Apple sauce

INGREDIENTS
 4 large granny smith apples
 1 lemon, rind finely grated, juiced
 1 1/2 tablespoons caster sugar

METHOD
 Step 1

Peel, core and chop apples. Combine apple, 2 tablespoons lemon juice and 2 tablespoons cold
water in a saucepan.

 Step 2

Bring to the boil over medium-high heat. Reduce heat to medium. Cover and cook for 12 to
15 minutes or until apples soften. Stir in lemon rind and sugar. Allow to cool slightly.

 Step 3

Transfer mixture to a food processor and puree until smooth. Serve warm or cold.
