTRUCTIONS

In a small saucepan, heat the honey, cayenne, paprika and salt until warmed through, but not hot.
Place drumsticks into a large Ziploc bag and pour the honey mixture into the bag.
Toss to coat the chicken, and refrigerate for about an hour, turning once.
Preheat oven to 375 degrees and line a broiler pan with foil.
Place chicken on broiler pan and bake for about 10 minutes.
Turn oven to broil and broil for 5 minutes. Flip chicken over, turn oven back to bake,
and cook for about another 10 minutes.
Turn oven to broil again and broil for the last 5 minutes, until crisped.
Let sit for a few minutes before serving.

DEVOTIONAL
When I was a kid, I knew God existed. I didnt know
who He was, or where He was, but I felt a connection
to something bigger than myself. There was a lot of
pain in my life as a child. Oftentimes, when something
bad was going on in my house, I would retreat to a
porch on the side of our house and just stare up at
the stars. Where are you, God? I would cry in my
heart. I truly believed He was out there somewhere,
but I wondered why He didnt save me. I desperately
pleaded with Him, but never heard Him answer.
It was during one of those times when I was just about
six years old that I told God, When I grow up, I
promise I will save a child who needs rescuing. And
you know what? I did. As a matter of fact, Chris and I
saved four children from the foster care system.

If God had answered my prayer way back when and I


would have had the perfect childhood, I would never
have adopted children as an adult. Those times were dark for me as a child, but looking
back, I see the many, many times God was there. It wasnt by random chance that I was
protected from so much growing up.
If youre not feeling God right now, instead of asking God, where are you? the better
question is: Where are you? Are you actively seeking Him and is your heart where it
needs to be? If the answer is yes, you can guarantee He is right there with you, even if
you dont see Him with your eyes.

DINNER

Sweet Potato
Beef Paprikash

3 lbs ground beef
3 tbsp olive oil
1 onion, chopped
3 tsp paprika
2 tsp salt
1 tsp black pepper
1 tsp crushed red pepper flakes
cup water
1 can tomato paste
3 sweet potatoes

INSTRUCTIONS

Preheat oven to 350 degrees.


Peel sweet potatoes and slice to about thickness.
Lay a single layer in a 9x13 pan, and drizzle with a bit of the olive oil.
Heat the remaining olive oil in a large skillet, add onion and cook until translucent.
Add in the meat, tomato paste, water, and seasonings and cook until meat is browned.

Especially as moms, we see how our kids are right


now, and we worry. Little Johnny doesnt know his
alphabet at 5 years old? Surely, he will grow up and not know how to read and wont be
able to get a job and will never be self sufficient! Susie cant organize her schoolwork and is
constantly forgetting to put things away? She is never going to get into college and will never
be responsible enough to have a successful adulthood!
Instead of focusing on how your child is right now, or how he or she has been in the past,
refocus on the future and have patience. It takes time to become a responsible, mature,
Jesus-loving adult. You should know it took you awhile, right? Its time to throw away the
rearview mirror. No one moves forward well when they are always looking back.

INSTRUCTIONS

Heat oil in a large skillet over medium-high heat.


Lay meat in a single layer on a cutting board.
Baste with lemon or lime juice and sprinkle with salt & pepper.
Cook in skillet for a minute or 2 on each side, then remove to plate
to sit while you cook the rest of the meat.
Sprinkle some of the chopped cilantro on top of the cooked meat, then lay
a piece of foil over the top to keep warm while you cook the rest.

As I mentioned, Chris had a decade of health problems
before finally being diagnosed with celiac disease. It
was a long, long road to health, even after his diagnosis.
Sometimes, God answers our prayers with a lightning
bolt answer and we see immediate results. Other times,
many times, it takes a lot longer than that. Again, we
cant see around corners, so we have to trust that Gods
got our backs.
This journey of life we are on is a marathon, not a sprint.
We have to plan for the long haul, and be prepared to
wait. Sometimes, its the waiting that refines us. Without
waiting, we would never appreciate the result.
Abraham, David, Moses, and so many other Biblical
men and women had to wait on God. They prayed
desperately for answers, but God only replied when the
timing was right, and it wasnt always the answer
they wanted.
So what do you do in the meantime? Patience and
waiting doesnt mean sitting around being lazy, it means
being confident that God will do what He promises to
do. And by trusting God to answer your prayers in the
way He sees fit, you will open yourself up for miracles!

