BROCCOLI PESTO

INGREDIENTS
pound broccoli florets

2garlic cloves, peeled, green shoots removed

1cup basil leaves, tightly packed

cup extra virgin olive oil

Salt

freshly ground pepper to taste

1 to 2ounces (1/3 to 1/2 cup) freshly grated Parmesan, or a mixture


of pecorino Romano and Parmesan, to taste

PREPARATION

1.

Steamthebroccolifor6minutes,untilverytenderbutstill
bright.Removefromtheheat,rinseanddrainonpapertowels.

Turnonafoodprocessorfittedwiththesteelbladeanddropin
thegarlic.Whenthegarlicismincedandadheringtothesidesofthe
bowl,stopthemachineandscrapedownthesidesofthebowl.Add
thebroccoliandthebasiltothemachineandturnon.Whencontents
arefinelychopped,stopthemachineandscrapedownthesidesof
thebowl.Turnonthemachineagainanddrizzleintheoliveoil.
Pureuntilsmooth.Addsaltandpeppertotasteandthegrated
cheese,andprocessuntilwellblended.

Transfertoabowlandserveasadip,spreadorsaucewith
pasta.Ifservingwithpasta,thisamountwillbeplentyforapoundof
pasta.Thinoutwith1/4to1/2cupofthepastacookingwaterbefore
tossingwiththepasta.
