Sunny bread
Simple white loaf, the type we eat everyday with spread, sandwich with ham, egg, cheese or
tuna. No butter required, direct method, with amazing soft & fluffy texture.
I love baking this in the oven, because the roll flat & roll up part with total resting time of 30
mins, guarantee you a soft and cottony texture loaf. Of coz, you may bake frm BM, but result
won't be as perfect as the oven. (who cares.. if you don't have time, just use BM)
Recipe:
Water 130g (u may use solely milk, whipping cream 50g + milk 80g for richer flavour)
Salad oil 20g (use good quality corn, sunflower, olive, canola, avocado etc)
1 Large Egg (approx 50-60g)
High Protein Flour 250g
Yeast 3g
Milk Powder 20g
Sugar 50g (U may reduce up to ur liking)
Salt 3g
** May substitute oil to butter for richer taste/texture, 20g. Add butter after 15 mins knead
cycle over, before proceeding to Basic or Sweet Mode.
Method:
Bake in BM
Follow the sequence above, place the ingredients into BM, knead function 15mins, finish, set
basic mode 1 or sweet mode 3, let the BM do the rest. (Mine is SKG BM)

Bake in the OVEN


1) Follow the sequence above, place the ingredients into BM, set knead function 45 mins.
2) Prove the dough in the oven (NO temperature) for 1-1.30hr or 2.5 of its size (with a cup of
hot water beside to aide the proving process).

3) Dust your hands/ tabletop & on top of the dough while deflating the gas with the help of a
rolling pin, divide the dough into 3 even size/weight.
4) Roll each of the dough flat, then roll up, rest 15 mins. Repeat this, rest another 15 mins.
(Dough must be covered well to prevent moisture loss during resting time)
5) Roll flat the dough, then roll up the dough again, place them in a loaf pan, seam side down,
spray some water on top, 2nd round of proving, about approx. 1-1.30 hr, or dough has risen
up till 90% of the loaf pan, egg wash, bake in the preheat oven of 160-170'c for 35-38 mins.
6) Once done, remove bread from loaf pan immediately. You may store the bread in an
airtight container while the bread is a bit warm. (Not Hot)

Best consume within 2 days .. if possible. If whipping cream/milk is used the bread will
remain soft for many days. Because of its beautiful texture, mine usually habis (finish) on the
same day, don't expect any leftover !!! Enjoy !!