Preheat broiler in oven, and line a broiler pan with foil.

Crusted Salmon

2 salmon filets (double recipe if you want to serve more)
cup fresh basil leaves
cup pine nuts
~4 tbsp fresh cilantro
23 cloves garlic
cup olive oil

salt and pepper to taste

INSTRUCTIONS

Preheat oven to 350 degrees.


Pulse all ingredients (except salmon) in a food processor until minced (you want little bits, not smooth).
Put the salmon and the pesto mixture into a Ziploc bag and refrigerate for at least a hour.
Remove from bag, smear the pesto mixture left in the bag onto the salmon and place the salmon
(skin-side down) onto a foil-lined baking sheet.
Bake for about 1214 minutes, or until the salmon flakes easily.

1 cup blanched almond flour
1 cups tapioca flour (arrowroot starch may work here, but I havent verified this yet)
2 tsp gluten-free, corn starch-free baking powder
cup olive oil

sauce and toppings of choice

INSTRUCTIONS

Preheat oven to 375 degrees and grease a baking sheet with olive oil.
Sprinkle a bit of almond flour on the baking sheet.
In a large bowl, combine the dry ingredients.
Stir in the olive oil and water.
Get a little bit of almond flour in your hands, remove the dough from the bowl, and begin spreading
the dough over the baking sheet, using your hands.
Continue to spread it out evenly, using a bit of almond flour to keep from sticking, if needed. Bake
in oven for about 10 minutes, remove from oven, and top with desired sauce and toppings (I got a
pre-made pizza sauce from Whole Foods that was delicious and had no junk ingredients added).
Bake for another 810 minutes, until cheese is bubbling (if youre using cheese) and toppings are
crisping. Remove and let cool for a few minutes before slicing.
A few notes: You could add some herbs into the crust if desired. I made mine plain, but it would be
awesome with some herbs as well! Also, I used raw cheese and uncured pepperoni on top. My little
guy who is dairy-sensitive does fine with raw dairy, so I use it when I can! I get some awesome raw
sharp cheddar from Whole Foods. Their cheese department is incredible!

About 10 years ago, Chris and I were down to $17
in our bank account. We were trying to sell our house
at the peak of the market, but had no money to get us
through the next month. We prayed fervently for God
to provide us a buyer quickly. We closed escrow not
too long after and talked about how much money we
wanted to give back to God. We have always been
faithful tithers, giving 10% back, but we felt God had
truly answered our prayers and we wanted to thank
Him for that. We took $50,000 from the sale of our
house and gave it to our church. Chris is a school
teacher, and I stay home, so this was about a years
salary at the time. It was the most amazing feeling in
the world, but it was also scary.
We needed that money. We had planned on putting
it down on a new house, and donating that amount
meant that we would not be able to buy the house we
wanted. But, we trusted that God knew the desires of
our heart, and that He would take care of us.

Fast forward about 4 years. It was tax season, and we met with our tax accountant. After completing
our paperwork, he called us and said he needed us to come in and talk to him. When we got to his
office, he said, I have never seen such a thing. Your tax refund is going to be the largest return I have
ever seen. He proceeded to say that because of changes in the adoption tax laws, we would be
receiving a check in the amount of you guessed it $50,000.
That moment solidified our commitment to have faith in our Great God one who continues to astound
us nearly every day. Just taking a small leap of faith can lead to huge blessings. You dont need to have
big faith, just pure faith.

Paleo Meatloaf

3 lbs ground beef
1 cup blanched almond flour
3 eggs
1 medium onion, chopped
1 clove garlic, minced
2 tbsp mustard
1 tbsp chili powder
1 tbsp garlic salt
3 tbsp tomato paste
cup full-fat, unsweetened coconut milk
2 tbsp olive or avocado oil

INSTRUCTIONS

Preheat oven to 350 degrees and line a broiler pan with aluminum foil.
Heat oil in a skillet, and cook onions until nearly caramelized (about 10 minutes).
Add in minced garlic and turn off heat, allowing the garlic to cook until fragrant (just a minute or two).
In a bowl, combine all ingredients including the onions and garlic (with your hands thats what God
made em for! Just be careful not to burn yourself from the onions).
Form meat into two loaves and place on pan (Doing it this way will avoid all the grease that
youll get if you use a loaf pan).
Bake for about 45 minutes, until temperature reaches about 160 degrees,
then let cool for about 5 minutes before slicing to enjoy!

life forever. By taking risks as a family, she and her
siblings learned that even when everything else around
them was a struggle, they still had each other and God.

a result, they grew a church from nothing to thousands
of people. It wasnt easy it was hard work. But
now their children live their lives effortlessly in faith

believe. Getting ourselves to the point where faith dominates our sight will allow God to do miracles.
Relying on the obvious instead of the supernatural will ensure that you never see the mind-boggling

1 whole chicken

45 small sweet potatoes (or regular potatoes)

INSTRUCTIONS

Wash and dry the sweet potatoes, then rub with oil and sprinkle with salt.
Wrap in aluminum foil and place on bottom of crock pot, enough to cover the bottom in a single layer.
Sprinkle chicken generously with salt and pepper (and any other spices you may want I went simple
with this one).
Place on top of wrapped potatoes.
Cook on low 46 hours.
This meat just falls apart, so instead of removing the whole chicken all at once, I just got a fork
and started taking the meat off and setting it aside.
Once done, carefully take out the potatoes, remove foil and eat!

within a few months, Chris confronted me and told me it
was time for me to get help. I sought counseling, but after

answered me immediately. It was like I became a different person, and now, 16 years later,

to grips with the fact that you have pretty much no control, the better.

I realized at a young age that I had no control over
the world around me. As painful as things were, I had
to learn to rely on God for strength. I had faith that He
would carry me through. Once I grew up, I continued
on that path. There were many times when I had plans
that did not play out the way I anticipated or desired.
I had to have faith that even though things didnt
look like I thought they should, God would bring me
through it with an even better end result.
What or WHO are you trying to control today? Start
small, then go big. Give God something small first
maybe its just giving over some of your fear or doubt.
Maybe its giving up control of just one thing. Then,
gradually increase and watch in amazement as God
works.
Just think if I had not given my marriage over to God
16 years ago. If I had held onto it, clutching control,
instead of trusting Him to take over who knows
where our marriage would be today? We have to
train ourselves to discard the unbelief and propel
ourselves forward with our faith. What doubts have

trip. While we were there, we had the privilege of
going into some of Mother Teresas orphanages to see
first hand what she did. During one of our visits to one
of her orphanages for disabled children, the weight of
her calling and commitment to God weighed heavy on
my heart. Mother Teresa suffered.
She cast aside any luxuries she could have had, and
committed her life to serving the poorest of the poor.

however. Maybe youre called to be a stay-at-home
mom. Wiping noses, cleaning house, and cooking
food may be your calling. Maybe youre called to
work outside the home to support your family. Will you
do your job to the glory of God? Will you trust that
you are right where you are supposed to be, doing exactly what youre supposed to do?
Your job may not be easy, but if its what God called you to do, the blessings will overflow.
Hebrews 11 is often called The Hall of Faith. Pull out your Bible and check it out. These
verses tell of amazing things God did through men of great faith: Abraham, Noah, Joseph. Walking with God is not a gentle float on calm seas; it is often a roller
coaster, and there WILL be valleys. The question is: Will you walk by faith, trusting
Gods goodness, no matter what road He has you on today?

3 lbs chicken tenderloins (skinless)


3 tbsp olive oil
Juice of a lemon
1 tbsp paprika
1 tbsp garlic salt
cup tapioca flour or arrowroot starch

INSTRUCTIONS

In a large bowl, combine chicken, olive oil, lemon juice, paprika, garlic salt and tapioca
flour. Heat coconut oil in a cast iron skillet or other large skillet (cast iron works best here,
though) over medium-high heat and add pieces of chicken. Dont crowd the chicken!
Fry for about 3 minutes on each side, until no longer pink inside.
Remove to paper towels to drain, and repeat as needed.

When Chris and I were dating, we went to Honduras
for 6 weeks on a mission trip to build a water line for a
village that had no running water. It was the first step
in my true, authentic relationship with God. That one step
propelled us forward to later go to India, then Mexico
to serve others less fortunate than ourselves. Seeing
how God provided for us and protected us on that trip
solidified my faith and made each step after that easier
giving my marriage up to God, moving forward with
adopting children out of foster care, and releasing our
kids futures into the hands of God. All scary things that
are hard to let go of. It all started with that
first step.

2 tbsp garlic salt
1 onion, diced small or grated
23 stalks celery, diced very small
2 eggs
3 tbsp chopped cilantro

Heat oil in large skillet over medium-high heat.


In a large bowl, combine all remaining ingredients and mix with hands until well incorporated.
Form into golf ball-sized meatballs (or a tad larger).
Place into heated pan and cover for about 6 minutes.
Remove lid, flip meatballs over with tongs, and cook, uncovered, for another 45 minutes.
Remove and set aside and repeat with remaining meatballs.
I kept mine covered with foil on the warm setting in the oven while I cooked the rest.

True faith involves trusting God, and continually
working to keep it alive.
When we found out our kids birth mom was pregnant
right after we brought the two of them home, I could
not fathom bringing home another child. Having four
children four and under was plenty for me to handle. I
did NOT want another. But Chris assured me it would
be ok. We did, after all, have another seat in our van.
Thankfully, we had seven months to prepare.

I remember praying desperately, asking God to


change my heart. I did not want to resent this child. By the time we got the call to go pick Gracie up
from her emergency foster home at six weeks old, God had not only answered my prayers, He had
exceeded them! I bonded with Gracie faster than any of our other children, including our biological son.
I cant imagine our lives without her.
Sometimes God calls us to do things WAY out of our comfort zone. Sometimes we dont WANT to do
what Hes calling us to do. Sometimes it makes no logical sense, and people will think youre crazy. But
when you take a step of faith, and allow God to work, knowing there is NO WAY possible you can handle it on your own...THATS when your mind will be blown. Your life may be just fine if you dont take
risks. But it will never be spectacular.
How do you keep your faith alive?
1) Challenge yourself (make a spiritual goal each month five more minutes a day with God,
praying every night, reading the Bible 10 minutes a day, etc.)
2) Fellowship with others (surround yourself with other believers who will encourage
and strengthen your faith)
3) Dont aim for perfection try for progress, youll never be perfect.

DEVOTIONAL
Often times, we pray fervently to God and hear only silence. I can think of many examples of
when I prayed, but didnt hear or even feel God with me.
1 John 5:15 tells us when we pray for Gods will, He hears us. When we pray with a selfish
heart, he turns his ear. The silence doesnt mean God didnt hear you, it may just not be time for
Him to answer.
1 John 5:14 says, This is the confidence we have in approaching God: that if we ask anything
according to his will, he hears us.
Note the most important part of that verse: according to His will. Having prayed according to
the will of God, we can then live in expectation. Its like ordering a precious gift and then, after
ordering, waiting expectantly for the package to come. Every day we look for it, and finally it
comes. In the same way, we pray according to Gods will and he hears our prayer. We wait in
expectation of its coming, and it comes.
I have a specific prayer I have been praying for one of our children. I have not had that prayer
answered yet, but I am waiting expectantly for God to answer my prayer however He sees fit.
Over this next week, listen to the prayers you pray and hear your intent. Are you TRULY seeking
His will? Or are you holding onto selfish motivations?

4 boneless, skinless chicken breasts
1 cup chopped artichoke hearts
lb to lb gouda cheese
salt & pepper to taste
garlic powder

INSTRUCTIONS

Preheat oven to 350 degrees and line a baking sheet with foil or lightly grease a 9 x 13 pan with oil.
Lay the breasts flat on a cutting board.
Using a meat tenderizer, beat the meat until it is flattened a bit.
Cut a slit down the middle (dont cut all the way through the meat).
Stuff the open slit with some of the chopped artichoke hearts and a chunk of gouda cheese,
then sprinkle with salt, pepper and garlic powder.
Fold the outer part of the meat over the artichoke and cheese and use a toothpick to hold in place.
Sprinkle with salt, pepper and garlic powder.
Bake in oven for about 2025 minutes, then top with grated gouda cheese and broil for
an additional 5 minutes, until the cheese is browned.
Let cool for a few minutes before eating!

Start simple. You may have seen or heard of the
A.C.T.S. prayer before: Adoration, Confession,
Thanksgiving, Supplication (intercession). If youre new
to prayer, or just need a reboot, try going through these
steps. Your prayer may go something like this:
Adoration: God, you are so great
Confession: God, I confess
Thanksgiving: God, I thank you for
Supplication: God, I ask you for...
Start your prayer by praising God and sharing your
devotion to Him. Follow that by confessing to Him your
struggles and failures from that day or week. Dont hold
back He already knows everything confession
clears your heart and makes room for God to work. Next,
thank God for your blessings. Think of the things in your
life that bring you joy and thank Him for giving you
those things. Close with praying for others and for yourself. Ask God. Pour your heart out to Him. Write these
4 components of prayer down on a piece of paper, and
tape it up wherever you pray.

1 red bell pepper, cut into large chunks (seeds/stem removed)

1 clove garlic

INSTRUCTIONS

Add all ingredients to food processor.


Pulse until the meat is ground pretty fine (like ground beef texture) and everything is combined well.
Scoop out enough to form a burger and flatten into a patty.
Repeat for remaining patties.
Heat oil in a large skillet over medium-high heat.
Place patties in and cook for about 4 minutes per side, remove and serve on a bed of lettuce
or other desired bun.

Prayer should be constant, not sporadic. It should
be a habit, not an isolated act. In order to see the
benefits of prayer, you need to be having an ongoing
conversation with God. Think of him as one of your best
friends. Connecting involves more than just superficial
conversations every few weeks.
When praying, dont think inside the box. I pray every
morning and night, and often throughout the day. It
doesnt need to be a formal event to talk to God. Driving
in the car with crazy kids? Say a prayer. Waiting at the
doctors office? Have a silent conversation with God.
Pray when you can, where you can.
One of the most important things Ive learned in my
prayer life is that when someone pops into my head, I
pray for them. Even if I dont know what to pray for, I ask
God for protection for that person, and that he would
cover them with His presence that day. You dont have to
know exactly what youre praying for to make a difference.

Not long ago, I woke up at 1:30 a.m. with the intense urging to pray for Chris 90-year-old
grandpa. At the time, he was not a Christian, and I prayed fervently for him to meet God in a
supernatural way that night. The next day, before I had even talked to him, he made a decision
to ask Jesus into his heart. It was a moment that forever changed me and made me realize just
how impactful a fervent prayer for someone can be, and that it is never too late! I wrote in
detail about this experience on my blog and it is one of my favorite stories!

3 lbs boneless, skinless chicken breasts
1 (29 oz) can crushed tomatoes
34 tbsp avocado or coconut oil
1 tbsp dried chopped onions
2 tsp curry powder
2 tsp garlic salt
2 tsp chili powder

cup full-fat, unsweetened coconut milk

INSTRUCTIONS

Cut the chicken into large chunks and heat oil in a large skillet over medium-high heat.
Add chicken to skillet and add dried chopped onions, curry powder, garlic salt and chili powder.
Cook for a couple minutes, until chicken has turned white on the outside.
Add in crushed tomatoes, red pepper flakes, and coconut milk.
Stir to combine, reduce heat to low and simmer, covered, for about 1015 minutes,
until chicken is done.
I served this over rice, but you could serve it over cauliflower rice or any other choice. Its delicious!

Im sure youve heard that roughly 50% of marriages
end in divorce. That number is virtually the same in
Christian vs. non-Christian households. However,
there is hope. In a Gallup study from the 1980s, it
was discovered that less than 1% of couples who pray
together end up getting a divorce. The sad thing is,
the number of Christian couples who actually read
their Bible and pray together is less than 8%. Friends,
this needs to be changed. Maybe you feel awkward
about praying out loud. However, if youre married,
its vital that you do. Break the prayer barrier and tell
your spouse you want to make a commitment to pray
together every night. If youre not married, ask a friend
to join in this commitment with you. You will see God
do amazing things when two or more people come
together in His name.
Praying out loud is a powerful thing. Praying out loud
with your spouse or close friend is even more powerful.

2 tsp onion powder
2 tbsp chili powder
1 tbsp cumin
2 tsp salt + about 3 tbsp (separated)

3 tbsp chopped cilantro
1 small Jalapeo pepper (optional use only if you like spice)
810 asparagus spears, rough ends cut off
olive oil to drizzle
1620 wooden or metal skewers

INSTRUCTIONS

Preheat oven to 350 degrees, and line a broiler pan with foil.
Cut the asparagus spears in half and put each half on a skewer.
Add 3 tbsp (or so) of salt to a very large bowl and add hot water.
Set the skewered asparagus into the hot salted water to soak while you prep the rest of the meal
(this adds a nice salty flavor to the asparagus, and cooks it a bit before you wrap it in the meat).
In another large bowl, combine the meat, onion powder, chili powder, cumin, salt and pepper,
cilantro and Jalapeo, if desired. Remove asparagus from water and set onto paper towels to drain.
Take a handful of meat and roll it into a kabob form.
Press the asparagus into the meat and form the meat around the asparagus.
Lay on the broiler pan and drizzle lightly with olive oil.
Bake for 2025 minutes, flipping half way through, and let cool for about 5 minutes before eating.

it. By doing so, youll make room for God to show His

A few years ago, I started a new feature on my websites


Facebook page called Prayer Warrior Monday. Every
Monday, readers share their prayer requests with me via
private message or as a comment, and the next day, my

kids and pray for them, individually, by name. Teaching
my kids to pray for others, even complete strangers, is
vitally important to me. We have seen multiple prayers
answered, from cancer healings to a mom carrying a
child full term after multiple miscarriages, to miraculous employment after years of not having a job. To
say it has been a blessing for our family is an understatement. By praying for others, we are allowing
God to work in ways that would never be seen otherwise.

Add all ingredients, except coconut oil, to large Ziploc bag.


Let fish marinate for at least an hour in the fridge (you can skip this step if youre in a hurry).
Heat oil in a large skillet over medium-high heat.
Place fish in skillet, discard remaining marinade, and cook about 45 minutes per side,
until fish flakes easily.

When Chris was in high school, his youth group went
on a mission trip to Mexico. A day after they crossed
the border, they were in the middle of nowhere when
they were in an accident and their van flipped over,
throwing one of the kids from the van. One girl was
lodged under the van with the roof of the vehicle
crushing her lower torso. God showed up that night
in miraculous ways providing someone who spoke
English who could help them get to a camp to stay in
overnight. While the kids sat around a fire that night,
reflecting on the events of that day, Chris said he felt
God next to him as if He was right there. He had never
felt the presence of God so strongly.

The prayers of those kids that night were not superficial


or weak. They were having a desperate conversation
with God.
As I said before, remember that God is your best friend. He knows you better than anyone else
in this world He made you. Think of the person you are closest to. How would a conversation
go with him or her? God should be approached with reverence but also with openness and
authenticity. God calls us his friend when we are following His will.
PS the girl recovered from the accident and miraculously only had minor injuries!

1 huge zucchini or 45 regular zucchinis (I used 1 zucchini that was about 18 long)
3 lbs ground beef
32 oz jar of your favorite spaghetti sauce (I used two 15-oz jars of Eden Organic)
1 onion, diced
16 oz bag frozen chopped spinach, semi thawed
1 cup walnuts
2 cloves garlic
3 tbsp olive oil
salt and pepper to taste

INSTRUCTIONS

Preheat oven to 350 degrees.


Slice ends off of zucchini and if its a large one, cut in half. Slice in 1/8 pieces (or use a
mandolin I didnt have one, so I just sliced it thin) and place into a colander, sprinkling
lightly with salt as you layer each piece to help the water drain out.
Let sit while you prepare the rest of the lasagna.
Heat oil in a large skillet and cook onion until starting to brown.
Add meat and cook until starting to brown, then add spaghetti sauce and remove from heat.
In a food processor, process the walnuts, garlic and spinach until semi-smooth.
Move the zucchini around a bit in the colander and shake to make sure the water has
drained off it, and pat dry.
Put a little of the sauce mixture on the bottom of a 913 pan, then place one layer of the
zucchini on top. Add some of the spinach mixture, then more sauce.
Repeat until everything is used up, ending with some zucchini and sauce on top.
Place filled 913 pan onto a baking sheet (it may bubble over), and cover tightly with foil.
Bake for 40 minutes, remove foil and bake for another 10 minutes.
Let sit for 10 minutes before eating.

I have a favorite coffee mug. I love this mug a lot.
As a matter of fact, just opening the cupboard and
seeing that mug makes me happier. One day, my
youngest daughter came to me, crying. She was so
upset, I couldnt even understand what she was trying
to say. Eventually, I calmed her down, and she said,
Mommy, I broke your...favorite mug. Then she burst
into tears again. My heart melted. My poor daughter,
who I love more than anything, was so upset that she
had broken my favorite mug. She had been trying to
heat my coffee up for me, and accidentally dropped
the mug, and it shattered into dozens of pieces.
I could not be mad at her. Her sorrow and repentance
for doing something that she thought might hurt me
made me hurt for her.

Its the same with our Father in Heaven. If we deny our mistakes, and come to him with a
prideful heart, we will not see and feel His love like we would if we come to Him with a truly
repentant heart.
Dont allow your failures to keep you from the throne. God wants all of us not just the
good stuff. He wants us to always come to Him. If you have children, think about how you
would want them to approach you. Dont you want them to always feel comfortable coming
to you, admitting their mistakes?

23 lbs boneless, skinless chicken thighs


cup unsweetened almond butter
2 tbsp sesame oil
cup olive oil
tsp fresh grated ginger

INSTRUCTIONS

In a large Ziploc bag, combine the chicken, almond butter, sesame oil, olive oil, ginger,
garlic, red pepper flakes and salt and let marinate for at least an hour.
When ready, heat the 3 tbsp coconut oil in a large skillet over medium-high heat.
Add the chicken (with the marinade) and cook for about 5 minutes.
Add in green onions and cook another 57 minutes, until chicken is done.
Remove to serving platter and sprinkle with sesame seeds.
Serve promptly.

uniquely depending on what is going on in your life.

God uses people around you to speak to you. If you feel
as though God is talking directly to you, He probably is.
Dont discount Him just because Hes using a person to do His work.
Through divine circumstances. Sometimes, life experiences speak to us, and change us forever.
My childhood is a perfect example of a life experience molding who I am. God spoke to me through
my childhood. If something tragic has happened in your life, ask yourself: Is God trying to speak to me
through this? If so, what is He trying to say?
Today, put into practice all that youve learned over the past 28 days have thankfulness and patience,
stretch your faith and talk to God.

3 lbs ground beef (I used 2 pounds ground beef and 1 pound ground goat)
3 tbsp minced dried onion + cup minced dried onion, separated
2 tsp salt
1 tsp pepper
3 tbsp avocado or olive oil
Lettuce to wrap in

INSTRUCTIONS

Mix together the ground beef, 3 tbsp dried onion, salt and pepper in a bowl,
then form into patties, making sure they are pretty flat.
Cook on a griddle or in a skillet for about 4 minutes on each side.
While those are cooking, add the cup dried onions to cup water.
Let sit for about 5 minutes to let most of the water soak in.
Heat oil in a skillet, and drain off any excess water from the onions.
Add into skillet, and cook until caramelized.
Once burgers are done, top with the caramelized onions and your favorite condiments. Enjoy!

The 30 days may be over, but your journey is not. There are many challenges that
lie ahead. The question is how will we respond? We are still constantly growing,
constantly changing, and it is up to us to stay connected to God as we move forward.
You may have heard the analogy that life is a marathon, not a sprint. In this case, it is
particularly true. Our goal is not to rush through each day, getting through it as fast as
we can. The goal is to savor each moment, stop for breaks, take care of our bodies, and
finish the race strong, not dragging ourselves across the finish line.
We want to get to the end of our lives, stand in front of our Great Creator and hear
Him say, Well done, good and faithful servant!
